Hello to everyone. I hope this finds you rested and well. I worked last night, had to get up early with the children, but I can ???chill??? today as I am off.
Yesterday I made the mistake of complaining about the weather. No...it??™s still not winter here, but we got such a rain storm yesterday that it felt like a reprimand for my comments, lol. It rained so hard and the wind blew like crazy, folks. The city was late in making the trash pick-up rounds and my neighborhood??™s trash went everywhere. So, there I went, collecting trash in the torrential rain. Well, I thought the refuse workers would have their hands busy just hunting down trash cans all over the street. I heard them come by later and they were picking up trash that was strew about from other people??™s cans and carrying it off. One would think I was silly to have troubled with mine. I, on the other hand, prefer to think I did them a favor. Besides, being in the rain was actually fun
and reminiscent of the times I would do that as a child. I may be ???over the hill??? but I refuse to stop enjoying all the things that made growing up fun. Well, I think I??™ve grown up, lol.

I hope you will visit and place your comments and suggestions on the topic which is ???what are your feelings on trying to cook and eat healthier???? I thought this was appropriate as we will all be looking for ways to shed some of the pounds gained by all the "holiday cheer". Now, here is the NEW set of rules:
A to Z Recipes continues with its popular Theme Issues. We will share theme recipes and post them on the first Sunday of each month. Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in TWO of your favorite theme recipes in ONE email. If the number of recipes exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.
The rules are as follows:
As a service to your fellow readers, please send only recipes that are in a form that others could easily copy and save for their own use. Recipes that would require a lot of editing or cleaning up or use non-standard measurements should not be submitted. An elderly couple had dinner at another couple's house and, after eating, the wives left the table and went into the kitchen. The two elderly gentlemen were talking, and one says: "Last night we went out to a new restaurant, and it was really great. I would recommend it very highly."
The other man says: "What's the name of the restaurant?"
The first man knits his brow in obvious concentration, and finally says to his companion:
"Aahh, what is the name of that red flower you give to someone you love?"
His friend replies: "A carnation?"
"No, no. The other one," the man says.
His friend offers another suggestion: "The poppy?"
"Nahhhh," growls the man. "You know - the one that is red and has thorns."
His friend says: "Do you mean a rose?"
"Yes! Thank you!" the first man says. He then turns toward the kitchen and yells: "Rose, what's the name of that restaurant we went to last night?"
TOO BAD TO HAVE A TITLE

Far away in the tropical waters of the Caribbean, two prawns were swimming around in the sea - one called Justin and the other called Christian.
The prawns were constantly being harassed and threatened by sharks that patrolled the area. Finally one day Justin said to Christian, "I'm bored and frustrated at being a prawn, I wish I was a shark, then I wouldn't have any worries about being eaten..."
As Justin had his mind firmly on becoming a predator, a mysterious cod appears and says, "Your wish is granted", and lo and behold, Justin turned into a shark.
Horrified, Christian immediately swam away, afraid of being eaten by his old mate.
Time went on (as it invariably does...) and Justin found himself becoming bored and lonely as a shark. All his old mates simply swam away whenever he came close to them. Justin didn't realize that his new menacing appearance was the cause of his sad plight.
While out swimming alone one day he sees the mysterious cod again and can't believe his luck. Justin figured that the fish could change him back into a prawn. He begs the cod to change him back and lo and behold, he is turned back into a prawn.
With tears of joy in his tiny little eyes, Justin swam back to his friends and bought them all a cocktail.
Looking around the gathering at the reef, he searched for his old pal. "Where's Christian?" he asked.
"He's at home, distraught that his best friend changed sides to the enemy and became a shark", came the reply.
Eager to put things right again and end the mutual pain and torture, he set off to Christian's house. As he opened the coral gate the memories came flooding back. He banged on the door and shouted,
"It's me, Justin,your old friend, come out and see me again."
Christian replied "No way man, you'll eat me. You're a shark, the enemy and I'll not be tricked."
Justin cried back "No, I'm not. That was the old me. I've changed."
Christian asked warily, "What do you mean changed?"
"I've found Cod. I'm a prawn again Christian"

