Editor's Note

First of all I would like to apologize because I did not post new recipes for a few weeks. The reason is that there were unforeseen circumstances. However everything is back to normal and I am ready to post new recipe for this issue. Today recipe is very simple and it can use for light ??™snack??™ in the morning or in the afternoon. I normally make this Banana Fritters and enjoy it with hot black coffee. I hope you will try it and enjoy this issue and have a wonderful weekend ahead.

BANANA FRITTERS

Preparation time: 5 minutes
Cooking time: 15 minutes
Makes about 30

INGREDIENT

250 gm flour & a little salt sifted
5 tbsp sugar
2 eggs (beaten)
4 tbsp coconut milk
6 ripe bananas
Cooking oil for deep-frying

COOKING INSTRUCTION

1. Add sugar, eggs and coconut milk to flour to make a fairly stiff batter.
2. Peel bananas and mash well.
3. Add mashed bananas to batter and mix thoroughly.
4. Heat cooking oil. Fry tablespoonfuls of batter till golden brown.
5. Drain well and serve hot.
