Add egg yolks and beat well. Combine dry ingredients alternately with buttermilk. Stir in vanilla. Add coconut and nuts. Fold in egg whites. Pour batter into three greased nine-inch cake pans and bake in a 350 F degree oven for approximately 25 to 30 minutes or until a toothpick comes out clean. Remove cake from oven and allow to cool completely before filling and icing. Glace 8 ounces cream cheese 1/2 cup butter 4 cups confectioners' sugar 2 tablespoons light cream 1 teaspoon vanilla 1/2 cup chopped walnutsCream together the cream cheese and butter. Add the sugar, cream and vanilla. Beat until light and fluffy. Invert one layer on cake plate and spread with 1/4 of the icing. Repeat with the second layer. When third layer has been added, use remaining icing to cover the entire cake. Sprinkle nuts over top (sides too if you like) and voil?! you will have yourself a beautiful and delicious Torta Alla Crema Italiana! For a slightly less sweet version, substitute the cream cheese icing with sweetened whipped cream. But don't forget the nuts! INGREDIENTS: 4 1/2 cups cooked and mashed sweet potatoes 1/2 cup butter, melted 1/3 cup milk 1 cup white sugar 1/2 teaspoon vanilla extract 2 eggs beaten 1 cup light brown sugar 1/2 cup all-purpose flour 1/3 cup butter 1 cup chopped pecans DIRECTIONS: Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish. In a large bowl, mix together mashed sweet potatoes, 1/2 cup butter, milk, sugar, vanilla extract, and eggs. Spread sweet potato mixture into the prepared baking dish. In a small bowl, mix together brown sugar and flour. Cut in 1/3 cup butter until mixture is crumbly, then stir in pecans. Sprinkle pecan mixture over the sweet potatoes. Bake for 25 minutes in the preheated oven, or until golden brown. She taught me the method of "dejourger," which means to draw out water. Using this method I developed a moist but not heavy zucchini bread. It makes other zucchini breads look like lead bombs!" Original recipe yield: 2 -8x4 inch loaves. INGREDIENTS: 3 zucchinis 1 1/4 teaspoons salt 2 1/4 cups sifted unbleached all-purpose flour 2 teaspoons baking soda 1 tablespoon ground cinnamon 1/4 teaspoon freshly grated nutmeg 3 eggs 1 1/3 cups white sugar 1 cup vegetable oil 2 1/2 teaspoons vanilla extract 1 1/2 cups chopped walnuts 1 cup golden raisins DIRECTIONS: Soak raisins in warm water for 30 minutes. Drain thoroughly in a colander or strainer; set aside. Clean the zucchini and trim off the ends. Do not peel. Shred with a medium sized shredder. You should have about 4 cups when finished. Sprinkle the zucchini with 1 teaspoon of the salt and place on a plate. Mix it with your hands to evenly distribute the salt. Place a heavy saucepan on top of the zucchini and allow it to sit for 20 minutes to purge itself of liquid. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8x4 inch loaf pans and set aside. et aside 2 tablespoons of the flour. Sift together the remaining flour, soda, spices and remaining 1/4 teaspoon salt. Beat eggs on medium speed for about 3 minutes. Add the sugar, a little at a time and beat for a good 5 minutes. The mixture should be light in color and thick. While beating, slowly pour in the oil. Empty the zucchini into a colander and squeeze to release the juices. Add the vanilla to the beating eggs and then add in the zucchini. Add the dry ingredients, a little at a time and mix just until the dry ingredients are mixed in. Do not overmix. In a small bowl combine the remaining 2 tablespoons flour, nuts, and drained raisins, and mix together to coat. Fold into the batter. Pour into the prepared pans. Bake at 350 degrees F (175 degrees C) about 1 hour or until a toothpick comes out clean. Remove to a rack to cool for 10 minutes. Remove from pans and cool on a rack completely. ********************************************************** **Mama Meows Tips** *Burnt Food Odors To neutralize burnt food odors in the house, mix 1/2 cup whole cloves with 2 cups water in a saucepan and bring to a boil. Simmer cloves for 15-30 minutes. The house smells wonderful and the burnt odor is gone. Thanks Deb from Simplify Me With