SWEET AND SOUR SHRIMP

Canola oil to cook
2 minced shallots
1 tablespoon minced ginger
2 minced Thai bird chiles
1 cup fresh orange juice
1 lemon, juiced
2 limes, juiced
1 tablespoon sugar
1 tablespoon clear soy sauce (Kikkoman PK-58)
Salt and black pepper, to taste
20 to 24 large shrimp (U-10's or bigger), peeled, deveined, tail on
2 cups all-purpose flour, in a shallow dish
1 tablespoon chiles powder (ancho, chipotle)
6 eggs, beaten, in a shallow dish
Salt and white pepper, to taste
2 cups mixed greens for plating
In a saucepan coated lightly with oil on medium heat, saute shallots, ginger and chiles until soft, about 3 minutes. Deglaze with juices, sugar and soy sauce. Check for seasoning. Reduce by 50 percent until a syrup consistency is achieved. Meanwhile, season the shrimp with salt and pepper. Mix flour with chile. Dredge shrimp in chile-flour,
then egg, and fry at 350 degrees F until golden brown, about 3 to 4 minutes. Drain on paper towels. Serve sauce in a ramekin, surrounded by the shrimp on a bed of greens.
CREAM CHEESE BROWNIE PIE

Ingredients:
1 refrigerated pie crust, softened as directed on package
1 8-oz pkg. cream cheese, softened
3 Tbsp. sugar
1 tsp. vanilla
3 eggs
1 pkg. brownie mix (with fudge packet)
1/4 cup oil
2 Tbsp. water
1/2 cup chopped pecans
Directions:
Heat oven to 350F. Prepare pie crust as direct on package for one-crust filled pie using 9-inch pie pan.
In medium bowl, combine cream cheese, sugar, vanilla and 1 of the eggs; beat until smooth. Set aside.
Reserve fudge packet from brownie mix for topping. In large bowl, combine brownie mix, oil, 1 Tbsp. of the water and remaining 2 eggs; beat 50 strokes with spoon (or 1 minutes with mixer).
Spread 1/2 cup brownie mixture in bottom of crust-lined pan. Spoon and carefully spread cream cheese mixture over brownie layer. To with remaining brownie mixture; spread evenly. Sprinkle with pecans.
Bake at 350F for 40 to 50 minutes or until center is puffed and crust is golden brown. If necessary, cover edge of crust with strips of foil after 15 to 20 minutes of baking to prevent excessive browning. (Pie may have cracks on surface.)
Place fudge from packet in small microwave-save bowl. Microwave on HIGH for 30 seconds. Stir in remaining Tbsp. water. Drizzle fudge over top of pie. Cool 3 hours or until completely cooled. Store in refrigerator.
Makes 8 servings.
BOURSIN CHEESE

1/2 tsp dried chervil
1 tsp. dried chives
1/8 tsp. salt
2 tsp. dried parsley
1/2 tsp. garlic powder
8 oz. cream cheese, softened
Pound herbs to a fine powder and mix with cream cheese. Serve with stone ground wheat wafers. Exactly like the French herbed cheese in the deli case. Great on burgers also.
SPICY CORN BAKE

INGREDIENTS:
1/4 lb. Bacon, chopped into 1/2-inch pieces
1/3 C. Onion, diced
1/3 C. Celery, diced
1/3 C. Green Bell Pepper, diced
1 stick, Butter (1/4 lb.), plus 2 Tbsp. melted, divided
1/4 C. Milk
1 can (13.5 oz. ) Cream Style Corn
1 can (13.5 oz. ) Whole Kernel Corn
2 Tbsp. Jalapenos, chopped fine
2 Tbsp. Pimentos, chopped fine
1 tsp. Salt
1 Tbsp. Sugar
2 C. Corn Bread Muffins, Crumbled
DIRECTIONS:
In a large skillet over medium heat, cook bacon until crisp. Add onion, celery and bell pepper and saute 2 minutes over
low heat; set aside. In medium-size pan, melt 1/4 pound butter; add milk, corn, jalapenos, pimentos, salt and sugar;
heat over low heat. Add bacon-vegetable mixture and 1 C. corn bread crumbs to corn mixture. Heat well, stirring frequently. Transfer to an 8-inch-square-by-11/2-inch pan. Moisten remaining corn bread crumbs with remaining margarine and sprinkle on top of corn mixture. Bake at 350 degrees until crumbs are light brown.
Yield: 8 Servings
CHOCOLATE CHIP MARMALADE MUFFINS

2 cups flour
?? cup sugar
3 teaspoons baking powder
?? teaspoon cloves
?? teaspoon salt
4 ounces butter
4 ounces semisweet chocolate chips
2 eggs
?? cup milk
3 ?? ounces (7 tablespoons) orange marmalade
Preheat oven to 350?° F. Grease two muffin pans.
In a bowl, sift flour, sugar, baking powder, cloves and salt. Put butter into flour mixture until it resembles coarse meal. Fold in the chocolate chips.
Beat the eggs. Then beat in milk and marmalade until thoroughly combined. A quality marmalade should be used with good sized pieces of orange rind.
Add the egg mixture to the flour, beating lightly until the wet ingredients are just incorporated with the dry. Do not overmix. (Muffins are best mixed by hand as they should be lightly and rapidly combined. A food processor tends to overbeat the ingredients so the muffins are tough and chewy.)
Fill each muffin cup ?? full. Fill remaining empty cups ?? full with water. Place in center of oven. Bake 20 minutes, or until inserted toothpick comes out dry.
Makes 15 muffins.

