Drain to remove any excess liquid. Cool slightly. Lightly beat egg whites in small bowl; stir green onions. Stir egg-white mixture into rice. Coat inside of 10-inch tart pan with removable bottom with nonstick vegetable-oil cooking spray. Spoon the rice into the pan to cover the bottom evenly and make a high rim. Prepare the filling: Scatter half the cheese over the crust. Shred the cooked chicken breast and combine with green onion and picante sauce in a medium-size bowl. Spread on the crust. Preheat oven to 350~. Bake tart for 20 minutes. Scatter the remaining cheese over top and bake for another 10-15 minutes or until the cheese is melted. Let stand for 10 minutes. Remove the pan sides; place the tart on a serving dish. Garnish with dairy sour cream and serve with additional picante sauce ************************************************ *Heavenly Bites* 1/2 cup packed brown sugar 1/4 cup butter or margarine 1/2 teaspoon vanilla 1 egg white 1 cup flour 3 tablespoons unsweetened cocoa 1/2 teaspoon baking soda 1/8 teaspoon salt 1/2 cup butterscotch chips Heat oven to 375F. In a large bowl, beat brown sugar and margarine until light and fluffy. Add vanilla and egg white; mix well. Add flour, cocoa, baking soda and salt; blend well. Stir in chips. Drop by teaspoonfuls on to ungreased cookie sheet. Shape gently into balls with your fingers. Bake at 375F for 8-9 minutes. Cool 1 minute on sheet and then transfer to let cool completely. *********************************************************** *Luscious Coconut Cookies* 1 3/4 cups flour 3/4 tsp baking powder 1/4 tsp cinnamon 1/8 tsp nutmeg 1/8 tsp salt 1 cup butter or regular margarine 1 cup sugar 1 egg 1 tsp vanilla 2 cups coconut 1 pkg (10 oz) semi-sweet chocolate chips Preheat oven at 375 F. Mix flour with baking powder, spices, and salt. Beat butter until light and fluffy. Gradually beat in sugar. Mix in egg and vanilla. Stir in the flour mixture until well blended. Stir in the coconut and the chips. Drop from teaspoonfuls onto ungreased baking sheets. Bake for 10 minutes or until golden brown around the edges ****************************************************** *Mama Meows Tips* Thanks mythisis at SimplfyMeWithTipsAndHints *TIPS FOR BAKING CHEESECAKES: * Avoid over-beating the cheesecake filling. Over-beating incorporates additional air and tends to cause cracking on the surface of the cheesecake. * Use a springform pan (a pan with removable side and bottom). Placing the pan on a baking sheet helps to avoid leaks in the oven. * Always bake a cheesecake on the center rack of the oven. * Don't be tempted to open the oven door during the first 30 to 40 minutes of baking, drafts can cause the cheesecake to fall or form cracks. * Avoid over-baking. Be aware that baking times are not always exact, due to variations in ovens. A perfectly baked cheesecake will be puffed around the edges, yet the center should be slightly moist and jiggly. Unless otherwise directed by your recipe, turn the oven off and allow cheesecake to remain in oven, with the door ajar, for 30 minutes or until center is completely set. Remove from the oven and cool completely on a wire rack away from drafts before refrigerating. * For optimum flavor, serve cheesecake at room temperature. This takes about 30 minutes. * Store in the refrigerator up to 4 days, loosely covered. * Baked plain (minus topping) cheesecakes freeze well for up to 2 months. Cool completely and wrap tightly in heavy-duty foil or plastic wrap.
