Hello all. Today marks one month from Valentine??™s Day and is you??™d-better-get-busy-for-that-special-someone day. Like most, I usually wait until the last minute for such things. But, since Valentine??™s Day is just about my all-time favorite ???holiday???, I am starting early. I ordered items for Valentine??™s Day on the 6th. After I got home yesterday the package was delivered by FedEx. Some gifts for my grandchildren are next and the businesses I will utilize to get their gifts here on time are some I've used and trust. So many offer free shipping and all provide timely delivery. As a matter of fact, they are some I have shared with you here on A to Z Recipes. Whether it is flowers (my choice is usually either Florist.com or Flowermall.com), jewelry (great selection at Ross Simons and Palm Beach Jewelry), perfume (great places are Perfumania.com or Strawberrynet.com) or just about any thing else at Amazon.com or eBay, you are going to be very pleased that you got it all done early.

In today's issue there are some great recipes which I am sure you will want to save. We look into Valentine's Day suggestions and humor. I believe the issue will make you happy you dropped by.

Did You Know?...

Bake a Heart-shaped Cake Without Any Special Pans!

You can bake a heart-shaped cake without any special pans. Just make a cake recipe for a double-layered cake. Bake one layer in an 8-inch round cake pan and the other layer in an 8-inch square cake pan. After the cake is cool, cut the round layer into half-circles. On a large serving platter or cookie sheet, place the two half-circles along two adjoining edges of the square layer. Surprise ??” a heart-shaped cake! Covered in frosting, your loved one won't even realize the secret. (I mean when the cake's covered in frosting, not your sweetie, although that may be fun, too.)

Recipes For Romance

With Valentine's Day just around the corner, share with us those recipes you consider when preparing that special meal for your sweetheart. Is there a special beef or seafood dish he/she enjoys? How about that aphrodisiac to all...chocolate? Share your favorite recipes for romance with us, won't you? Now, here is the NEW set of rules:

A to Z Recipes continues with its popular Theme Issues. We will share theme recipes and post them on the first Sunday of each month. Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in TWO of your favorite theme recipes in ONE email. If the number of recipes exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.

The rules are as follows:

As a service to your fellow readers, please send only recipes that are in a form that others could easily copy and save for their own use. Recipes that would require a lot of editing or cleaning up or use non-standard measurements should not be submitted. Recipes without a name and location of sender may NOT be posted or posted without any credit given. There will be NO recipes posted that are from other recipe-zines. A to Z Recipes protects the privacy of its readers and does NOT publish email addresses. There will be no exceptions.

The deadline for February's theme issue is Friday, January 30th.

VW vs. Rolls

A man from Texas, driving a Volkswagen Beetle, pulls up next to a guy in a Rolls Royce at a stop sign.

Their windows are open and he yells at the guy in the Rolls, "Hey, you got a telephone in that Rolls?"

The guy in the Rolls says, "Yes, of course I do."

"I got one too... see?" the Texan says.

"Uh, huh, yes, that's very nice."

"You got a fax machine?" asks the Texan.

"Why, actually, yes, I do."

"I do too! See? It's right here!" brags the Texan.

The light is just about to turn green and the guy in the Volkswagen says! ,"So, do you have a double bed in back there?"

The guy in the Rolls replies, "NO! Do you?"

"Yep, got my double bed right in back here," the Texan replies. The light turns and the man in the Volkswagen takes off.

Well, the guy in the Rolls is not about to be one-upped, so he immediately goes to a customizing shop and orders them to put a double bed in back of his car.

About two weeks later, the job is finally done. He picks up his car and drives all over town looking for the Volkswagen beetle with the Texas plates. Finally, he finds it parked alongside the road, so he pulls his Rolls up next to it.

The windows on the Volkswagen are all fogged up and he feels somewhat awkward about it, but he gets out of his newly modified Rolls and taps on the foggy window of the Volkswagen.

The man in the Volkswagen finally opens the window a crack and peeks out.

The guy with the Rolls says, "Hey, remember me?"

"Yeah, yeah, I remember you," replies the Texan, "What's up?"

"Check this out... I got a double bed installed in my Rolls."

The Texan exclaims, "YOU GOT ME OUT OF THE SHOWER TO TELL ME THAT?!"

SOUR CREAM APPLE PIE

I can not tell you how many of these pies I have made throughout my baking years. My family begs me to make this pie every chance they get.

1-9 inch pie shell (Deep Dish)
2 tablespoons flour
1/8 teaspoon salt
3/4 cup sugar
1 unbeaten egg
1 cup dairy sour cream
1 teaspoon vanilla
1/4 teaspoon nutmeg
2 cups diced apples

1. Prepare pie shell or use frozen pie shell. Preheat oven to 400 degrees.

2. For filling, sift together flour, salt and sugar into a bowl.

3. Add unbeaten egg, sour cream, vanilla and nutmeg. Beat to smooth thin batter.

4. Blend in diced apples and pour into pie shell, bake at 400 degrees for 15 minutes then at 350 degrees for 30 minutes. Remove from oven.

Topping:

1/3 cup sugar
1/3 cup flour
1/4 cup butter
1 teaspoon cinnamon

For topping, mix sugar, flour, cinnamon and butter together. Sprinkle over pie, brown for 10 minutes in 400 degree oven. Enjoy!



