1. Chili Prawns

CHILI PRAWNS

Preparation time: 10 mins
Cooking time: 10 mins
Serves 6-8

INGREDIENTS

12-15 large fresh-water prawns
1/4 cup tamarind & 1/4 cup water - squeeze for tamarind juice
1/2 tsp cornflour & 1/4 cup water - mix until smooth
1 tsp sugar
salt to taste
3 tbsp cooking oil

POUNDED INGREDIENTS

6-8 dried chillies
5 cloves garlic
1 in piece ginger

COOKING INSTRUCTION

1. Clean and trim prawns, leaving the shell on. Slit along the back and Remove the black vein. Wash prawns in salt water.
2. Soak the prawns in the thick tamarind juice for 1-2 hours.
3. Heat oil and fry pounded ingredients until fragrant. Add the prawns and season well with sugar and salt. Stir well for 2-3 minutes.
4. Add the corn flour mixture and simmer until prawns are cooked and quite dry.
5. Dish up and garnish. Serve hot.
