Today's Recipe:

Banana Split Cheesecake Bars

Crust:
2 cups graham cracker crumbs
1/3 cup melted butter
1/4 cup sugar

Filling:
24 oz cream cheese
3/4 cup sugar
1 tsp vanilla
3 eggs
1/2 cup mashed bananas

Topping:
1 cup halved strawberries
1 banana, sliced and tossed with 1 tsp lemon juice
8 oz pineapple chunks drained.
1 oz semi sweet chocolate melted (optional)
Chopped nuts (optional)


Prepare crust: mix graham cracker crumbs, butter and sugar. Press
onto bottom of 13x9 baking pan.

Prepare filling: mix softened cream cheese sugar and vanilla on
medium speed until well blended. Add eggs and mix until blended. Stir
in bananas and pour into crust.

Bake at 350 for 30 minutes or until center is almost set. Cool.
Refrigerate 3 hours or overnight.

Prepare topping: top with strawberries, banana and pineapple.
Sprinkle with nuts and drizzle with melted semi sweet chocolate, if
desired.

Cut into 18 bars
