Apart from making you feel better (and giving you some exercise), the sun will help your body absorb vitamin D, which is essential, particularly for women, to prevent osteoporosis. Add the potato & onion, stirring to coat with the oil. Season with salt & peppers to taste. Reduce heat to medium, cover & heat for 5 minutes. Pour in the chicken stock & the milk, bring just to a boil, reduce heat to low & simmer for 10 minutes, or until potatoes are tender. Stir in the watercress & simmer, uncovered, for 4-5 minutes, or until watercress is just cooked. In small batches, transfer the soup to a blender or food processor & puree until smooth. Return the soup to the pot, season to taste, & ladle into individual bowls. For a jar soup: My Mom at this point will put what she wants in her bowl & spoon some into mason jars & let them seal right away. Let cool on counter, & listen for the pop that shows it sealed.