Tips and Hints *Heres a popcorn tip for the microwave: To get all those kernels popped , just microwave one cup of water for 1 minute just prior to adding your bag of popcorn, remove water and start popping immediately! *Flies or bees bothering you? Spray them with hairspray and they will take a quick dive. *Sealed envelope - Put in the freezer for a few hours, then slide a knife under the flap. The envelope can then be resealed. *Use Empty toilet paper roll to store appliance cords. It keeps them neat and you can write on the roll what appliance it belongs to. *For icy doorsteps in freezing temperatures: get warm water and put Dawn dish washing liquid in it. Pour it all over the steps. They won't refreeze. *Crayon marks on walls? This worked wonderfully! A damp rag dipped in baking soda. Comes off with little effort (elbow grease that is)! *Permanent marker on appliances/counter tops (like store receipt BLUE)! Rubbing alcohol on paper towel. *Whenever I purchase a box of SOS Pads, I immediately take a pair of scissors and cut each pad into halves. After years of having to throw away rusted and unused and smelly pads, I finally decided that this would be much more economical. And now a box of SOS pads lasts me indefinitely! In fact, I have noticed that the scissors get sharpened this way! *Opening brand new jars can be a feat in itself. Well, I have found way to make it the easiest thing to do. Instead of banging a jar of jam, pickles, etc., with a knife until it loosens up, I simply reach into the drawer and pull out the handy nutcracker. It adjusts to the size of the jar and I simply give it a good twist and off pops the lid! *Blood stains on clothes? Not to worry! Just pour a little peroxide on cloth and proceed to wipe off every drop of blood. Works every time! *Use vertical strokes when washing windows outside and horizontal for inside windows. This way you can tell which side has the streaks. Straight vinegar will get outside windows really clean. Don't wash windows on sunny day. They will dry too quickly and will probably streak. *Spray a bit of perfume on the light bulb in any room to create lovely light scent in each room when the light is turned on. Place fabric softener sheets in dresser drawers and your clothes will smell freshly washed for weeks to come. You can also do this with towels and linen. *Candles will last a lot longer if placed in the freezer for at least 2 hours prior to burning. *To clean artificial flowers, pour some salt into a paper bag and add the flowers. Shake vigorously as the salt will absorb all the dust and dirt and leave your artificial flowers looking like new! Works like a charm! *To easily remove burnt on food from your skillet, simply add a drop or two of dish soap and enough water to cover bottom of pan, and bring to boil on stovetop. *Spray your Tupperware with nonstick cooking spray before pouring in tomato based sauces and there won't be any stains. *When a cake recipe calls for flouring the baking pan, use a bit of the dry cake mix instead and there won't be any white mess on the outside of the cake. *Wrap celery in aluminum foil when putting in the refrigerator and it will keep for weeks. *When boiling corn on the cob, add a pinch of sugar to help bring out the corn's natural sweetness. *Cure for headaches: Take a lime, cut it in half and rub it on your forehead. The throbbing will go away. *Don't throw out all that leftover wine: Freeze into ice cubes for future use in casseroles and sauces. *To get rid of itch from mosquito bites, try applying soap on the area and you will experience instant relief. *Ants, ants, ants everywhere ... Well, they are said to never cross chalk line. So get your chalk out and draw a line on the floor or wherever ants tend to march. See for yourself. *Use air-freshener to clean mirrors. It does a good job and better still, leaves a lovely smell to the shine. *When you get a splinter, reach for the scotch tape before resorting to tweezers or a needle. Simply put the scotch tape over the splinter, and then pull it off. Scotch tape removes most splinters painlessly and easily.
