Go Chicken Caesar Salad Recipe: Dressing Ingredients ------------------------------ - 1/3 cup Sour Cream - 3 tablespoons freshly grated Parmesan cheese - 1 tablespoon lemon juice - 1 teaspoon finely chopped fresh garlic - 1 teaspoon anchovy paste - 1/8 teaspoon coarse ground pepper Salad Ingredients ------------------------------ - 1 small head Romaine lettuce; washed &; torn - 1/2 cup red onion; cut into 2-inch strips - 1 cup Caesar-seasoned croutons - 1 cup diced, cooked chicken Combine sour cream, 1 tablespoon cheese, lemon juice, garlic, anchovy paste and pepper in small bowl; mix well. Cover; refrigerate at least 1 hour. Combine lettuce and onion in large bowl. Add dressing; toss to coat. Add remaining cheese, croutons and chicken; toss lightly.