GARLIC CHICKEN WINGS

A good friend that lives in Canada sent me this and all I can say is you better make lots and lots!!!

1/2 cup soy sauce
1 cup white sugar
1 1/2 teaspoons garlic powder
2 or 3 pounds chicken wings

Mix all but wings. Put wings in a oven proof pan. Pour mixture over and bake 350 degrees for about 1 hour or until tender.



CARAMEL CORN

3/4 cup granulated sugar
1/4 cup brown sugar
1/2 cup (1 stick) butter
1/2 cup corn syrup
1/2 cup water
1/2 teaspoon salt
1/2 teaspoon vanilla
1 1/3 bags plain or natural-flavored microwave popcorn
1/2 cup roasted almonds

1. Combine sugar, butter, corn syrup, water and salt in a large saucepan over medium heat. You're going to bring the candy to 265-275 degrees, or what is known as the hard ball stage. For this it's best to use a candy thermometer. If you don't have one, don't worry. Drip the candy into a small glass of cold water. If the candy forms a very hard, yet slightly pliable ball, bingo, you're there. Watch your mixture closely so that it doesn't boil over.

2. While candy cooks, pop both bags of popcorn and spread about 2 quarts or 1 1/3 bags of popcorn on one large or two small cookie sheets. Put the popcorn in your oven set on its lowest temperature. This will keep the popcorn hot so that the candy will coat better.

3. When your candy has reached the hard ball stage, add the vanilla.

4. Pull the popcorn from the oven and, working quickly, pour the candy over the popcorn in thin streams. Mix the popcorn so that each kernel is coated with candy, put the popcorn back into the oven for five more minutes, then stir once again. This will help to coat each kernel. You can repeat this step once more if necessary to get all of the popcorn coated. Pour popcorn onto a large sheet of wax paper to cool. Spread the popcorn out, but be careful...it's hot.

5. When popcorn is cool, break it up and immediately put it into a tightly sealed container.

Makes about 4 quarts.



BRAISED ROUND STEAK WITH WILD MUSHROOMS
(This variation of Swiss Steak is great served over noodles or rice)

1 ?? tablespoons olive oil
?? pound mushrooms*, sliced
2 shallots, diced
1 ?? tablespoons olive oil
?? cup flour
salt and pepper
1 ?? pounds round steak, cut into large pieces
1 cup beef broth
?? cup red wine (optional)

*portabella, shiitake, porcini, etc.

Heat the oil in a heavy skillet. Add the mushrooms and shallots. Cook until just soft. Set aside. Preheat the oven to 325?° F. Heat the rest of the oil in a heavy Dutch oven (with a lid). Season the flour with salt and pepper. Dredge the meat in the flour. Brown well on both sides. Add the broth and wine. Top with the cooked mushrooms and shallots. Cover and bake until very tender, about 1 ?? hours.

Serves 4



HAZELNUT PILAF

(Compliments of Hazelnut Marketing Board, Tigard, OR)

3/4 cup uncooked rice
1/2 cup coarsely chopped, roasted hazelnuts
3/4 cup grated Cheddar cheese
1/2 onion, diced
1 can (6-8 ounces) sliced mushrooms, reserve liquid
1 cup chicken broth
1/4 cup soy sauce

Combine rice, hazelnuts, cheese, onion, and drained mushrooms. Place in greased 1 quart casserole dish.

In a sauce pan, mix mushroom liquid, chicken broth, and soy sauce; bring to a boil and pour over rice mixture.

Cover and bake at 350 F. for 30 to 40 minutes. Fluff with fork before serving.

Serves 6 to 8.

Heart Healthy...




PORK TENDERLOIN WITH BLUEBERRY ONION SAUCE

Cooking Time: 20 min

The frozen blueberries paired with balsamic vinegar in this recipe offer a sweet-and-sour flavor that's divine.

Ingredients:
3/4 pound lean pork tenderloin
1 Tbsp margarine
2 small onion(s), sliced
1/2 tsp table salt
1/4 tsp black pepper
1 Tbsp sugar
1/4 cup wine, port
2 Tbsp balsamic vinegar
1 cup unsweetened frozen blueberries
1 cup cherry tomato(es), chopped

Instructions:
Heat broiler. Broil pork, turning occasionally until cooked through, about 20 minutes. Remove to platter; cover with foil to keep warm.

Meanwhile, melt margarine in a large skillet over medium-high heat. Add onions, salt and pepper; cook until onions are golden, about 10 minutes. Add sugar; cook until onions are caramelized, 3 minutes longer. Add port, vinegar, blueberries and tomatoes; heat to boil. Remove from heat. Thinly slice pork and serve with sauce.

For Two...



ASPARAGUS TIPS AND WILD MUSHROOMS IN LEMON BUTTER
Serves 2

Ingredients:

12 asparagus spears
1/4-cup (1/2 stick) butter
1 teaspoon lemon juice
4 small wild mushrooms, thinly sliced

Procedure:

Trim the tips from the asparagus, approximately the top 2 or 3 inches, saving the stalks for another use.

Melt the butter in a heavy skillet over medium heat and add the lemon juice. Add the mushrooms and saut?© until they begin to darken and release their liquid, about 5 minutes.

Add the asparagus tips to the skillet and continue cooking for about 3 minutes, or until the asparagus are just tender. Serve at once.
