Most people who are looking to get lean avoid dietary fat like the plague. This is one of those great myths that never seems to die. Dietary fat is absolutely essential in your quest to get lean, but it must be the right type and in the correct amounts.

One of the most amazing fats you can consume is flaxseed oil. The magical flaxseed has health benefits that will make you run out and buy some after reading this article.

There are two essential fats that your body is unable to produce, the omega-6 fat called linoleic acid and the omega-3 called alpha-linolenic acid. These fats, which are both in flax oil, are essential, because they actually help to form parts of the structure of your brain, eyes, ears, adrenals, joints and just about every cell in the body. When these two fats are deficient, body function declines. Plus, these essential fats help reduce body fat. Yes, you read that right -- they help reduce body fat.

According to Fats and Oils: The Complete Guide to Fats and Oils in Health and Nutrition by Udo Erasmus and the American Journal of Clinical Nutrition, clinical and physiological research has shown that the majority of diets are deficient in Omega-3 fats and this deficiency can result in:

Coronary Heart Disease: Studies show that oils containing Omega-3 can have a number of beneficial effects in the prevention and treatment of coronary heart disease. Omega-3??™s have been shown to reduce the cholesterol ratio, blood pressure, triglyceride levels and cardiac arrhythmia.

Cancer: Omega-3 has been shown to selectively kill human cancer cells in tissue culture studies, without harming normal cells. Clinical studies are confirming the potential of high doses of Omega-3 to reduce tumor growth.

Arthritis: Several double blind studies have shown that when oils rich in Omega-3 are taken as a dietary supplement, about 2/3 of patients are able to discontinue their non-steroidal drugs and a further 20 percent can cut down their drug use.

Skin Problems: Skin conditions such as psoriasis, acne, eczema, dry skin and other allergic conditions have all been shown to be partly related to Omega-3 deficiency.

Stress: Omega-3 fatty acids are the precursors for the Series 3 prostaglandin's, which regulate immune function and are responsible for reversing the body's physiological response to stress. Some clinical studies have indicated a sense of calmness in response to Omega-3 's.

Take a look at some other interesting facts about Flax oil:

*Assists in the protection of the body against inflammation, water retention and lowered immune system.
*Shortens recovery time for worked out muscles after high exertion.
*Assists in the healing of sprains and bruises.
*Increases the metabolic rate by stimulating brown fat cells, making it easier to lose body fat. Lignan, a phytochemical that acts as an antioxidant, is found in flax. Populations that have high amounts of Lignan in their diet show low incidence of breast cancer and colon cancer.

It??™s important to look for high quality flaxseed oil. Based on the fact that flax oil can easily be destroyed by light and oxygen, it should come in a dark or amber brown bottle. In addition, it should be refrigerated and never used for cooking. It can be combined in a protein shake or poured over your favorite food.

As with everything in the world of health, flax is not the sole answer to all your issues. It??™s a great supplement, but you still need to train with weights, perform cardiovascular exercise and consume nutritious foods. Flax oil is marvelous fat and one more ingredient in your arsenal for great health and fitness.

St. Patrick's Day Recipes

Saint Patrick's Day is March 17th. This is a perfect way to plan at least one meal in honor of the patron saint of Ireland. You may choose a traditional dish such as an Irish Soda Bread recipe; the numerous potato dishes that are reminiscent of Ireland's earthy, humble history; perhaps a simple addition to a favorite recipe that makes it more "Irish"...please share your favorite Irish recipes. We aim to have a memorable theme issue dedicated to the Irish in all of us. Now, here is the NEW set of rules:

A to Z Recipes continues with its popular Theme Issues. We will share theme recipes and post them on the first Sunday of each month. Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in TWO of your favorite theme recipes in ONE email. If the number of recipes exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.

The rules are as follows:

As a service to your fellow readers, please send only recipes that are in a form that others could easily copy and save for their own use. Recipes that would require a lot of editing or cleaning up or use non-standard measurements should not be submitted. Recipes without a name and location of sender may NOT be posted or posted without any credit given. There will be NO recipes posted that are from other recipe-zines. A to Z Recipes protects the privacy of its readers and does NOT publish email addresses. There will be no exceptions.

The deadline for March's theme issue is Friday, February 27th.

Theme recipes must have subject: "St. Patty" and will be posted on Sunday, March 7th.

Crazy Corner...

The Genie

A man is walking down the beach and comes across an old bottle. Picking it up, he pulls out the cork. Sure enough, out pops a huge blue genie.

The genie says, "Thank you for freeing me from my prison. In return, I will grant you three wishes."

