Go Also, here is today's Salmon Quiche Recipe: 2 Tbs (30 ml) butter 1 shallot, finely chopped 1 lb (450 g) canned boneless salmon 3 Tbs (45 ml) chopped fresh dill Salt & pepper to taste 1 9-inch (23 cm) pie shell 4 eggs, lightly beaten 1 1/4 cup (310 ml) heavy cream Melt the butter in a skillet over moderate heat & saute the shallot until tender but not brown, about 5 minutes. Add the salmon, dill, salt, & pepper & transfer to the pie shell. Combine the eggs & cream & pour over the salmon mixture. Bake in a preheated 375F (190C) oven for 35-40 minutes, until a toothpick inserted in the center comes out clean. Serves 4-6. * Read today's newsletter?
