Maggie's World...

Good morning to all. I hope your weekend was
enjoyable. Yesterday??™s theme issue was a big
success. Some of you wrote to say how much
you enjoyed it. There were some keepers in
the issue and I was pleased to offer them here.

In today??™s issue we have some Thanksgiving
humor, touch base on the theme which is to
end on Friday, pass along some jokes you??™ll
be anxious to try on friends, and share a few
recipes that I know you will want to try. I do
hope you enjoy reading it as much as I have
in getting it all together for you.

My kids are out of school for the week and my
work schedule will be a tough one all week. I??™ll
only have ONE day off during the next ten
days. Most of those days I will work 12-hour
shifts, too. To do it all justice, I may not be
able to post an issue every day. I hope to,
but wanted to let you know in advance of the
possibility of not receiving an issue here daily.
Issues may not be available immediately on the
web site either (also time I may not have).

I hope you have a great day (well, as good
as you can HAVE on a Monday, lol). With any
luck, you??™ll find me here tomorrow. If not, I
look forward to the NEXT time.



Ramblings...

???Twas the night of Thanksgiving, but I just couldn??™t sleep.
I tried counting backwards, I tried counting sheep.
The leftovers beckoned ??“ dark meat and white.
But I fought the temptation with all of my might.
Tossing and turning with anticipation,
The thought of a snack became infatuation.
So I raced to the kitchen, flung open the door,
And gazed in the fridge full of goodies galore.
I gobbled up turkey and buttered potatoes,
Pickles and carrots, beans and tomatoes.
I felt myself swelling so plump and so round,
???Till all of a sudden, I rose off the ground.
I crashed through the ceiling, floating into the sky,
With a mouthful of pudding and a handful of pie.
But I managed to yell as I soared past the trees...

"Happy eating to all, pass the cranberries, please.
May your stuffing be tasty, may your turkey be plump.
May your potatoes and gravy have nary a lump.
May your yams be delicious, may your pies take the prize.
May your Thanksgiving dinner stay off of your thighs!"

FIRESIDE COFFEE
Makes 80 servings...good for maybe FOUR gifts?

2 cups powdered non-dairy creamer
1 1/2 cups instant hot chocolate mix
1 1/2 cups instant coffee granules
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Directions
1 Sift together creamer, hot chocolate mix, instant coffee, cinnamon and nutmeg. Pour into jars and seal with a lid.
2 To prepare: Stir 3 teaspoons of mixture into 1 cup of hot water. Adjust to taste.**

**You would include a card with each gift stating the instructions in step 2.

CAN-OPENER CHILI

Ingredients
2 cans stewed tomatoes (chopped)
2 cans pork-n-beans (discard fat pieces)
2 cans black beans
2 cans kidney beans
1 medium onion
3/4 cup thick BBQ sauce
2 tbsp. yellow mustard
2 tbsp. Mrs. Dash
2 tbsp. chili powder
2 tbsp. ground cumin
3 cloves of garlic

Directions
Combine all of the ingredients in a large crock-pot in the morning, stir and let simmer on low heat all day. This recipe can also be cooked on the stove for 20 minutes or until heated.



STEAK AND ONIONS

2 1/2 pounds round steak
1 10 oz can cream of mushroom soup
2 onions, sliced
1/3 cup water

Brown meat on both sides in skillet. Drain off fat. Mix together the soup, water and onions and pour over steak. Simmer covered for 1 1/2 hours.



CRANBERRY CONSOMM?‰

2 cans (10 ounces each) consomm?©
4 cups cranberry cocktail
2 lemon slices
6 whole cloves
1 large cinnamon stick

In a large saucepan, combine consomm?©, cranberry cocktail, lemon slices, clove and cinnamon stick. Bring to boil; simmer, covered, 15 minutes. Discard lemon slices, cloves and cinnamon stick. Serve at once.

BAVARIAN POTATO SOUP
Serves 10

1 pound Bacon, diced
4 medium Carrots, diced
4 Celery, diced
1 Leek, sliced
4 medium Onions, diced
12 New potatoes, diced
2 bunches Parsley, chopped
1 teaspoon Marjoram, chopped
6 quarts Beef stock
1 cup All-purpose flour
Salt and black pepper To taste
Garlic To taste
Nutmeg To taste
Parsley For garnish

METHOD OF PREPARATION
Render bacon in a stock pot. Add vegetables, potatoes and herbs. Saut?© until transparent.

Cover ingredients with flour. Add stock and simmer for 30 to 40 minutes.

Season to taste. Garnish with parsley and serve with fresh baked bread.



BLUE CHEESE DRESSING
Makes 2 cups

4 ounces blue cheese
1 package (3 oz.) cream cheese, softened
2 cups mayonnaise
1 clove garlic, minced
1/4 teaspoon pepper
1/4 to 1/3 cup milk

Place blue cheese in medium mixing bowl. Crumble with fork. Blend in cream cheese. Add mayonnaise, garlic and pepper. Mix well. Blend in enough milk to make desired consistency. Cover and store in refrigerator. Stir before serving.

Heart Healthy...


CHOCOLATE CUPCAKES WITH CREAM CHEESE FROSTING

An Atkins Diet Low Carb Recipe

Ingredients for Cupcakes:
2 cups almond flour
1 cup Splenda?®
6 tablespoon butter
1/8 teaspoon cream of tartar
1 teaspoon vanilla extract
5 eggs, separated
2 teaspoons baking powder
5 tablespoons cocoa

Preheat oven to 325?°F.
Whip egg whites with cream of tartar until stiff. In separate bowl, using electric mixer, cream butter with egg yolks until light yellow and fluffy. All vanilla and Splenda?®, beat until mixed. Add about 1/3 of whipped egg whites to the butter/egg yolk mixture and mix lightly. Fold the whole thing in to the whipped egg whites and fold lightly. Add 1 cup of almond flour and fold lightly. Add remaining almond flour, baking powder and cocoa and fold thoroughly, being careful not to break down whites. Fill paper muffin cups in muffin tin about half full. Bake at 325?°F about 15 - 20 minutes until cracked on top.

Ingredients for Frosting:
1 pkg Jello?® Sugar Free Vanilla pudding*
1 8 oz. container mascarpone or cream cheese
1 cup heavy cream
3 pkts Splenda?®
Half 'n Half (to thin to make spreadable if needed)

Whip mascarpone or cream cheese in food processor or with electric mixer until smooth. Add cream and mix again briefly. Add pudding mix and Splenda?® and mix well. Add Half 'n Half in 1/2 teaspoon amounts if needed. Makes enough to frost 32 cupcakes (2 batches) and will store in fridge or can be frozen. This recipe can also be spread in fudge pan, frozen and cut in squares as a treat.
* Chocolate Jello?® pudding can be used for Chocolate Frosting or fudge.

Makes 16 cupcakes. 3 carbs per cupcake unfrosted, 6 carbs frosted.

For Two...

SHRIMP IN GARLIC BUTTER
Prep. time: 10 minutes
Source: Southern Living

Ingredients:
1/4 cup butter
4 garlic cloves, chopped
1 1/4 pounds peeled and deveined, large fresh shrimp
2 tablespoons fresh lemon juice (about 1 lemon)
2 tablespoons chopped fresh chives
1/2 teaspoon salt
1/4 teaspoon pepper
Garnish: fresh chives

Directions:
Melt butter in a large skillet over medium-high heat; add garlic, and cook 1 minute or until browned. Add shrimp, and cook, stirring often, 4 minutes or until shrimp turn pink. Stir in lemon juice and next 3 ingredients. Serve over rice or with crusty bread.
Garnish, if desired.
Yield: 2 servings.
