Meanwhile, in a large skillet, cook beef and onion over medium heat until the meat is no longer pink; drain. Stir in the spaghetti sauce. Spread half of the meat sauce into a greased 13-in. x 9-in. x 2-in. baking dish. Drain manicotti, stuff each shell with a piece of string cheese. Place over meat sauce; top with remaining sauce. Cover and bake at 350 degrees for 20-25 minutes or until heated through. Sprinkle with the mozzarella cheese. Bake, uncovered, for 5-10 minutes or until the cheese is melted. Yield: 6-8 servings. I have found it takes a total of 40-45 minutes to cook in my oven so that the string cheese it melted in the center. This is really easy to make and is good. I do like Julie Morgensterns organization book which suggests organizing like a kindergarten classroom...there is an "area" or "zone" for everything. The less I bring home from the store, the less I have to dust or put away later. I'm a "pack-rat" by nature, so I have to be conscious of that at all times! I'm one of those people that say, "I know the minute I throw that away, I'm going to need it"!!
