Fourth of July

Fourth of July is American Independence Day and Americans celebrate this day with great patriotism. There once was a time in America when the year was marked by two eagerly awaited high festivals -- Christmas and Independence Day. Asked to pick which was best, even children might have chosen the Fourth. From country to city it was a day of fluttering flags, passionate emotions, and bombastic pleasures commemorating a freedom so recently won it was not yet taken for granted.

Today, this day is celebrated in a grand fashion all over the country by decorating in red, white and blue and in stars and stripes, displaying the national flag proudly, parades and events, firecrackers, boating trips and much more. But the underlying spirit remains unaltered - Patriotism!

Red, White and Blue Salad

Ingredients:

2 c. peeled apples
1/2 c. blueberries, unsweetened
1/2 c. strawberries, unsweetened
1/2 c. grapes

Directions:

Combine all fruit in bowl. Toss lightly and serve.

Yields 7 (1/2 cup) servings


Baked Clams

Ingredients:

2 doz. clams
4 tbsp. olive oil
2 cloves garlic, minced
1 med. onion, chopped
1 tbsp. bread crumbs
1 tsp. parsley or chives
1/4 tsp. oregano
Salt & pepper
Grated Parmesan cheese
Lemon juice

Method:

Scrub clams with stiff brush under cold water until all grit is removed. Saut?© onion and garlic until golden. Remove clams from shell (steam open). Chop up clams very fine, mix with bread crumbs, parsley, salt, pepper and oregano. Fill shells. Sprinkle with cheese and lemon juice. Dot with butter and place under hot broiler about 5 minutes.


Cucumber in Sour Cream

Thinly slice 1 large cucumber; sprinkle with 1 teaspoon salt. Let stand 30 minutes. Then drain off the accumulated water.

Combine:

1/2 c. sour cream
1 tbsp. vinegar
1 to 2 drops Tabasco
2 tbsp. chopped chives
1 tbsp. dried chopped onions
Dash of pepper

Pour over cucumbers and refrigerate 30 minutes.


Fourth of July Safety Tips

Fourth of July means picnics, fun and fireworks. Unfortunately, fireworks are responsible for nearly 4,000 cases involving children needing treatment at the emergency department of local hospitals each year. Here are a few tips to help you and your children stay safe during this holiday:

1) Observe local laws.
2) Use good common sense and always read and follow the directions on fireworks.
3) Never point or throw fireworks at another person.
4) Use a punk to ignite the fireworks. Punks burn without an open flame; open flame lighters and matches can cause additional fire hazards.
5) Use only State Fire Marshal approved fireworks.
