Hi all and here is my own recipe, typically Italian and quick! Great served with some garlic bread and a simple green salad with a simple vinaigrette! This is a light and creamy sauce.

SPAGEHETTI WITH BACON AND CREAM SAUCE

INGREDIENTS
350g/12oz spaghetti
15ml/1 tablespoon olive oil
1 onion, finely chopped
155g/4 rindless streaky bacon or pancetta, diced
1 clove garlic, chopped finely
3 eggs
300ml/1/2 pint/1 1/12 cups double cream
50g/2oz parmesan cheese
salt and pepper to season
1 tablespoon chopped fresh basil for garnish

DIRECTIONS
Cook pasta in plenty of boiling salted water according to instructions on packet.

Heat oil in frying pan, fry onion on bacon or pancetta for about 10 minutes, or until softened. Stir in garlic and fry for further 2 minutes, stirring occasionally.

In the meantime, beat the eggs. stir in the cream and seasoning. grate the parmesan cheese and stir into the egg and cream mixture.

Stir the cream mixture into the onion and bacon or pancetta and cook over low heat for a few minutes, stirring constantly, until heated through. Season to taste.

Drain the pasta thoroughly and turn into large serving dish. Pour over sauce and toss to coat. Serve immediately, garnished with chopped fresh basil.
