Publisher's Desk...

Good morning! I have said here at least a hundred times how much I love my full-time job. And...I do. It is so rewarding every day and a lot safer than it used to be when I worked outdoors (on the street as a patrol officer many moons ago). The rewards are so great I could never list them. Yes, there are a few things about it I do not love but, all in all, what I do makes me very happy. Today is an example of one of those things that does not rack up there with the best...a graveyard to day 8-hour turnaround. And I will work 12 hours. Man, that wipes me out. I am fortunate, though, to have worked on this issue before work yesterday. You will be delighted with what your fellow readers have submitted, too.

I also consider a2z a job and one I love. And there are rewards. And work. A newsletter (any) takes a lot of time. Whether you publish one daily, weekly, monthly, what have you, it makes for a strenuous part-time job. For many publications, there is no charge for the services rendered (and I have the utmost respect for those publishers). For some, you must pay or else. For a very few, like a2z, you are encouraged to pay but reap the same benefits regardless of whether you do or not. What sets a2z apart from all the above is that you get an issue daily that is the size of many monthly publications. PLUS you get a monthly theme issue that is often the size of a cook book. PLUS you get it for a song. Not bad.

So where are all the rewards I said I reaped from this newsletter? Well, I receive heartfelt emails from some expressing gratitude for what I do. You can hardly beat that, my friends. A2z has earned votes on the cumuli.com network that has enabled it to run with the big boys. The votes have been an accurate barometer for support. And the “Honor System” initiated on January 1st? Do you ever wonder how it is going? Well...for those who have taken the time to read this section, you will get a birds-eye view of how things are going. Almost to the penny! I hope you have a great day. If we can make it through this one, tomorrow is Friday and the last hurdle before the weekend. Go for it.

Want to turn this routinely sappy Hallmark holiday into a hot night full of fabulous friends, fun and men? Robin Gorman Newman, author of "How to Meet a Mensch in New York", has several ideas and this is MY favorite :

Throw a "new blood" party :

Invite your friends, and ask them each to invite one member of the opposite sex who they're not dating, haven't dated in the past and aren't interested in dating. This allows you and all of your single friends to mingle with a new crowd that's somewhat familiar. It takes the edge off socializing. You could also introduce a fun game to your soiree. As each guest enters, give all the men bolts in varying sizes and all the women nuts in varying sizes. The idea is for everyone to find their perfect fit by the end of the evening. This is a fun, creative and, yes, incredibly silly way to encourage conversation and new beginnings.

I appreciate (and did you notice?) that it is the women who have the nuts? Who says it's make-believe?

With Valentine's Day just around the corner, share with us those recipes you consider when preparing that special meal for your sweetheart. Is there a special beef or seafood dish he/she enjoys? How about that aphrodisiac to all...chocolate? Share your favorite recipes for romance with us, won't you? Now, here is the NEW set of rules:

A to Z Recipes continues with its popular Theme Issues. We will share theme recipes and post them on the first Sunday of each month. Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in TWO of your favorite theme recipes in ONE email. If the number of recipes exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.

The rules are as follows:

As a service to your fellow readers, please send only recipes that are in a form that others could easily copy and save for their own use. Recipes that would require a lot of editing or cleaning up or use non-standard measurements should not be submitted. Recipes without a name and location of sender may NOT be posted or posted without any credit given. There will be NO recipes posted that are from other recipe-zines. A to Z Recipes protects the privacy of its readers and does NOT publish email addresses. There will be no exceptions.

DIRECTIONS FOR ADAM AND EVE

After a few days, the Lord called to Adam and said, "It is time for you and Eve to begin the process of populating the earth so I want you to kiss her."

Adam answered, "Yes Lord, but what is a kiss?" So the Lord gave a brief description to Adam who took Eve by the hand and took her to a nearby bush. A few minutes later, Adam emerged and said, "Thank you Lord, that was enjoyable."

And the Lord replied, "Yes Adam, I thought you might enjoy that and now I'd like you to caress Eve." And Adam said, “What is a 'caress'?” So the Lord again gave Adam a brief description and Adam went behind the bush with Eve.

Quite a few minutes later, Adam returned, smiling, and said, "Lord, that was even better than the kiss." And the Lord said, "You've done well Adam. And now I want you to make love to Eve." And Adam asked, "What is 'make love' Lord?" So the Lord again gave Adam directions and Adam went again to Eve behind the bush, but this time he reappeared in two seconds.

And Adam said, "Lord, what is a 'headache'?"

"Twenty-six," I replied.

NUTMEG CRUMB CAKE

6 T unsalted butter (3/4 stick)
1 1/4 C all-purpose flour
3/4 C packed light brown sugar
1 t grated nutmeg
1/2 t baking soda
1/2 C buttermilk or plain yogurt
3/4 t vanilla extract
1 large egg yolk

Preheat oven to 375 degrees. Coat an 8" sq. baking pan w/ nonstick cooking spray. Melt butter in saucepan. In a large mixing bowl, combine melted butter, brown sugar, and nutmeg. Stir till mixture looks like coarse bread crumbs. Reserve 1/2 C crumbs. In a small bowl, whisk the baking soda into the buttermilk or yogurt, then whisk in the vanilla and egg yolk. Stir the liquid ingredients into the dry. Spread the batter evenly in the pan, then sprinkle with the reserved 1/2 C of crumbs. Bake about 25 minutes or till cake is golden brown and a toothpick inserted in the center comes out clean.

