I made Indonesian Rice to go with it. I love it! Chicken Satay with Peanut Sauce, or in Dutch..... (Laffe Satay met Pinda Saus) 1 lb boneless, skinless chicken breasts, cut into 1/2-inch strips 2 tbsp vegetable oil 30 mL 1 tbsp lime juice 15 mL 1 tbsp soy sauce 15 mL 1 clove garlic, minced 1 clove 1/2 cup Skippy Creamy or Chunky Peanut Butter 125 mL 1/4 cup golden corn syrup 50 mL 2 tbsp white vinegar 30 mL 1 tbsp soy sauce 15 mL 2 tsp minced fresh ginger or 1/2 tsp (2 mL) ground ginger 10 mL 1 clove garlic, minced 1 1/2 tsp crushed red pepper flakes 2 mL In shallow dish, combine oil, lime juice, soy sauce & garlic; add chicken & stir to coat. Cover & marinate for up to 8 hours in refrigerator or 30 minutes at room temperature. To make peanut sauce, in medium microwaveable bowl, combine remaining ingredients. Microwave on HIGH 1 minute or until hot, stirring halfway through. Thread chicken onto each of 16 soaked wooden skewers. Grill or broil 3 minutes per side or til no longer pink inside. Here ya go...a favourite Christmas recipe:) Coconut Shrimp w/Sweet Dipping Sauce 1 lb.medium shrimp 1 cup all-purpose flour,divided 1/3 cup beer 1/4 teaspoon baking powder 1/4 teaspoon paprika 1/4 teaspoon curry powder 1/8 teaspoon salt 1/8 teaspoon ground red pepper 8 ounces flaked coconut Vegetable oil Peel and Devein shimp Leaving tails intact. Combine 3/4 cup flour,beer and next 5 ingredients stirring until smooth. Dredge shimp in remaining 1/4 cup flour, dip in batter and coat with coconut. Fry shrimp in hot 350 degrees oil until coconut is golden,turning once. Serve with sweet dipping sauce. Serves 6. Christine V.
