MAMARABBITS FREEBIES ********************************************************** HELLO ALL..WE ARE STARTING THIS ISSUE WITH RECIPES FROM KERMIT... THANKS KERMIT!! ********************** White Bean & Tomato Salad 1 can (15 oz.) white beans, drained, rinsed 1/2 cup red onion, chopped 1 cup (1/2 lb.) tomatoes, seeded, diced 1/3 cup minced parsley 2 tbsp. lemon juice 1/2 tsp. each basil, thyme, oregano 1/4 tsp. black pepper 2 tbsp. olive oil Combine all ingredients; toss gently to mix. Chill until ready to serve. ******************************************* Steak & Ale Hawaiian Chicken 6 Chicken breasts, boneless 2 cups Pineapple juice 2 tablespoons Worcestershire Sauce 1/4 cup Soy Sauce 2 tablespoons Sugar In a bowl combine all ingredients except for chicken. Stir. Using a fork, poke about 5 - 8 sets of holes in each chicken breast. Put chicken in marinade, making sure it is covered in the mixture. Add more pineapple juice if necessary. Cover and refrigerate for 24 hours. Grill or broil until juices are clear. ***************************************** Shrimp Primavera Sauce: 1 tablespoon butter 1 envelope Knorr Sun Dried Tomato Pesto Sauce Mix or Parma Rosa Sauce mix 28 ounces canned tomatoes, crushed 2 tablespoons lemon juice 1/4 teaspoon crushed red pepper 1/2 teaspoon dried basil 1/2 teaspoon black pepper 2 tablespoons butter 8 ounces sliced mushrooms 1 green bell pepper, cut in 1-inch pieces 1 red bell pepper, cut in 1-inch pieces 1/2 cup coarsely chopped onion 1 pound linguini, cooked 1 pound shrimp, cooked, peeled, deveined Parmesan cheese Melt 1 tablespoon butter in large saucepan over medium heat. Add sauce mix, tomatoes, lemon juice, crushed red pepper, basil, and black pepper. Stir well and simmer for 10 minutes. In a large skillet, melt 2 tablespoons butter. Cook vegetables for about 3 minutes, until crisp-tender. Add to the sauce and simmer 5 minutes longer. When pasta is almost done, stir shrimp into the sauce and heat through. Do not boil. Spoon Shrimp Primavera sauce over hot drained linguini. Sprinkle with Parmesan cheese. Serves 4. ***************************************************************** Pasta With Seafood 1 pound haddock fillets or other white fish 6 ounces minced clams; drained 6 ounces cooked shrimp 6 ounces crabmeat, picked over 6 ounces dry radiatore or spiral pasta, cooked and drained Sauce 3 tablespoons butter 3 tablespoons plus 1 1/2 teaspoons all-purpose flour 2 1/4 cups whole milk 1/2 teaspoon salt 2 tablespoons olive oil 2 medium cloves garlic, minced 1/4 cup sherry 1 tablespoon parsley, chopped 2 quarts boiling, salted water Preheat the oven to 400°. Line a baking sheet with foil and grease or spray the foil with cooking spray. Bake the haddock, uncovered, for 5 to 6 minutes, just until fish flakes easily with a fork. Remove from the oven. When cooled, break the fillets in half, lengthwise, then break each half into approximately 1-inch pieces and set aside. In a large heavy saucepan or Dutch oven, melt the butter over medium heat; add the flour and cook for 2 to 3 minutes, whisking constantly. Do not let the flour to brown. Add the milk and salt and cook just until it begins to bubbly, whisking constantly. Remove from the heat and keep warm. Heat the olive oil in a skillet pan over medium heat; saute? the garlic only until tender. Add the sauteed garlic to the warm sauce. Add the sherry or wine to the pan in which the garlic was sauteed, simmer over medium heat for 1 minute, then add to the warmed sauce. Add the cooked pasta to the sauce. Place over low heat for a few minutes, then add the cooked fish, seafood, and chopped parsley. Blend thoroughly, heat through, and serve *********************************************************************** Oven Fried Potatoes With Dill 4 medium potatoes 1 1/2 tablespoons melted butter 1 1/2 tablespoons olive oil 1 teaspoon salt 1/4 teaspoon pepper, or to taste paprika