A Refreshing Recipe

Leftovers
Have you made the Chicken with Corn and Black Beans lately? You probably had leftovers! Although re-heating the dinner as is can be super tasty, turning it into something different is a nice twist! Shred the leftover chicken and throw all the leftovers into a large saucepan with 2 cups eight-vegetable juice, 1 cup water, 1 tablespoon minced onion, and 1 teaspoon southwest seasoning mix. Simmer for 15-20 minutes; you've created a tasty southwest soup out of leftovers!

My Husband Wants a Cool Kitchen
I mean 'cool' as in temperature. This past week was definitely summer for us - 95-98 degrees Fahrenheit with (what felt like) 110% humidity. During those times, my husband is a fanatic about not heating up the kitchen; the only appliance I am allowed to use is the microwave. If using my crock pot (miniature furnace as he calls it in the summertime) it must be plugged in outside on our screened in porch. Since our gas grill has a side burner on it, any boiling of water or use of the stove is done outside. Our oven is not used at all, especially since it's quite old and puts out a bunch of heat.

Crazy as all this might sound, I thought I'd share it with you simply for the ideas. If it's warm in your house, there's no reason why you can't do the majority, if not all, of your cooking outside (provided you have a grill!). Boil water, make noodles or rice, pretty much anything can be done on your grill. I would not recommend using non-stick cookware; we use our stainless steel pots and pans. Remember to bring your hot pads!