The man says, "Perfect. I always dreamed of this, and I know exactly what I want. First, I want ten million dollars in a Swiss bank account." Suddenly, there is a flash of light, and a detailed list with Swiss Bank account numbers appears in his hand.

He continues. "Next, I want a brand new red Ferrari right here."

There is another flash of light, and a bright red Ferrari appears right next to him.

He goes on. "Finally, I want to be irresistible to women."

A final blaze of light, and he turns into a box of chocolates.



The Nursing Home

As she walked, she would flip up the hem of her nightgown and say "Supersex."

She walked up to an elderly man in a wheelchair. Flipping her gown at him, she said, "Supersex."

He sat silently for a moment or two and finally answered, "I'll take the soup."



The Anniversary

A husband and wife had a bitter quarrel on the day of their 40th wedding anniversary. The husband yells, "When you die, I'm getting you a headstone that reads, 'Here Lies My Wife - Cold As Ever.'"

"Yeah?!" she replies. "When you die, I'm getting you a headstone that reads, 'Here Lies My Husband - Stiff At Last.'"

MRS. FIELD'S $250 COOKIE

2 C butter
4 C flour
2 tsp. soda
2 C sugar
5 C blended oatmeal (measure oatmeal and blend in a blender to a fine powder)
24-oz chocolate chips
2 C brown sugar
1 tsp. salt
1 - 8 oz Hershey Bar (grated)
4 eggs
2 tsp. baking powder
2 tsp. vanilla
3 C chopped nuts (your choice, but we liked pecans best)

Cream the butter and both sugars. Add eggs and vanilla; mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips, Hershey bar and nuts. Roll into balls and place two inches apart on a cookie sheet. Bake for 10 minutes at 375 degrees.

Makes 112 cookies.



SOUTHWESTERN BLACK BEAN SOUP

1 pound dried black beans, picked over
6 cups beef broth
2 14-16oz cans tomatoes including the juice, chopped
2 teaspoons ground cumin
2/3 cup sour cream or plain yogurt
2-4 fresh or pickled jalapeno peppers, minced
3 tablespoons minced fresh coriander leaves plus whole leaves for garnish

In a large bowl, let the beans soak in enough cold water to cover them by 2 inches for 1 hour and drain them. In a heavy kettle combine the beans with 8 cups water and the broth, bring the liquid to a boil, stirring occasionally, and simmer the beans, uncovered, for 1 hour. Stir in the tomatoes with the juice and the cumin and simmer the mixture, uncovered, for 1 ?? hours, or until the beans are soft. Let the mixture cool for 15 minutes and in blender or food processor puree it in batches until it is smooth, transferring it to a clean kettle as it is pureed. If a completely smooth texture is desired, force the puree through a sieve into a clean kettle. Bring the soup to a simmer and season with salt and pepper. In a small bowl, whisk the sour cream, jalapeno and minced coriander. Ladle the soup into bowls and garnish with jalapeno cream and whole coriander leaves.

Makes about 8 cups, serving 4-6.



ROASTED HONEY PEPPER PORK

1 boneless pork loin roast (about 3 ?? pounds)
?? cup honey
2 tablespoons Dijon mustard
3 tablespoons crushed mixed peppercorns
?? teaspoon thyme, crushed
?? teaspoon salt
fresh thyme and cranberries (garnish)

Carefully score roast ?? inch deep completely around roast, without cutting string. Combine all remaining ingredients; mix well. Spoon or brush 2/3 of honey mixture over pork to coat. Roast at 325?° F 1 hour; brush with remaining honey mixture and cook 30 minutes more or until thermometer registers 160?° F. Garnish.

Makes 8 servings.



PEACH PRALINE PIE

4 cups sliced peaches (I have used well drained canned)
3/4 cups sugar
2 tablespoons quick cooking tapioca
1/2 cup sifted flour
1/4 cup firmly packed brown sugar
4 tablespoons butter
1/2 cup chopped pecans

Mix peaches, sugar and tapioca in a large bowl. Let stand while preparing the pastry. Prepare pastry from your own one crust recipe. Roll out to fit into a 9 inch pie plate. Combine flour and brown sugar in a bowl. Cut in butter until mixture is crumbly, stir in pecans. Sprinkle 1/3 of this mixture over bottom of pastry shell. Top with peaches. Sprinkle remaining pecan mixture over top. Bake in a 450 degree oven for 10 minutes. Lower heat to 350 degrees and bake 20 minutes longer or until topping is golden.



