Chocolate Cream Cheese Fudge

I have to confess that I'm not a big lover of fudge. Traditional recipes call for lengthy, laborious cooking and stirring, and the results are usually grainy and way too sweet for my taste. Here is a recipe that solves all those problems.

Chocolate Cream Cheese Fudge
6 oz (170 g) semisweet chocolate chips
6 oz (170 g) cream cheese at room temperature
2 Tbs (30 ml) milk or cream
4 cups (1 L) sifted powdered (confectioner's) sugar
1 tsp (5 ml) vanilla extract
1/4 tsp (1 ml) salt
1 cup (250 ml) coarsely chopped walnuts, peanuts, or pecans (optional)

Melt the chocolate chips in a saucepan set over simmering water. Meanwhile, beat the cream cheese and milk in an electric mixer until smooth. Beat in the sugar 1/2 cup (125 ml) at a time until smooth. Blend in the melted chocolate, vanilla, salt, and optional nuts. Press into a well buttered 8- or 9-inch (20 or 23 cm) square baking pan and refrigerate overnight or until firm. Cut into 1-inch (2.5 cm) squares before removing from the pan. Makes about 64 squares.

Sweet Potato Pie

"Caj's Canadian Connection, Rhonda, Ottawa, Ontario, sent an interesting Dessert Psychology Test, that's worth sharing.

"Rhonda writes, 'If you were making a dessert and you had your choice, which would you choose?
*Angel food
*Brownies'

"There are eight desserts listed in Rhonda's email, but da ol' mon will only use two this time, and save the rest for later.

"She continues, 'Okay, now that you've made your choice, this is what research says about you!

'*Angel food: Sweet, loving, cuddly. You love all warm and fuzzy items.  Little nutty at times. Sometimes you need an ice cream cone at the end of the day. Others perceive you as being childlike and immature at times.

'*Brownies: You are adventurous, love new ideas, are a champion of underdogs and a slayer of dragons. When tempers flare up, you whip out your saber. "How much is true?  Good question.  But the real question is, If your favorite dessert is Sweet Potato Pie, what does that say about you.  Hmmm.......  Ol' mon Caj isn't going to touch that with a 10-foot pole.  Nope, no way.  There is, however, one thing that needs to be said, Enjoy this Soul Food-Southern Recipe, it's the greatest," Caj.

Sweet Potato Pie (RW's)
BEAT well in mixer:
2 cups mashed potatoes, hot
1 stick oleo
2 eggs
1 1/2 cups sugar

ADD:
1/2 cup evaporated milk
1 cup sweet milk
1 teaspoon nutmeg
1 teaspoon vanilla
1 teaspoon salt

PUT crust in oven 5 to 8 minutes; POUR in filling. BAKE at 375?°F for 35 to 40 minutes.

Well, there you have it.  BON APPETIT!

The "Indian" in the name of this dish refers to the corn rather than the inventors of the dish. In 17th century English, the word "corn" was used to describe any grain, and "Indian corn" was used to differentiate this New World crop from other grains. In England they soon began to refer to it as maize, a term they borrowed from the Spanish "maiz" (with an accent over the "i"), but the colonists persisted in calling it "Indian corn." Eventually the "Indian" part was dropped and we Americans now refer to simply as "corn." The corns grown by the early colonists were primarily red and brown in color (the yellow and white varieties were developed later), and this dessert was notorious for its rich, blood red color.

Indian Pudding
5 cups (1.25 L) milk
1/3 cup (80 ml) cornmeal
3/4 cup (180 ml) molasses
4 Tbs (60 ml) butter
3 Tbs (45 ml) sugar
1 tsp (5 ml) ground ginger
1/2 tsp (2 ml) ground cinnamon
1/2 tsp (2 ml) salt
1/2 cup (125 ml) raisins (optional)

Combine 4 cups (1 L) of the milk and the cornmeal in a pot set over another pot full of simmering water. Bring to a simmer and cook for 15 minutes, stirring frequently. Stir in the remaining ingredients and pour into a greased baking dish that is deeper than it is wide. Bake in a preheated 300F (150C) for 1 hour. Pour the remaining 1 cup (250 ml) milk over the pudding without stirring and bake an additional 2 hours. Serve hot or warm with cream or ice cream if desired. Serves 6 to 8.

Ambrosia
3 sliced oranges
1/2 cup sugar
1 1/2 cups grated coconut
1 cup pineapple
1 cup cherries

ARRANGE in layers and top with coconut.
