As Valentine??™s Day approaches my younger children grow more excited daily. The basis of their excitement is anticipation of the expressions on the faces of their nieces and nephew when the gifts we??™re working on are received. Angela is having a sleep-over for her birthday. She has asked as part of her birthday gift that the girls get to make Valentine??™s Day gifts at our house for their mothers. How sweet, huh? So, we will go to the crafts store soon and select something as a project. Each girl will make, and then wrap, a gift to be given to her mom when February 14th comes around. Such thoughtfulness makes me love my daughter all the more.
I hope this is the beginning of a great week for everyone out there. Here in the US, many are off today in observance of Martin Luther King, Jr. Day. Even if you have to work long hours, be grateful that you have a job. And say a prayer, right now, for all of the a2z??™ers who do not. Please.

Ramblings...
Been Done Wrong?
Has someone done you wrong? It happens to all of us. The thing is, some let go and prosper while others hang on to it indefinitely - and suffer all the more. When we hold a grudge against someone we don't hurt them, we allow them to keep hurting us.
To move on we need to forgive, but not forget!
A favorite saying of mine comes from that venerable fount of wisdom, Gomer Pyle. "Fool me once, shame on you; fool me twice, shame on me." proclaimed Gomer. That's extremely wise.
Forgiving is necessary for us to move on in a healthy and prosperous way, but that doesn't mean we have to make the same mistake with the same person. It doesn't mean giving the house keys to the burglar who got caught robbing you.
Some would say they can't forgive, that they were hurt so deeply that trying to forgive would only dredge up the pain again. They think their stony protective emotional facade is what keeps them from hurting. What they haven't realized is that they've already weathered the pain, what they haven't discovered is life beyond the pain.
Forgive others for your sake, and remember the lessons learned for theirs. Why for their sake? You don't help them by letting them repeat their offenses against you. You help them by forgiving them, but holding them accountable for their past actions.

A bit of serendipity in this one! I, who simply can't throw anything away, found I'd mixed up more sugar-cinnamon topping for cookies than I needed. I used it on my cereal and liked it so well I now mix some especially for that purpose. It's delicious on either hot or cold cereal.

A to Z Recipes continues with its popular Theme Issues. We will share theme recipes and post them on the first Sunday of each month. Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in TWO of your favorite theme recipes in ONE email. If the number of recipes exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.
The rules are as follows:
As a service to your fellow readers, please send only recipes that are in a form that others could easily copy and save for their own use. Recipes that would require a lot of editing or cleaning up or use non-standard measurements should not be submitted. Recipes without a name and location of sender may NOT be posted or posted without any credit given. There will be NO recipes posted that are from other recipe-zines. A to Z Recipes protects the privacy of its readers and does NOT publish email addresses. There will be no exceptions.

Three Texas Women

These three women go down to Mexico one night, get drunk, and wake up in jail only to find out that they are to be executed in the morning, though none of them can remember what they did the night before.
The first one, a brunette, is strapped in the electric chair and is asked if she has any last words. She says, "I am from the Baylor School of Divinity, and I believe in the almighty power of God to intervene on behalf of the innocent."
They throw the switch and nothing happens, so they figure God must not want this woman to die and they let her go.
The second one, a redhead, is strapped in and gives her last words, "I am from the Texas Tech University School of Law and I believe in the power of justice to intervene on the part of the innocent."
They throw the switch and again nothing happens.
They figure that the law is on this woman's side, so they let her go too.
The last one, a blonde, is strapped in and says, "Well, I'm a Texas Aggie Electrical Engineer, and I'll tell you right now you ain't gonna electrocute nobody if you don't connect them two wires!"
Scared Sober!

Two guys left the bar after a long night of drinking, jumped in the car
and started it up.
After a couple of minutes, an old man appeared in the passenger window
and tapped lightly.
The passenger screamed, "Look at the window. There's an old ghost's face there!"
The driver sped up, but the old man's face stayed in the window.
The passenger rolled his window down part way and, scared out of his wits,
said, "What do you want?"
The old man softly replied, "You got any tobacco?"
The passenger handed the old man a cigarette and yelled, "Step on it," to
the driver, rolling up the window in terror.
A few minutes later they calmed down and started laughing again.
The driver said, "I don't know what happened, but don't worry; the
speedometer says we're doing 80 now."
All of a sudden there was a light tapping on the window and the old man
reappeared.
"There he is again," the passenger yelled.
He rolled down the window and shakily said, "Yes?"
"Do you have a light?" the old man quietly asked.
The passenger threw a lighter out the window saying, "Step on it!"
They were driving about 100 miles an hour, trying to forget what they had
just seen and heard, when all of a sudden there came some more tapping.
"Oh my God! He's back!"
The passenger rolled down the window and screamed in stark terror, "WHAT NOW?"
The old man gently replied, "You want some help getting out of the mud?"