BABY SWISS STUFFED PORTABELLAS
Serves 4

4 extra large Portabellas
3 tablespoons Olive oil
1/2 cup Onions, minced
1-2 cloves Garlic, minced
1 Red pepper, diced
3 tablespoons Celery, chopped
2 tablespoons Flour
3/4 cup Light cream
1 and 1/2 cups Baby Swiss, shredded

METHOD OF PREPARATION

1. Preheat oven to 350 degrees.

2. Scrape the black underside of the mushrooms (mantle) with a spoon and discard.

3. Trim stems from the mushrooms and chop fine.

4. Heat the oil in a skillet and when hot add the mushroom stems, onion, garlic, pepper and celery. Sauté 2 to 3 minutes, then dust the mixture with flour.

5. Add the cream and cook until thick, stirring often. Remove from heat and add half of the cheese. Mix well. Divide mixture equally in the mushroom caps. Sprinkle with the rest of cheese.

6. Set aside and let cool. Bake for 15 minutes or until lightly browned, serve at once.



CHICKEN BREASTS EN PAPIOTTE

non-fat cooking spray
4 skinless, boneless chicken breasts
3 large tomatoes, sliced in ¾-inch slices
4 green onions, cut into ¾-inch slices
1 cup cremini mushrooms, thickly sliced
1 tablespoon fresh basil, chopped, or 1 teaspoon dried
1 teaspoon fresh thyme, chopped or 1 teaspoon dried
¼ cup dry white wine
lemon pepper to taste
4 rectangles of parchment paper or aluminum foil cut 14" long

Fold each rectangle in half and cut into a tear drop shape so that paper is heart-shaped when open. Spray paper with cooking spray, leaving a 1- to 2-inch dry border. Sprinkle one of the green onions on one side of each paper.

Place ¼ cup mushrooms on the onions and one chicken breast on the mushrooms. Season with lemon pepper and ½ teaspoon thyme. Spoon 1 teaspoon wine over each chicken breast and top with 2 thick slices of tomato and basil.

Sprinkle ¼ teaspoon basil over each set of tomatoes. Fold paper in half over tomatoes and crimp edge and roll upwards, following the shape. Place packages on greased baking sheet and bake in 350° F. oven for approximately 35 to 40 minutes or until chicken is not longer pink when pierced with a knife. Cut a cross through the parchment to allow the heat and aromas to escape.

ICED PUMPKIN BLONDIES

2-1/4 cups all-purpose flour
2-1/2 teaspoons baking powder
2 teaspoons ground cinnamon
1/4 teaspoon salt
1-1/2 cups packed brown sugar
3/4 cup (1-1/2 sticks) butter
1 teaspoon vanilla extract
2 large eggs
1 cup pumpkin

2 (3 ounce) packages cream cheese
2 tablespoons butter, softened
2 cups sifted powdered sugar
1 teaspoon maple flavoring

PREHEAT oven to 350 degrees. Grease 15 x 10-inch jelly-roll pan. COMBINE flour, baking powder, cinnamon and salt in medium bowl. Beat sugar, butter and vanilla extract in large mixer bowl. Add eggs one at a time, beating well after each addition. Beat in pumpkin. Gradually beat in flour mixture. Spread into prepared pan.

BAKE for 20 to 25 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan; spread with Maple Icing. Cut into bars.

Maple Icing:
BEAT 6 ounces softened cream cheese, 2 tablespoons softened butter and 2 cups sifted powdered sugar in small mixer bowl until smooth. Add 1 to 2 teaspoons maple flavoring.



GARLIC PEAS & RICE

1 teaspoon olive oil
2 cups Basmati rice
2 cloves garlic, minced
4 cups water
1 medium onion, chopped
2 cups frozen peas
1 teaspoon curry powder
1 cup diced green pepper

Heat the oil in a large saucepan and add garlic and onion. Saute for 5 minutes and add curry powder, rice and water. Bring to a boil and simmer, covered, for 40 minutes or until rice is tender. Add the peas and pepper and cook 5 minutes more.

Heart Healthy...




BUTTERFLIED EYE ROUND ROAST
Makes 12 servings

Ingredients
1 beef eye round roast (approx. 3 pounds)
1/4 cup EACH red wine vinegar and water
2 Tbsp. olive oil
2 cloves garlic, minced
1 Tbsp. chopped fresh thyme OR 1 tsp. dried thyme leaves
1/2 tsp. crushed red pepper

Directions
Butterfly beef eye round roast by cutting horizontally through the center (parallel to surface of meat), the length and width of roast. DO NOT CUT THROUGH OPPOSITE SIDE OF ROAST. Open meat and lay flat. Combine vinegar, water, oil, garlic, thyme and red pepper. Place beef roast in plastic bag, add vinegar mixture, turning to coat roast. Close bag securely; marinate in refrigerator 6 to 8 hours (or overnight, if desired), turning occasionally. Remove roast from marinade; reserve marinade. Place beef on rack in broiler pan so surface of meat is 5 to 7 inches from heat source. Broil 20 to 25 minutes to desired doneness (rare or medium), turning and basting with reserved marinade occasionally. Tent with foil and allow roast to stand 10 to 15 minutes in warm place before carving. Carve roast into thin slices.

Note: A beef eye round roast will yield four 3-ounce cooked servings per pound.

Nutrition per serving (3 ounces cooked beef): 172 calories; 7 g fat; 53 mg sodium; 59 mg cholesterol.

For Two...



BANANA CAKE

1-3/4 cups cake mix from two layer box
1/2 cup miniature chocolate chips
2/3 cup water
1/2 cup mashed banana
2 Tbsp. oil
1 egg

Mix all ingredients in a medium bowl. Pour into greased 8" square pan and bake 350 degrees 30-40 minutes until toothpick comes out clean.
