Hello everyone,
Today I am remembering Rob & wishing you a beautiful day in his native Dutch language.
Many of you remember Rob & know what a fun person he was. He wrote 2 newsletters himself. One was Live & Let Live, a support ezine for those dealing with any type of disability. He helped a lot of you find ways to cope, & resources to turn to in your communities. This could be very serious letters some weeks, while he also had humour to add many times as well.
His other one was Rob's Cooking Pot.
This had fantastic recipes & written up in the manner you would find him cooking them...but...he also had this loaded with laughs.  I used to proof read his news every night before it went out. I used to laugh sometimes till I cried, at his antics.
I will post the links for those who would like to see some great recipes & great humour. I still miss his laughter...2 years today...but, I often will remember & find myself laughing anyway.
I think that's the way it's supposed to be. We move on to the best of our ability & in our own way. No matter what, Rob is forever loved.
God Bless & love to all!
Have a beautiful day! Patsy

Hello iedereen,
Patsy

First I am going to give you Rob's very first recipe from
Rob's Cooking Pot, exactly as he presented it...delicious & funny:)

Good day good people, recipe number 1.

Today, or if you make it tomorrow, okay, tomorrow we eat Sauerkraut.
hehe
First a question. Why are American and Canadian people using the German
name for it? It should be called: Sour-cabbage! In the Netherlands we
call it zuurkool. But in order not to confuse you we keep on calling it
Sauerkraut!
We go out from a immediate family. Man, woman, (not especially in that
order), daughter, son or vice versa. So basicly two grown-ups and two
children. In this case it is very easy, because how many children like
sauerkraut? Send them to a snackbar round the corner, and the two
parents stay home for the sauerkraut!
Okay, here we go. First: let nobody tell you sauerkraut is a German
invention. In the Netherlands they already were playing with diverse
recipes, when the Germans for the first ate it!

At best we take wine-sauerkraut. Don't be shocked, you won't find any
alcohol in it. The wine is cooked into the sauerkraut, and because of
the cooking process the alcohol is vaporized. Alcohol cooks around 90
degrees Celsius. But the good part, the taste is left behind. Some
sauerkraut we buy is completely raw, and some is a bit cooked. Either
way, you have to cook it. Cook it till it is bite-done. You must be able to bite through the kraut, but feel it between your teeth!

In the Netherlands, economic people, we cook the potatoes with the
sauerkraut. But also very nice is to cook them separately, and mash
them. Fry some onions, well done. Mix them through the potatoes. Use
some salt, but not too much. Salt seldom adds something to a recipe,
instead of herbs, and it is not very healthy. But if you can't do
without it, use some. I won't smash a spoon on your fingers, I am not
there!
Potatoes cooked with the sauerkraut. So a hash! For meat we have
several options. What is very good is pork medallions. Thin slices of
pork tenderloin. Expensive though, so why not a normal piece of pork
meat. Fry it quickly on both sides, and put the heat source lower. Cover on the pot, maybe add some water, to avoid burning, and let it simmer for a while. Turn around when necessary. I can't tell you when that will be, it depends on the kind of pan, the butter you use, the thickness of the meat. Just look yourself, and act accordingly!

You can also eat smoked sausage with sauerkraut. Most of the time you
buy them ready made, and you have to heat them in the package you buy it in. Tip: stick a fork a few times through the sausage (and through the package), that way it won't burst open that soon! Give everybody a big piece of the sausage, or cut it up in the hash.

Tip: very good tasting in sauerkraut, at least I think, is pineapple.
No, not the whole pineapple of course, but cleaned, so we have the
yellow slices. We can also buy them in a tin. Try to buy the unsweetened kinds. We don't especially need sugar in our sauerkraut. Cut the pineapple slices in little pieces, and mix them through the sauerkraut.
Use the pineapple juice to enrich the flavour of your sauce.

Another good tip is this software FOR NOTHING only a little -shipping
-charge. MasterCook Deluxe CD-Rom-Software, Your complete kitchen &
recipe manager. I think I will get one, I need it! ( International )

I brought you a recipe today that can't go wrong. You can go any way you like with sauerkraut. When you made a hash, it is delicious the second day, fried on a slice of bread! Don't forget the golden rule, every hash is on its best taste the second day!
Rob

PS Your Indonesian Rice recipe will be along in a couple of days. I am
still eating MINE & working on YOUR recipe! hehe

I want to send you to Rob's first Live & Let Live issue. He was writing his life story about disabilities & giving help to all who were in need of it. Rob was responsible (in his organization in Holland), to see to it that all towns & cities roads were inspected, to put forth ideas & complaints to make sure that everything was accessible. I travelled with him to some of these areas & saw the results of his work...he did not give up until things were the way they should be. At one point he had ONE store left in the city that was NOT accessible. He had a unique way of grabbing attention.
He called the TV & Radio stations in the city, to meet him the next morning at the corner of this store because the Mayor was going to be present.
He then called the Mayor & asked him to meet him at the corner of this store because he had TV & Radio crews set up to be there. The Mayor was thinking "publicity" & agreed to come right away. hehe
He then called his friend to come to the corner of that store the next morning, because he was having the Mayor, TV & Radio crews meeting him there & he needed an extra wheelchair. Of course the friend agreed right away.
Well, I saw this video clip! LOL
When everything was set up, cameras rolling, he asked the Mayor to go into this particular store & get him some Herbal Tea. The Mayor agreed right away & started toward the store...nay nay nay, says Rob. Here, please sit in the wheelchair & THEN go it & get my tea, the same way I have to. The Mayor quite embarrassed by now, sat in the wheelchair & moved towards the door. He was unable to enter & turned to Rob & said this. Rob says "Exactly"! Well...in Dutch = Precies!
Needless to say...that store was wheelchair accessible within 2 days.
Try this yourself, when something is not right...hang in there & keep working at it until you are successful. Never let a disability slow you down. There is always a solution to every problem...just ponder on what it is & then go forward & work until it is accomplished.

From Kay...Remembering Dad:)
He was exactly this in our lives...one of the angels you COULD see, a fun & loving one.

What do Angels Look Like?

They Don't Need Wings
I see them all around me there,
With bright blue eyes and golden hair.
Some have different features too,
Some look the same as me and you.
There was this one with hair so dark,
And another one with a caring heart.
But yet another, at such a young age,
He looked the type to be in a cage.
They are all around this world so big,
You just have to look, no need to dig.
You see them on the corner of every city,
If you don??™t, it is such a pity.
So, let me tell you now, it??™s true,
About the angels God sends to you!
They may not have wings or shine so bright,
But they forever shine, with God??™s loving light.

What do Angels Look Like?

Like the little old lady who returned your wallet yesterday.
Like the taxi driver who told you that your eyes light up the world, when you smile.
Like the small child who showed you the wonder in simple things.
Like the poor man who offered to share his lunch with you.
Like the rich man who showed you that it really is all possible, if only you believe.
Like the stranger who just happened to come along, when you had lost your way.
Like the friend who touched your heart, when you didn't think you had one.
Angels come in all sizes and shapes, all ages and skin types.
Some with freckles, some with dimples, some with wrinkles, some without.
They come disguised as friends, enemies teachers, students, lovers and fools.
They don't take life too seriously, they travel light.
They leave no forwarding address, they ask nothing in return.
They are hard to find when your eyes are closed, but when you choose to see, they are everywhere you look.
So, open you eyes and count all your Angels -- for you are truly blessed!

Love to all...Kay *S*