FRUIT SALAD

2 cups miniature marshmallows
1 can Mandarin oranges, drained
1 cup pineapple
1 cup coconut
1 cup sour cream
Mix all the ingredients and let stand overnight in the refrigerator. Should serve 6.
BROWN RICE PILAF

1 small onion, finely chopped (1/4 cup)
2 ?? cups chicken or beef broth
1 cup uncooked brown rice
2 tablespoons finely chopped parsley
Saut?© onion in medium-size saucepan over medium-low heat until golden brown. Add chicken or beef broth. Bring to boiling; stir in rice with a fork. Cover; lower heat; cook 45 minutes or until liquid is absorbed and rice is tender. Stir in parsley.
Makes four 1-cup serving with 140 calories per serving.
RASPBERRY WHIPPED CREAM CAKE

4 eggs, separated
1 1/4 cups sifted all purpose flour
1/4 teaspoon salt
1 cup sugar
2 Tablespoons fresh lemon juice
2 teaspoons grated lemon peel
Sift the flour with salt. Beat the egg whites until foamy.
Gradually beat in 1/2 cup of sugar, beating after each addition. Continue beating until soft peaks form.
In a small bowl beat the egg yolks at high speed until thick and lemon colored. Gradually beat in the remaining sugar and beat until smooth. At low speed, blend in the flour mixture.
Add lemon juice, 2 tablespoons of water and the lemon peel, beating until just combined. With a wire whisk or rubber scraper gently fold the egg yolk mixture into the egg white mixture just until blended.
Pour the batter into two ungreased 8 inch cake pans.
Bake at 350 F. for 25 minutes or until surface springs back when gently pressed with a fingertip.
Invert the cake layer by hanging it between two other pans. Cool completely, about one hour.
With a spatula, carefully loosen the cake from the pan; remove. Cut each layer in half to make four layers.
FILLING
3 cups boiling water
2 packages raspberry flavored gelatin
1 to 2 cups whipped cream
Sliced almonds or coarsely chopped pistachio nuts
Stir the boiling water into the gelatin until dissolved. Cool to lukewarm and then refrigerate.
When the mixture begins to thicken, in about one hour, beat until frothy and fold into whipped cream.
Refrigerate until firm.
Spread on the layers and reassemble the cake.
Frost cake with whipped cream. Decorate with nuts.
ALMOND RAISIN PANNETONE - ABM

1/2 Cup Warm Milk
1/4 Cup Egg
2 1/8 Cups All-purpose Flour
4 Tablespoons Sugar
1/2 Teaspoon Salt
5 Tablespoons Butter
1/2 Teaspoon Orange Peel
1 Teaspoon Lemon Peel
4 Tablespoons Raisins
3 Tablespoons Slivered Almonds
1 1/2 Teaspoons Yeast
Place ingredients in bread machine in order as above. Use Sweet Dough Cycle.
SAVORY CREPES WITH MUSHROOM AND BACON FILLING

