Continue boiling, stirring frequently, to soft ball stage or when candy thermometer registers 234?° to 238?°. Remove from heat & add vanilla & butter; do not stir. Let cool for about 25 minutes, then beat with a wooden spoon until the fudge just begins to thicken. Add chopped nuts & beat for a few more minutes, until it begins to lose its gloss but is not too thick. Pour or spread in a greased pie plate or 8-inch square pan. The dough will be dry. Roll out into a long tube, & pinch off 12 walnut-sized balls. Press each ball & dip into oil. Roll out into 5" circles on an oiled board. Sprinkle oil on a hot frying pan. Flip the chapati onto the pan, & let bubble; then turn over. Sprinkle the first side with oil while the second side cooks briefly. Turn & cook the first side again while pressing the edges with a paper towel to make the chapati puff up. Sprinkle the second side (facing you) with oil. Turn again & press the edges while frying the second side. Each side cooks twice, the second time with sprinkled oil.