garlic powder dillweed Peel potatoes then cut crosswise into 3/8-inch slices. Brush with a mixture of the melted butter and oil. Bake at 425°, basting frequently with butter and oil mixture until tender and golden brown on both sides, about 15 to 20 minutes. ***************************************************************************** Hamburger Pie 1 pound extra lean ground beef 1 (6-ounce) box seasoned croutons, divided 1 (4-ounce) can tomato sauce 1/4 teaspoon chili powder 1 tablespoon dried minced onion 1/2 teaspoon salt 2 eggs, beaten and divided 1 cup mushrooms, sliced 1 green bell pepper, seeded, deveined and chopped 1 cup Cheddar cheese, grated 1 tomato, sliced In a large bowl, combine beef, 1 cup seasoned croutons, tomato sauce, chili powder, onion, salt and 1 egg. Mix well and press into sides and bottom of a 9 -inch pie pan. In a separate bowl, combine remaining croutons, egg, mushrooms, green pepper and cheese. Mix well and layer on top of beef crust. Arrange tomato slices over pie. Bake at 375 degrees for 40 minutes. ************************************************************************************** Grilled Slow Cooker Ribs 3 1/2 pounds pork loin back ribs 1/4 cup packed brown sugar 1 teaspoon salt 1/2 teaspoon pepper 3 tablespoons liquid smoke 2 cloves garlic, finely chopped 1 medium onion, sliced 1/2 cup cola 1 1/2 cups barbecue sauce Spray inside of 4 to 5 quart slow cooker with cooking spray. Remove inner skin from ribs. Mix brown sugar, salt, pepper, liquid smoke and garlic; rub mixture into ribs. Cut ribs into 4 inch pieces. Layer ribs and onion in slow cooker. Pour cola over ribs. Cover and cook on low heat setting 8 to 9 hours or until tender. Remove ribs from slow cooker. Drain and discard liquid. Heat coals or gas grill. Place ribs on grill. Brush with barbecue sauce. Cover and grill 4 to 6 inches from medium heat 15 minutes. ******************************************************************************************** Goulash 1 1/2 pounds ground beef 1 diced medium onion 27 ounce can sliced stewed tomatoes cut up with juice 1/2 diced green pepper 4 ounce can mushroom stem and pieces drained 1/4 teaspoon garlic powder 1 teaspoon salt 2 tablespoons sugar 1/2 teaspoon basil 1 1/2 cups elbow macaroni Make vegetables 1st in large stew pan. cut up tomatoes with juice, green pepper, celery, cheese, mushrooms, garlic powder, salt, sugar and basil. Brown ground beef in a large skillet without shortening, as meat will make it's own juice. Add onions and cook little longer; salt and pepper lightly. Cook macaroni in salted water with 1 tablespoon oil. Cook only 5-6 minutes. Don't overcook, as it will get mushy. Because later it will be baked for 1 hour. Drain into sieve. Mix all ingredients in a large stew pan and mix well. Put into greased casserole and bake covered at 325 degrees for 45 minutes. Remove cover and bake 15 minutes more. ******************************************************************************** Creamed Spinach 2 cups chopped, cooked spinach 2 teaspoons finely minced onion 1 teaspoon salt dash nutmeg 1 cup heavy cream 1 tablespoon butter 1 hard-cooked egg, sliced, optional Heat spinach in saucepan; add onion, salt, nutmeg, cream, and butter. Mix well and heat through. Spoon onto serving dish and top with hard-cooked egg slices, if using. Creamed spinach recipe serves 4. ******************************************************************************** Broccoli 'n Swiss Soup 1 c. chopped ham 1 c. water 10 oz. pkg. frozen chopped broccoli 2 c. milk 3 Tbsp. flour 2 c. (8 oz.) natural Swiss cheese, cubed 1/2 t. salt Dash of pepper Boil ham in water for 10 minutes; add broccoli. Cook until tender. Gradually add milk to flour, stirring until well blended. Gradually add milk mixture to ham mixture, stirring constantly until mxiture slightly thickens. Simmer 5 minutes, stirring occasionally. Add cheese and seasoning.