For cr??pes:
1 large egg
1 cup milk
1 tablespoon unsalted butter, melted and cooled
1 teaspoon finely chopped fresh parsley leaves
1/2 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
vegetable oil for brushing pan
For filling:
6 slices bacon
1/2 pound mushrooms, sliced thin
3 tablespoons unsalted butter
1/4 cup all-purpose flour
1 cup milk
1/2 cup heavy cream
1 tablespoon chopped fresh parsley leaves
Make cr??pes:
In a bowl whisk together egg, milk, butter, and parsley until combined well. Add flour, salt and pepper and whisk until smooth.
Heat a 6- to 8-inch crepe pan over moderately high heat until hot. Brush pan with oil and heat until hot but not smoking. Remove pan from heat. Stir batter and half fill a 1/4-cup measure with it. Pour batter into pan, tilting and rotating pan quickly to cover bottom with a thin layer of batter, and return any excess to bowl. Return pan to heat and loosen edge of cr??pe with a spatula. Cook cr??pe until underside is lightly browned. Turn cr??pe and lightly brown other side. Transfer cr??pe to a plate. Make more cr??pes with remaining batter, brushing pan lightly with oil as necessary. (Cr??pes may be made 1 day in ahead and chilled, stacked and wrapped well in plastic wrap.)
Make filling:
In a large heavy skillet cook bacon over moderately high heat until crisp and transfer to paper towels to drain. Pour off all but 1 tablespoon fat from skillet and chop bacon. To fat remaining in skillet add mushrooms and 1 tablespoon butter and saut?© over moderately high heat, stirring, until liquid mushrooms give off is evaporated, about 5 minutes. Remove skillet from heat.
Preheat oven to 200?°F.
In a heavy saucepan melt remaining 2 tablespoons butter over moderately high heat and whisk in flour. Cook roux, whisking, 3 minutes. Add milk gradually, whisking constantly, and cook, stirring, occasionally, 5 minutes or until thickened and smooth. Add mushrooms, cream, parsley, bacon, salt and pepper to taste and simmer 10 minutes, or until very thick. Cool filling slightly.
Spread each cr??pe with about 1/4 cup filling and fold in quarters, transferring cr??pes as filled to an ovenproof platter. Heat cr??pes in oven until heated through.
Makes 12 cr??pes, serving 6 as a lunch main course.

Heart Healthy...
MEAT LOAF BURGERS WITH CARAMELIZED ONIONS
Onions:
1 tsp. olive oil
4 1/2 cups vertically sliced red onion (about 2 medium onions)
1/4 tsp. salt
1 Tbsp. sugar
2 Tbsp. balsamic vinegar
Burgers:
Cooking spray
1 cup finely chopped green bell peppers
1 cup finely chopped celery
1 cup crushed whole wheat crackers (about 20 crackers)
1/3 cup ketchup, divided
1/2 tsp. dried thyme
1/4 tsp. salt
1 pound ground sirloin
1 large egg
12 (1 1/4-oz.) slices rye bread, toasted
1. Prepare grill or broiler.
2. To prepare onions, heat olive oil in a large nonstick skillet over medium-high heat. Add onion and 1/4 tsp. salt; saute 12 minutes, or until golden brown. Stir in sugar and vinegar; cook 30 seconds. Remove from pan.
3. To prepare burgers, heat pan coated with cooking spray over medium-high heat. Add bell pepper and celery; saute 3 minutes or until tender.
4. Combine the bell pepper mixture, crackers, 1/4 cup ketchup, thyme, 1/4 tsp. salt, beef, and egg in a large bowl. Divide mixture into 6 equal portions, shaping each into a 1/2-inch-thick patty.
5. Place patties on a grill rack or broiler pan coated with cooking spray; cook 5 minutes. Carefully turn patties over; brush with remaining ketchup. Cook 5 minutes or until done.
6. Place 1 patty on each of 6 bread slices. Top each patty with 1/4 cup onion mixture and 1 bread slice.
Makes 6 servings. Nutritional values per serving: 419 calories (29 percent from fat); 13.4g fat (sat 4.3g, mono 6g, poly 1.3g); 23.1g protein; 51.8g carbohydrate; 6.6g fiber; 86mg cholesterol; 4.2 mg iron; 906mg sodium and 92mg calcium.

For Two...
SALISBURY STEAK FOR TWO

1 egg
1 slice bread, torn into small pieces
1 tablespoon finely chopped onion
1/2 pound ground beef
2 teaspoons vegetable oil, optional
1 can (10-3/4 oz) condensed golden mushroom or cream of mushroom soup, undiluted
1/2 cup water
1 jar (4-l/2 oz) whole mushrooms, drained or 3/4 cup sliced fresh mushrooms
Dash pepper
In a bowl, combine the egg, bread and onion; crumble beef over mixture and mix well. Shape into two patties. In a nonstick skillet over medium heat, brown patties on both sides in oil if desired; drain. Combine the soup, water, mushrooms and pepper; pour over patties. Bring to a boil. Reduce heat; cover and simmer until meat is no longer pink.
