New Year's Eve Appetizer
Shrimp Imperial
1 3/4 lb. large raw shrimp
2 T. butter
1 T. olive oil
1 T. finely minced garlic
2 T. finely minced shallots
salt and pepper to taste
2 T. lemon juice, or more to taste
2 T. freshly fine chopped dill
Peel & devein the shrimp. Melt butter & oil, add garlic & shallots & saute 2 minutes without browning. Add shrimp, increase heat slightly & cook 3 minutes. Add salt & pepper, toss well. Scrape contents of pan into a bowl, add juice & dill, blend well. Cover and chill 3 or 4 hours. Serves 6-10.
(By the way, I am making these for dinner tonight with Wild Rice, Brocolli, Cauliflower, Baby Carrots & a few Fresh Cherries scattered on the side). Yummmmmm:)

New Year's Sunrise
4 oz. seltzer
6 oz. orange juice
1/2 oz. grenadine syrup
1 orange slice
1 lemon slice
1 maraschino cherry
Plastic toothpick
In a tall glass, mix the seltzer and orange juice. Slowly pour the grenadine into the center of the glass, allowing the syrup to settle on the bottom (thanks to its greater density). Garnish with the orange, lemon and cherry, stacked and skewered with the toothpick.

Raspberry vinegar
Lightly crush 1 cup fresh raspberries & place in a sterilized pint jar. Heat 2 cups of white or wine vinegar to just below the boiling point. Fill the jar with vinegar & cap tightly. Allow to stand for 2 to 3 weeks. Strain the vinegar, discarding fruit. Pour the vinegar into a clean, sterilized jar. Seal tightly. Use in mixed green salads, fruit salads or marinades for chicken.
