This issue I will show you how to cook fish a Malaysian way. To get the good taste, it is recommended to use a fresh fish. I hope you will enjoy this issue and have a wonderful weekend ahead.

FRIED FISH WITH FERMENTED BLACK BEANS

Preparation time: 10 min
Cooking time: 15 min
Serves 4-6

INGREDIENTS

1 1/2 lb/750 g whole fish (cleaned, scored on both sides & seasoned with a little salt)
Some flour (for coating fish)
1 red chili (cut into thin strips)
1 stalk spring onion (sliced)
6 tbsp cooking oil

CHOPPED INGREDIENTS

12 tbsp fermented black beans (lightly rinsed & drained)
2 cloves garlic
1/2 Stalk spring onion
2 slices ginger

SAUCE INGREDIENTS

1 cup/250 ml water
1 tsp Soya sauce
1/2 tea spoon salt
1 tea spoon corn flour (mixed with water to form paste)

COOKING INSTRUCTION

1. Coat fish all over with flour.
2. Heat oil and fry fish till crisp. Dish out and keep aside.
3. Remove oil leaving about 3 table spoons in pan. Heat and fry chopped ingredients till fragrant, stirring constantly.
4. Stir in water, Soya sauce and salt. Then add corn flour paste. Bring to the boil.
5. When sauce has thickened, pour over fish. Garnish with chili and spring onion and serve hot.
