Frugal Winter Fun
Here are some ideas for you and your kids when it's not quite so cold outside
besides obvious ones (sledding, snow ball fight, snow angels, snowmen): Take empty,

What's Cooking:  Artichoke Chicken Parmesan

3 chicken breasts
Italian style bread crumbs
2 cans diced tomatoes
1 can artichoke hearts
Shredded Parmesan cheese
Olive oil
Basil
Garlic posder
Sea salt
Peppercorn

Take 3 chicken breasts, cut them into strips and throw them in a ziplock bag with
Italian style bread crumbs. Shake until breasts are completely covered.
In a square pan add two cans of diced tomatoes, one can of artichoke hearts (drained and chopped)
Stir mixture together and then add a tablespoon of olive oil, a couple shakes each of basil,
garlic powder, sea salt and peppercorn shaker. If you have the McCormick Italian grinder,
add some of that too. Mix together thoroughly.

Place chicken breasts on top of tomato mixture. Add shredded parmesan cheese to tops of breasts.
Bake for 40 minutes at 375. Serve on bed of whole wheat or whole grain pasta (spaghetti or penne)
Garlic bread would be a nice compliment to this meal as well. Enjoy!!  -- Username Christy_K
