Hi everyone and welcome to all my new subscribers...GREAT to have you here! Below is a wonderful healthy and full of taste recipe that you can have fun with. You can experiment easily, to taste, with the ingredients given and you will LOVE this vegetarian Pasta recipe.
I have to say...I will be in touch with zinester.com administration as the posting I just RE-POSTED today from a week ago came to me in very bad format so I will get this sorted! Zinester is having a small problem I think but do not worry as they are really an excellent server for ezine postings generally.

FRESH HERB PASTA WITH A HOT AND SPICY SAUCE
INGREDIENTS
2 medium carrots
500g (1 lb pasta of your choice but I like penne)
1/2 cup chopped fresh basil
1/2 cup chopped fresh mint
1/2 cup chopped fresh coriander
1/2 cup bean sprouts
2 teaspoons olive oil
2 cloves garlic finely sliced
2 tablespoons chopped unsalted cashew nuts
HOT AND SPICY DRESSING
2 tablespoons vegetable oil
1/4 cup olive oil
1 teaspoon sesame oil
1/4 cup lime juice
2 tablespoons light soy sauce
1/2 teaspoon sugar
2 teaspoons sambal oelek
DIRECTIONS
Cut carots into thin strips, Cook pasta in large pan of boiling water, uncovered until just tender drain.
Combine pasta, carrot, herbs and sprouts in bowl add dressing, toss well.
Heat oil in pan, cook garlic until lightly browned and crisp but not burnt. top salad with garlic and nuts.
HOT AND SPICY DRESSING
Combine all ingredients in jar, shake well.
Serves 6.
NOTE
One can microwave the pasta if necessary but this is not a good dish to freeze and is best served close to serving time.
