Finally Friday! For those of you lucky enough to have
off for Saint Patricks Day, have a ball! For those of
you not lucky enough, at least enjoy the weekend!

Mesquite Meal not only tastes great but it's actually
good for you because it's high in protein, lysine and
dietary fiber. This helps regulate blood sugar over a
4 to 6 hour period. Because it regulates the release
of glucose over a long period of time,it curbs hunger.

regulate cholesterol and it seems to help in the

This is a special recipe using the above Mesquite Meal!

Mesquite Grilled Chicken

4 lb. whole chicken, cut up  
1/4 teaspoon paprika  
1 Tablespoons olive oil
1/2 teaspoon black pepper, ground
2 Tablespoons mesquite meal  
1/2 teaspoon salt
1/2 teaspoon cumin  

Coat chicken with olive oil.

Combine dry ingredients and rub onto chicken.

Place chicken skin side down on a medium hot grill and
cook for about 20 minutes then turn and cook another
20 minutes or so.

On an indoor barbeque grill 10 minutes extra may be
required.

Creole Rice Cakes
Serving Size : 4

4 slices bacon
3 tablespoons onion -- chopped
3 tablespoons green pepper -- chopped
1 cup cooked rice
1/2 cup flour
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon pepper
1 cup canned tomatoes
2 eggs -- beaten

Fry bacon crisp, leaving bacon fat in pan. Chop bacon
and combine with all other ingredients in the order
given to make a batter. Cook as fritters in the bacon
fat.
