CURRY FISH
Preparation time: 10 minutes
Cooking time: 20 minutes
Serves 4-6 people
1 whole sole - about 750 g (cleaned & scored)
2 tbsp cooking oil
1 red chili (cut into long thin strips)
1 stalk spring onion (cut into 2 in/5 cm lengths)
1 pt/600 ml water
POUNDED INGREDIENTS
2 cloves garlic
10 small onions
2 in/5 cm piece dried shrimp paste
1 in/2.5 cm fresh ginger
5 red chilies
2 stalks lemon grass
2 in/5 cm piece galangal
SEASONING INGREDIENTS
2tsp tamarind juice
A little black pepper
A little salt
COOKING INSTRUCTION
1. Heat oil in pan. Fry pounded ingredients for 10-15 minutes, stirring frequently.
2. Add water and bring to the boil.
3. Put in fish and add seasoning ingredients.
4. Lower heat slightly and simmer till fish is tender.
5. Dish out and garnish with chili and spring onion strips
