Good morning. In line with our past theme and the current ???Discussion Forum??? topic I have shared some delicious recipes that will certainly please the palate. Because of their low fat, low calorie attributes, they will please the waistline, too. I hope you enjoy a sampling of my own healthier eating collection today.

You read in each issue how important your vote is to the success of this publication. Do you understand why that is? You see, the more members we get, the greater the number of recipes submitted for publication. Therefore, more votes equal better issues and greater variety of recipes in each. Besides, wouldn??™t it make you feel better knowing you did something to participate that no one else can do? Yes, no one can place your vote but you. Did You Know?...

Bacon-ease

I don't fry bacon anymore - I bake it. Just put the strips on parchment paper in a cookie sheet or on racks placed in a cookie sheet and bake at 350 degrees until it's done to your crispness level. No splatters and much less cleanup. I usually bake 2-3 pounds at a time and freeze the extra.

A to Z Recipes continues with its popular Theme Issues. We will share theme recipes and post them on the first Sunday of each month. Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in TWO of your favorite theme recipes in ONE email. If the number of recipes exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.

The rules are as follows:

As a service to your fellow readers, please send only recipes that are in a form that others could easily copy and save for their own use. Recipes that would require a lot of editing or cleaning up or use non-standard measurements should not be submitted. Recipes without a name and location of sender may NOT be posted or posted without any credit given. There will be NO recipes posted that are from other recipe-zines. A to Z Recipes protects the privacy of its readers and does NOT publish email addresses. There will be no exceptions.

The deadline for February's theme issue is Friday, January 30th.

After he finishes that one, he again peeks inside his shirt pocket and asks the bartender to bring another double martini. The bartender says, "Look, buddy, I'll bring ya' martinis all night long. But you gotta tell me why you look inside your shirt pocket before you order a refill."

The man replies, "I'm peeking at a photo of my wife. When she starts to look good, then I know it's time to go home."



Sex Drive

old man after the examination.

"I know it," said the old gentleman, "however,
I've really got only one complaint. My sex
drive is too high. Got anything you can do
for that, Doc?"

The doctor's mouth dropped open. "Your what?!"
he gasped.

"My sex drive," said the old man. "It's too
high, and I'd like to have you lower it if
you can."

"Lower it?!" exclaimed the doctor, still unable
to believe what the eighty-year old gentleman
was saying. "Just what do you consider 'high'?"

"Well, right now, it's pretty much all in my
head, Doc," said the old man, "and I'd like to
have you lower it two or three feet if you can.

GREEK-STYLE CHICKEN WITH LEMON-PISTACHIO RICE

American Heart Association One-Dish Meals Cookbook

When you remove this meal from the oven, you??™ll think you??™re in a kitchen in Greece. The aroma is a delightful portent of good things to come.

Ingredients:

1 1/2 cups fat-free, low-sodium chicken broth
1 cup uncooked instant brown rice
10 ounces frozen chopped spinach, thawed and squeezed dry
2 large tomatoes, chopped
2 teaspoons lemon zest
2 tablespoons fresh lemon juice
2 tablespoons chopped pistachio nuts
1 tablespoon finely chopped fresh oregano or 1 teaspoon dried, crumbled
1 tablespoon snipped fresh dillweed or 1 teaspoon dried, crumbled
1/2 teaspoon ground cinnamon
1/4 teaspoon pepper
4 boneless, skinless chicken breast halves (about 4 ounces each), all visible fat discarded
8 ounces fat-free or low-fat plain yogurt
2 teaspoons fresh lemon juice
2 tablespoons chopped pistachio nuts
Fresh oregano, dillweed, and lemon zest (optional)

Directions:

Preheat the oven to 375?°F.

In an 8-inch glass or metal baking dish, stir together the broth, rice, spinach, tomatoes, lemon zest, 2 tablespoons lemon juice, 2 tablespoons pistachios, 1 tablespoon oregano, 1 tablespoon dillweed, cinnamon, and pepper. Push the mixture to the side.

Add the chicken breasts. Spoon a small amount of the rice mixture over them. Cover with aluminum foil.

Bake for 50 to 60 minutes, or until the chicken is no longer pink in the center and the rice is tender.

Meanwhile, stir together the yogurt and 2 teaspoons lemon juice.

To serve, spoon the yogurt mixture over the chicken, rice, and vegetables. Sprinkle with the remaining pistachios. Garnish with oregano, dillweed, and lemon zest.

Serves 4; 3 ounces chicken and about 1 cup rice and vegetables per serving

Cook's Tip:
If you??™re freezing this dish, delay making the yogurt sauce. Prepare it shortly before serving the reheated dish.

BREAKFAST BURRITOS
4 servings

1 4 oz. can green chile, or 2 canned jalapenos diced
2 each eggs
2 each egg whites
2 tablespoons cilantro, chopped
1/2 cup salsa
1/4 cup reduced fat cheddar cheese
1/4 cup nonfat sour cream
4 each flour tortillas
1 teaspoon oil
1/2 cup scallions, chopped
2 each red potatoes, cooked and diced
1 each tomato

In nonstick skillet heat oil. Add scallions and potatoes and saute about 1 minute. Add tomatoes and chiles and saute until heated through. Push vegetables away from center of skillet. Add egg and egg whites mixed with a little cayenne to middle of pan. Cook until mixture is creamy. Sprinkle with cilantro and mix with vegetables.

Divide among warmed tortillas and top with salsa, sour cream and cheese.

