Cover with foil and bake at 375 degrees for 45 minutes. Remove from oven, uncover, and add pineapple tidbits with liquid, vegetables, cashews and ginger and mix well. Place chicken on rice mixture and press into rice. Brush the chicken with the teriyaki baste sauce. Bake, uncovered, for an additional 30-40 minutes until chicken is thoroughly cooked. Serves 4. |