SLOW-COOKER MEATLOAF AND POTATOES

2 medium potatoes - peeled and cut into 1"
2 lbs of ground beef
1 large onion finely chopped
1-1/2 cups ketchup - divided
3/4 cup crushed butter flavored crackers (ie: Ritz)
2 eggs
2 teaspoons salt
1/3 cup firmly packed brown sugar
1/2 teaspoon prepared mustard

Place the potatoes in a slow cooker. In a large bowl, combine the beef, onion, 3/4 cup ketchup, cracker crumbs, eggs and salt. Mix well. Place over the potatoes and pat down to form a loaf. In the same bowl, combine the brown sugar, mustard and the remaining 3/4 cup ketchup, mix well. Spread over top of loaf. Cook on low setting for 6 - 10 hours. Drain excess liquid and serve!

Heart Healthy...




VEGETABLE CURRY

Cauliflower has the nutritional benefit of being a crucifer, and it's dense and chewy, leaving you feeling satisfied with relatively few calories.

Cooking spray
1 small onion, cut into small dice
1 teaspoon finely chopped fresh garlic
4 teaspoons curry powder
1 head cauliflower, cut into florets (4 cups)
6 medium carrots, peeled and sliced
2 medium baking potatoes, peeled and diced
2 1/2 cups (20 fl oz/600 ml) canned vegetable broth
1/4 teaspoon sea salt

Spray a large saucepan once with cooking spray and set over low heat. Add onions and cook, stirring, for 2 minutes, until translucent. Add garlic and curry powder and cook, stirring, for 15 seconds. Add cauliflower, carrots, potatoes, broth and salt. Cover and simmer until potatoes are soft, about 25 minutes.

Makes 4 servings.

Per Serving: Calories 148, Carbohydrates 34g, Fat 0.8g, Fiber 8g, Protein 4g, Saturated Fat 0g, Sodium 226mg.

For Two...



HOT & SPICY SHRIMP WITH NOODLES
Serves 2, may be doubled

1 cup fresh orange juice
2/3 cup chicken stock or canned low-salt broth
?? cup soy sauce
2 tablespoons grated orange peel
2 teaspoons sugar
3 tablespoons peanut oil
2 small carrots, peeled and cut into 2x1/2x1/4-inch strips
2 Anaheim chilies, seeded and cut into 2x1/2-inch strips
1 large red bell pepper, seeded and cut into 2x1/2-inch strips
1 8-ounce package soba noodles or spaghetti
1 tablespoon sesame oil
6 quarter-size slices peeled fresh ginger, minced
4 garlic cloves, minced
3 green onions, minced
?? teaspoon dried red pepper flakes
?? pound uncooked unpeeled large shrimp, legs removed
2 ?? teaspoons cornstarch dissolved in 2 tablespoons chicken broth
orange peel julienne
green onion fans (optional)

Combine first 5 ingredients in small bowl; stir to dissolve sugar.

Heat 1 tablespoon peanut oil in wok or heavy large skillet over high heat. Add carrots, Anaheim chilies and bell pepper and stir-fry until beginning to soften, 4 minutes. Transfer to bowl.

Cook noodles in large pot of rapidly boiling water until just tender but still firm to bite, about 3 minutes. Drain well. Toss with sesame oil. Return to hot pot. Cover to keep warm.

Heat remaining 2 tablespoons peanut oil in wok over high heat. Mix in ginger, garlic, minced green onions, and pepper flakes. Add shrimp and stir until beginning to turn pink, about 1 minute. Add orange juice mixture and cook until shrimp are almost cooked through, stirring occasionally, about 3 minutes. Return vegetables to wok and stir until heated through. Pour cornstarch mixture into center of wok. Stir until sauce thickens. Transfer noodles to heated platter. Spoon shrimp mixture over. Garnish with orange peel julienne and green onion fans. Serve immediately or cool and serve at room temperature.

SLOW-COOKER CHICKEN DIVAN

This is a recipe I used to prepare for my kids before I lost my slow-cooker to some appliance nabber at work. It is delicious. I added shredded cheddar cheese to the final product and allowed it to melt while I set the table. Great meal!

1 package frozen broccoli spears
2 to 3 chicken breast, boneless, skinless (may cut into chunks)
1 can cream of chicken soup
1-1/4 cup mayonnaise
1 teaspoon lemon juice

Place broccoli in the bottom of slow cooker. Put chicken (I used chunks) on top of broccoli. Mix together soup, mayonnaise and lemon juice together. Pour over chicken, mixing slightly. Cover and cook on low for 8 hours.
