Beans and Jalapenos with Cheese

Ingredients:
2 1/2 cups of water
1 cup long grained rice
1 tablespoon olive oil
1 medium onion, chopped (about 3/4 cup)
3 cloves garlic, minced
1 jalapeno pepper, seeded and minced
4 cups cooked red kidney beans ( I use chili beans )
1 teaspoon ground cumin
1/2 teaspoon salt
2 tablespoons fresh lemon juice
1/2 cup shredded reduced-fat Monterey Jack cheese ( or your choice )

Preparation Time: 20 minutes
Cooking Time: 15 minutes  
Serves 6 maybe

1. In a medium saucepan, bring water to a boil over medium heat. Stir
in rice. Reduce heat to low and cover. Simmer until rice is tender
and liquid is absorbed, about 20 minutes.

2. While rice is cooking, in a large skillet, heat oil over medium-
high heat until medium hot. Add onion; cook, stirring constantly,
until softened, about 5 minutes. Add garlic and jalapeno; cook,
stirring, for 1--2 minute longer.

3. Add beans, cumin, and salt to skillet. Simmer until thickened,
about 15 minutes. Stir in lemon juice. Spoon rice in a bowl, add the
bean mixture on top bowl. Sprinkle cheese over top. This may be
doubled with no problem.

Early one morning, Tee Jean was walking along the bank of Bayou Que
de Tortue behind his house. All of a sudden, he noticed that the
family outhouse, located right on the bank, was tilting dangerously
toward the bayou; the heavy downpour from the previous night had
serious eroded the bank where the outhouse was located. Being a boy (
and a pretty canaille one at that) and reasoning that the outhouse
was beyond salvage, Tee Jean picked up a big stick and whacked the
outhouse - really pel?Šed it - and watched as the outhouse toppled
over, fell into the bayou, and quickly sank under the muddy waters. A
few hours later, Tee Jean's father came up to him and with anger in
his voice asked, "Tee Jean, did you knock that outhouse into the
bayou?" "Papa," the boy answered, "like George Washington, I cannot
tell a lie. I did it...
