Today's Recipe:  Please Help Us Rate It!

Catfish Gumbo  
 
Ingredients

1/4 cup vegetable oil
1 teaspoon salt
1 cup chopped celery
1/2 teaspoon dried thyme
1 cup chopped green bell pepper
1/2 teaspoon cayenne pepper
1 cup chopped onion
1/2 teaspoon dried oregano
2 cloves garlic, chopped
1 bay leaf
4 cups beef stock or canned broth
4 Catfish fillets, cut into 1-inch cubes
1 16-ounce can tomatoes
Cooked rice for serving
1 10-ounce package frozen cut okra

Directions

1. Heat oil in a Dutch oven or a large heavy saucepan over medium
heat. Add celery, bell pepper, onion and garlic and saut?© until
softened. Add beef stock, tomatoes, okra, salt, thyme, cayenne pepper,
oregano and bay leaf. Bring to a boil. Reduce the heat to medium-low,
cover and simmer for 30 minutes, stirring occasionally.

2. Add catfish fillet pieces and simmer for 15 minutes or until fish
flakes easily when tested with a fork. Remove bay leaf. Serve gumbo
over cooked rice.

Dangerous Horsie (Blonde Joke)

A pretty blonde decides to try horseback riding, even though she has
had no lessons or prior experience. She mounts the horse, unassisted,
and the horse immediately springs into motion.

It gallops along at a steady and rhythmic pace, but the blonde begins
to slip from the saddle.

In terror, she grabs for the horse's mane, but cannot seem to get a
firm grip. She tries to throw her arms around the horse's neck, but
she slides down the side of the horse anyway. The horse gallops along,
seemingly impervious to its slipping rider...