ENCHILADAS CHIPOTLE
6 servings

Filling:
1/2 pound boneless skinless chicken breast, cooked and cubed
6 ounces lowfat cheddar cheese, grated
3/4 cup minced onion

Sauce:
2 tablespoons flour
2 cups beef broth
1 teaspoon cumin
3 cloves garlic, minced
1 teaspoon oregano
3 canned chipotle chiles, seeded and minced
2 teaspoons Adobo sauce, from can
2 tablespoons low-fat sour cream

Mix flour with beef broth. Place pan over medium heat and whisk in the spices, garlic, chiles, and Adobo sauce. Simmer uncovered for 20 minutes. Whisk in sour cream.

Place corn tortilla in sauce to soften it. Place it on a plate and fill with 1 tbs. cheese, 1 tbs. onion, and 1 tbs. chicken. Roll and place in a 9" x 13" dish. Repeat 12 times. Cover the enchiladas with the chipotle sauce. Top with any remaining onions and cheese. Bake at 375 degrees for 8-10 minutes, just until the sauce bubbles.

ROASTED ONION-GARLIC SOUP
4 servings

3 Spanish onions, cut in 1/2 lengthwise then thinly sliced
3 large shallots, cut in half
1 large head garlic, cloves separated, peeled and cut in half
2 teaspoons olive oil
4 cups chicken broth
1/4 cup brandy
1 tablespoon chopped fresh thyme, or 1 tsp. dried thyme leaves
1/4 cup freshly grated parmesan cheese

Set oven rack at lowest level, preheat to 450 degrees. Combine onions, shallots, garlic and oil in large shallow roasting pan. Roast for 20 to 30 minutes, stirring every 5 minutes, or until onions are golden brown. Remove from onion and pour in 1 cup of chicken broth. Stir liquid in pan, scraping the bottom to loosen and dissolve caramelized bits. Transfer the onion mixture to a soup pot and add brandy, thyme and remaining broth. Bring to a boil, reduce heat to low and simmer, covered, for 30 minutes. Season to taste with salt and pepper. Serve topped with parmesan and perhaps some toasted French bread.

LOW-FAT PEANUT BUTTER PIE

Ingredients:

1 (12-ounce) can evaporated skim milk
1 (1/4-ounce) envelope plain gelatin
1 (8-ounce) package low-fat cream cheese (Neufchatel), softened
1/2 cup confectioners (10x) sugar
3/4 cup reduced-fat creamy peanut butter
3 teaspoons vanilla extract
1 (9-inch) prepared low-fat graham-cracker crust

Directions:

1. Whisk milk and gelatin together in medium-size heavy saucepan set over low heat. Whisk constantly until mixture boils and gelatin dissolves completely (about 2 minutes). Transfer to heatproof bowl and cool 15 minutes.

2. Meanwhile, beat cream cheese and 10X sugar at low mixer speed in large bowl until smooth (about 1 minute). Scrape down sides of bowl, add peanut butter and vanilla, and beat 1 minute more. Again scrape down sides of bowl.

3. With mixer still at low speed, slowly add milk-gelatin mixture and beat until very smooth (about 2 minutes.) Don't forget to scrape down sides of bowl at half time.

4. Set pie crust in 10-inch pie pan or on small baking sheet (this is to catch any spills), then carefully pour in peanut butter filling (it will come right to top of crust).

5. Set uncovered in refrigerator and chill several hours until set.

6. Cut into wedges and serve.

Makes 1, 9 inch pie, 10 servings.

Note: Instead of using commercial low-fat whipped topping in this recipe, we've substituted low-fat cream cheese whipped until silky smooth with evaporated skim milk. Our taste testers pronounced the results ???heavenly.??? Pie contains 264 calories, 13 g fat, 17 mg cholesterol and 275 mg sodium.

Heart Healthy...




CREAM SOUP MIX
10 servings

2 1/4 cups powdered milk
3/4 cup cornstarch
1/4 cup chicken bouillon or vegetable bouillon granules
1/2 teaspoon seasoned salt
2 teaspoons onion flakes

Combine all ingredients and store in covered container. Mix 1/3 cup dry mix with 1 1/4 cup cold water. Cook stirring constantly until mixture thickens. Cook 2 more minutes. Use this instead of canned cream soups.

Variations:

Mushroom Soup: Add 1/2 cup finely chopped mushrooms
Celery Soup: Add 1/2 cup minced celery
Potato Soup: Add 1 cup diced potatoes, cooked
Chicken Soup: Add 1/2 cup diced chicken, cooked
Vegetable Soup: Add 3/4 cup mixed vegetables, cooked
Broccoli Soup: Add 1 cup chopped broccoli, cooked
Asparagus Soup: Add 1 cup chopped asparagus, cooked

For Two...



MARVELOUSLY MASHED CAULIFLOWER

This recipe is the answer to mashed potatoes and white rice.

1 medium head cauliflower, cut into florets
1 cup purified water
2 garlic cloves, minced
1 teaspoon fresh chives, chopped
1/2 teaspoon onion powder
1/2 teaspoon fresh parsley, chopped
1 tablespoon Chicken or Beef Broth

In a medium pot, place cauliflower with water and bring to a quick boil. Lower heat to simmer and cover. Cook for an additional 12 minutes or until soft. Drain, transfer cauliflower to a bowl, and mash. Blend in garlic, chives, onion powder, parsley, and broth with the mashed cauliflower. Serve hot.
