Occupying in excess of 10,000 acres in an environment of rich soil and mist-enshrouded mountains are the villages of JingMai and MangJing. Thankfully now protected by the government, these thousand-year-old high mountain forests have never been fertilized, sprayed with chemicals or even watered. The people within the villages have a tea culture heritage dating back 1300 years and today JingMai and MangJing are extolled as a "Natural Tea History Museum."
Kwan Yin is the Buddhist Goddess of Mercy and Compassion and is commemorated in name and spirit in this wonderfully full and lingering oolong tea. Green Jasmine is scented from the flowers growing along with the trees in this magical forest. Both are certified organic.
These two special teas are paired with a glass teapot without any infuser to encumber the leaf from fully opening and dancing before your eyes. A small metal coil is neatly tucked into the spout ensuring the leaf remains in your teapot as you pour.

Think outside the cup - cook with tea! This sauce is nice with fish or over veggies.
Green Tea Ginger Sauce
3/4 cup brewed green tea (the liquor) - Japanese tea will give this a lighter flavor; Chinese greens such as Dragon Well will have a stronger green taste. Also Jasmine green is wonderful if you want an added sweetness.
1/2 cup shredded ginger
1/2 cup sake
1/4 cup rice vinegar
1 Tablespoon sesame oil
1 minced green onion
4 cloves of minced garlic
Mix all together and shake well. You can store in the refrigerator for up to 2 weeks or use immediately. Try different teas to create totally different flavors. Remember the tea is your spice! From chadoen.com.
