Bring to a boil. Add the potatoes (frozen) and simmer for 30 minutes. 1 1/2 cup = 3 points That's it! It was so easy!! I added a bit of Velveeta Light to make it cheesy. I added maybe 2 ounces which added 2 points to the whole soup. I also added about 4 pieces of crumbled turkey bacon (another 1 point for the whole soup). Somebody in a class I was subbing for a couple of weeks ago gave me this recipe. It didn't look too good, but I tried it and it was AWESOME!
