People have been asking us what Mesquite Meal is used
for. We are including all the information in this

gathering ripened seed pods from the mesquite tree and
grinding them into a high protein flour. Desert

This is a wonderful recipe using the above meal from
Jim, thanks so much Jim for sharing!

NATIVE AMERICAN BLUE CORN BREAD

Ingredients

1 1/4 cups Blue Corn Meal
1/4 cup Mesquite Flour (Meal)
4 cups Water
1/4 teaspoon Salt
 Olive Oil
1/4 cup Tomatoes, sun dried  
1/4 each Red Bell Pepper, diced  
1/4 each Yellow Onion, diced  
4 each Chiltepin Peppers, wild not cultivated

 
Directions


Soak sun dried tomatoes until soft enough to dice.
Saut&#233; bell peppers and onions until soft.
Heat water to boiling then reduce heat to medium and
slowly add mesquite meal and blue corn meal, whisk
continually. Continue to cook for about 10 minutes
until mixture is so thick you can hardly whisk.
Combine vegetables with blue corn mixture making sure
sun dried tomatoes are patted dry. Pour mixture into a
cake pan or onto a cookie sheet and spread to about 1"
thick. Let corn bread sit for at least two hours in
the refrigerator until cooled. When cooled slice and
in a little olive oil saut&#233; slices until evenly
browned on both sides. Serve hot. Serve with eggs &
bacon, or with mushroom ragout and Gorgonzola cheese,
or as a side dish. It will go with anything!
