Today's Recipes-Cajun Christmas Recipes

~~Baked Cajun Chicken~~

Servings: 4 servings

Ingredients:
1-1/2 pound to 2 lb. chicken, meaty
(breasts, thighs, drumstick)
1/2 dried thyme, crushed
nonstick spray coating
1/4 teaspoon garlic salt,
2 tablespoon nonfat milk,
1/8 teaspoon to 1/4 tsp. ground white pepper,
2 tablespoon onion powder (or real onions, depending on your taste)
1/8 teaspoon to 1/4 tsp. ground black pepper

Instructions:
Remove skin from chicken. Rinse chicken, pat dry. Spray a 13 by 9 by
2 inch baking dish with nonstick coating. Arrange the chicken, meaty
sides up, in dish. Brush with milk. In small bowl mix onion powder,
thyme, garlic salt, white pepper, red pepper, and black pepper.
Sprinkle over chicken. Bake in a 375 degree oven for 45 to 55 minutes
or till the chicken is tender and no longer pink.

~~Cajun Christmas Dressing~~

5    medium mirlitons (vegetable pears)
3    slices bacon, chopped
1    small white onions, chopped fine
1/2  cup chopped shallots
1    lb peeled and deveined shrimp
1    cup wet white bread, squeezed
garlic salt
salt and pepper
Tabasco sauce
seasoned bread crumbs
2    eggs, slightly beaten

Boil mirlitons until fork tender (about 20 minutes).
Saute bacon, chopped seasonings and shrimp until shrimp are pink.
Add wet bread, garlic salt, salt and pepper to taste and Tabasco sauce.
Cook over medium heat until dressing browns a little.
Peel mirlitons, remove center seed, and mash.
Add mashed mirliton to skillet.
Add eggs slowly while stirring.
Add 1/2 cup seasoned bread crumbs.
Put dressing in buttered casserole.
Sprinkle with crumbs, dot with butter and bake at 350 degrees until
heated through.

~~Cajun Green Beans~~

Ingredients: 4 Slices Bacon
3 Cloves Garlic, minced
2 Cans Whole Green Beans (or fresh)
1 Tsp. Garlic Salt
1/3 Lb. Beef or Pork Sausage, cubed
1 Large Onion, diced
1/4 Cup Parsley Flakes
1 Tsp. Salt
1 Tsp. Pepper
1 Tsp. Creole Seasoning
 
Slice bacon into bite-sized pieces and put into skillet with onion,
garlic, and parsley. Saute until onion is soft and slightly brown.
Add beans, salt, pepper, garlic salt or powder, creole seasoning and
sausage. Cover and simmer until beans are cooked down with seasonings.
Water can be added during simmering to keep beans from sticking to
pan. Cook about 30-45 minutes. Servings: 4

~~Cajun Giblet Gravy~~

1 tsp. salt
1/4 to 1/3 tsp. cayenne
1 tsp. sage
1 tsp. thyme leaves
1/3 tsp. white pepper
1/2 tsp. oregano leaves
1/4 tsp. black pepper
3 tbsp. unsalted butter
1/4 lb. gizzards, ground
1/2 c. onion, chopped
1/2 c. celery, chopped
1/2 c. green pepper, chopped
2 tsp. garlic, minced
1/4 c. all-purpose flour
3 1/2 c. chicken stock
1/2 lb. chicken livers, ground

Combine seasoning mix in small bowl. Set aside. Melt butter in
skillet on high heat. Add gizzards, onions, celery and green peppers;
saute until gizzards browned (about 5 minutes), stirring occasionally.
Reduce heat to medium and add garlic, seasoning mix and flour; cook
until flour is a rich brown color (about 3 minutes). Stir frequently
and scrape pan bottom well. Add stock; bring to boil on high heat and
simmer for about 5 minutes; keep stirring. Stir in livers and
continue simmering until gravy reduced to about 3 cups (about 10
minutes). Continue to stir. Be careful on the cayenne - can be "warm".

~~Cajun Sweet Potato Pone~~

Ingredients
 
4 large sweet potatoes, peeled and quartered
1/2 cup butter
2 eggs, slightly beaten
1/2 pint whipping cream
1 tsp. vanilla
2 T. brown sugar
1/2 tsp. cinnamon
1/2 tsp. allspice
1/4 tsp. ground cloves
Dash of freshly grated nutmeg
1/2 cup golden raisins
1/2 cup flaked coconut
1 tsp. orange zest
1 tsp. lemon zest
1/2 cup flour
1 Tblsp. baking powder

Topping:
1 cup packed brown sugar
1/2 cup butter, room temperature
1/2 cup finely chopped pecans
1/2 cup Grape Nuts cereal
 
Method
Boil sweet potatoes until tender, about 20 minutes.
Drain and mash.
Preheat oven to 350??.
Lightly butter a 13 x 9 baking dish.
In a heavy saucepan, melt butter over medium heat; cook until light
brown in color, about 7 minutes.
Stir browned butter and remaining ingredients except Topping, into
mashed sweet potatoes, blending well.
Spread mixture into buttered baking dish; set aside.
Prepare Topping by combining all ingredients.
Sprinkle Topping evenly over sweet potato mixture.
Bake until golden brown and hot, about 30 minutes.
Serve hot.

Serves 6 - 8
