NASI GORENG (MALAY FRIED RICE)
Preparation time: 20 mins
Cooking time: 20 mins
Serves 6
Ingredients
1lb/500 g cooked rice
3/4 cup/200 ml cooking oil 2 small carrots (diced)
4 oz/125 g medium prawns (shelled, divined & seasoned)
4 oz/125 g cooked chicken meat (diced)
8 oz/250g long beans (cut into 1/2in or 6 mm thickness)
Salt & pepper to taste
MSG to taste (optional)
Omelets made from 2 eggs (rolled up & shredded)
2 oz/60 g celery
4 oz/125 g lettuce (shredded)
2 tbsp shallot flakes (fried)
POUNDED INGREDIENTS
2 cloves garlic
5 shallots
3 red chilies
1 in/2.5 cm piece dried shrimp paste (dry-fried)
COOKING INSTRUCTION
A- Heat oil on medium flame and add pounded ingredients. Fry for 3
minutes, then add carrots and prawns.
B- Fry for another 5 minutes, then add chicken and long beans. Season to taste with salt, pepper and MSG. Cook till all the ingredients are done.
C- Reduce heat to low. Add rice and toss mixture together for another 5 minutes. When thoroughly warmed, remove from flame.
D- Dish up and garnish with remaining ingredients. Serve hot or warm with chili or tomato sauce