Heart Healthy...
DOUBLE-CHOCOLATE CAKE

Vegetable oil spray
CAKE:
1 c. flour
1/2 c. unsweetened cocoa powder
3/4 tsp. Baking soda
1/2 tsp. salt
1/4 tsp. baking powder
1/2 c. sugar
1/2 c. firmly packed golden or light brown sugar
1/2 c. skim milk
2 T. canola oil
2 T. unsweetened applesauce
1 tsp. vanilla extract
Whites of 2 large eggs
1/2 tsp. cream of tartar
CHOCOLATE GLAZE:
2-1/2 c. sifted confectioners??™ sugar
2 to 4 T. coffee
1/4 c. unsweetened cocoa powder
1/4 c. skim milk
1/4 tsp. vanilla extract
WHITE GLAZE:
2/3 c. confectioners??™ sugar
1 T. skim milk
Preheat oven to 350-F. Spray an 8-in or 9-in. heart shaped or round baking pan with vegetable oil spray. Set aside. FOR CAKE: In a medium, combine the first 5 ingredients. In a large bowl, whish together sugars, 1/2 c. milk, oil and
applesauce until smooth. Gradually whisk in flour mixture, blending well. Stir in vanilla. In a mixing bowl, beat egg whites and cream of tartar until stiff. Using a rubber spatula, gently fold egg whites into batter until completely
incorporated (no whites should be visible). Pour batter into pan. Bake for 30-35 minutes, or until a toothpick inserted near the center comes out clean. Set cooling rack on a large piece of wax paper (to catch drips form glaze).
Let cake cool in pan on cooling rack for 20 minutes. Invert cake into rack, remove pan, and allow cake to finish cooling.
FOR CHOCOLATE GLAZE: In a medium bowl, whisk together ingredients. When cake is completely cool, spread glaze over cake, allowing glaze to run down sides.
FOR WHITE GLAZE: in a small bowl whisk together ingredients. Pour glaze into a small resealable plastic bag. Snip a corner (tiny) from one corner of the bag to form tiny hole. Squeeze glaze in thin parallel lines about 1-/2 to 1-inch apart horizontally across top of cake. At 1/2 to 1-inch intervals, pull vertically over top of cake with a sharp knife or toothpick, drawing through lines of white glaze and across the chocolate creating a feathered pattern. When glaze has dried, transfer to serving platter.
TIP: After spreading the chocolate glaze over the cake, you can use a thin, sharp object to lightly mark where to draw the lines of white glaze. If you make a mistake, smooth that part of the glaze and try again. Don??™t worry if
the lines aren??™t perfectly straight.

For Two...
RAZZLE DAZZLE SHRIMP SALAD

To cook shrimp, drop cleaned shrimp into salted boiling water for 2 minutes, then drain in a colander. Proceed with the recipe.
3 cups tender lettuce leaves (washed and patted dry), torn into 1-inch pieces
3/4 pound medium-sized shrimp, cooked
1/2 pound green beans, blanched and cut into 1-inch lengths
1 cup seeded and diced (1/2-inch) ripe tomatoes
1/4 cup pitted black olives, halved crosswise
1 small yellow squash or zucchini, quartered lengthwise, seeded and cut into 1/2-inch pieces
2 tablespoons chopped flat-leaf parsley
Salt and freshly ground black pepper, to taste
1/4 cup of your favorite vinaigrette dressing
1 hard-cooked egg, quartered, for garnish
1. Place the lettuce in a large bowl.
2. Add the shrimp, green beans, tomatoes, olives, squash and parsley.
3. Shortly before serving, season with salt and pepper, then drizzle the salad lightly with the vinaigrette. Divide equally between 2 dinner plates and place 2 egg quarters on each salad.
Serves 2. Per serving: 460 calories, 22g carbohydrate, 44g protein, 22g fat, 465mg cholesterol.
