Healthy Hotcakes
Using buckwheat flour in your pancake recipe will help you fulfill
your daily zinc requirement.
Studies show that most older adults don't get enough zinc, a
nutrient that may be linked to immune system response. Using
buckwheat flour in your pancake recipe will add almost 8 milligrams
of zinc to the recipe. Don't have time to cook? Many ready-to-eat
cereals are fortified with zinc; check the label.

For Your Information:
Potentially Hazardous Herbs
A basic tenet of pharmacology is: "The dose makes the poison." Most
drugs that are beneficial in therapeutic doses cause problems--and
sometimes death--in overdose. This is as true for medicinal herbs
as it is for pharmaceuticals.
But in general, herbs have been the victims of unjustified safety
scares. According to the American Association of Poison Control
Centers, pharmaceuticals caused a total of 809 fatalities and 6,407
major non-fatal poisonings and are on the uprise with many lawsuits
being entered into the court docs. During the same period, plants
caused two fatalities and 53 major poisonings. The most hazardous
plants were not herbal medicines, but houseplants.
Although most commonly used medicinal herbs are safe for ingestion
in recommended amounts, pregnant and nursing women should consult a
health professional before taking any medicinal herbs (or
pharmaceuticals), and everyone else should use the following herbs
cautiously, if at all: Chinese ephedra; herbal laxatives such as
buckthorn, cascara sagrada, and senna; and all herbal oils.

The Hidden Secrets
by Jeffrey S. Bliss MS, Nutrition
Polyphenols, Phytochemicals, Anthocyanins; what are they and
what are the benefits of such compounds?
Phytochemicals characterize, or sum up the whole picture of
the beneficial compounds found in fruits, vegetables, and
certain teas. Phytochemicals are the protective living
matter which enable plants to thrive in some uncertain
environmental conditions such as harsh climates and insect
infestations.
When consumed by humans, these compounds act as powerful
antioxidants that are extremely vital to good health and
longevity. Many studies suggest that the consumption of
such antioxidants may help in the fight against aging,
cardiovascular disease, cancer, and numerous other age
related degenerative diseases including ophthalmological
diseases.
Anthocyanins, a class of flavonoids, are some of the more
potent forms of these antioxidants.
We have all heard of the "French Paradox"; how the people
of France commonly lead unhealthy lifesyles through high fat
diets and high consumption of tobacco, yet still manage to
remain below the percentage of related deaths due to
cardiovascular disease than many of the other populations
that exist today.
One reason for this anomaly may be directly related to their
large consumption of red wine. Wine, made from grapes,
contains very high levels of the potent antioxidants known
to be anthocyanins.
The polyphenols (anthocyanins) in red wine, are believed to
mitigate the effects of a fatty diet and smoking.
Anthocyanin is a polyphenol which is proven to reverse,
halt, and improve the conditions of many age related
diseases inflicted on the general population.
Anthocyanins found in various fruits have a unique chemical
structure that makes them 6 to 8 times more potent than
vitamin C.
One particular fruit known as Acai (ah-sigh-ee), native to
the Amazonian rainforest of Brazil, contains the most highly
concentrated forms of anthocyanins known thus far through
intense research.
The anthocyanin content in the Acai fruit is proven to be
3.5 times the amount of that present in a glass of red wine
volume to volume when tested in an ORAC analysis (measure
of capacity).
Anthocyanins have received less attention than other
flavonoids despite their far-reaching effects.
Because berries were such a large part of early diets, our
ancestors probably ate far more anthocyanins than we do.
Some researchers feel that, by comparison, we are deficient
in anthocyanins. When people become aware of the incredible
antioxidant powers of these compounds, perhaps we can soon
remedy that deficiency.
ANTHOCYANINS AND THEIR PROTECTIVE PROPERTIES:
INFLAMMATION AND COLLAGEN: Anthocyanins neutralize enzymes
that destroy connective tissue. Their antioxidant capacity
prevents oxidants from damaging connective tissues and
repair damaged proteins in the blood-vessel walls.
THE NERVOUS SYSTEM: By preventing tyrosine nitration, the
anthocyanin properties in Acai may help protect against
neurological diseases. The primary anthocyanins in Acai,
known as Cyanidin-3-glucoside, have been found to help in
the reversal of age related neurological deficits.
LARGE AND SMALL BLOOD-VESSELS: Anthocyanins ability to
counter oxidants make them a powerhouse in the fight against
arteriosclerosis. Even in trace amounts, anthocyanins
effectively protect against LDL oxidation.
Anthocyanins protect the integrity of the endothelial cells
that line blood-vessel walls and help to maintain micro
capillary integrity.
DIABETES: One of the serious diabetic complications is
retinopathy, which in most cases can cause blindness. This
condition occurs when the body attempts to repair leaking,
damaged capillaries, but does so by over producing abnormal
proteins. The protection of anthocyanins may help prevent
these capillaries from leaking in the first place, and help
prevent abnormal protein proliferation.
EYESIGHT: Anthocyanins may also help improve eyesight by
numerous mechanisms. In the second World War, British
fighter pilots were found to have improved night vision.
These findings were thought to be contributed by the large
amounts of bilberry in the pilots diet. The effects of the
improved night vision were not long lasting after initial
consumption of bilberry - lasting just hours after
initial consumption. With this new found advantage, the
pilots would consume the bilberry fruits just prior to a
mission.
SOURCES OF ANTHOCYANINS: Pigmentated fruits are known to
carry the highest amounts of anthocyanins. Fruits that can
be eaten with skin on offer the highest value of
anthocyanins.
These fruits include cherries, grapes, raspberries,
blueberries, bilberry, and of course the most dense source
being the Acai (ah-sigh-ee) fruit.

Face Refresher
Is your skin in need of refreshment?
Green tea may be just the ticket.
In a study, when researchers exposed a sample of skin cells to a
compound found in green tea, the dying skin cells were reactivated.
Researchers speculate that energizing dying skin cells might help
to improve the skin's condition. To give your skin a boost, try
exfoliating with your used green tea bags when you wash your face.

Fight the Itch Factor
If you have sensitive underarm skin, you might want to avoid
deodorants with certain chemical ingredients or fragrances.
Recent studies have revealed that cinnamic aldehyde and
hydroxycitronellal, common deodorant ingredients, can cause itchy
underarm reactions in people who are sensitive to the substances.
If you have sensitive skin, using deodorants that are all-natural
or fragrance-free may help keep you comfortable.
