Good morning to one and all. We have some great recipes on tap in today??™s issue. My thanks to all who participated in the issue including Linda (from California) who is the source for today??™s very funny Crazy Corner. I have included another bonus recipe for you in Publisher??™s Choice.

FYI:
I am taking a couple of days off to go visit my friend Jean in Orange, TX. She is down from Wisconsin, staying with family. It is also her birthday! I will leave in the wee hours of Thursday morning so I can beat the Houston, Baytown and Beaumont traffic. There will be an issue scheduled for Thursday which should arrive for you early-morning a2z??™ers. If I have time, I will prepare another issue for posting early Friday morning. And...if I can scrounge up a couple of bucks, I might stay over an extra day so we can go to Lake Charles, LA. After Angela??™s birthday party, I am about as tapped out as I??™ve been in months. Any way...if you miss an issue come Friday or Saturday, think of me because I??™ll be having a ball at the casinos, lol.

Culinary Terms

??? To dab:
To butter the surface of something. ??? Dash:
A few drops of lemon juice or of vinegar added to a preparation.

??? To decant meat:
Remove the pieces of meat from a sauce and put them into another container.

??? To remove the tart ring:
Remove the tart ring either during or after baking.

??? Decorating bag:
Cone made of greaseproof paper used to decorate cakes or desserts with icing, melted chocolate, etc.

??? To uncook:
To add a small amount of water when cooking sugar or jam so as to reduce the temperature of cooking.

??? Deep cake pan:
Round mould with a high rim. You use it to bake sponge cakes for example.

??? To deglaze:
To dissolve juices caramelized in the bottom of pan with a liquid.

??? Dough ball:
Preparation with water, flour, salt, butter, yeast and possibly sugar, used to make flaky pastries. We call it a dough ball before the folding phase when making flaky pastry.

Increase volume of a dough (due to yeast) either during the fermentation or the cooking process.

Food cut into a small dice.

St. Patrick's Day Recipes

Saint Patrick's Day is March 17th. This is a perfect way to plan at least one meal in honor of the patron saint of Ireland. You may choose a traditional dish such as an Irish Soda Bread recipe; the numerous potato dishes that are reminiscent of Ireland's earthy, humble history; perhaps a simple addition to a favorite recipe that makes it more "Irish"...please share your favorite Irish recipes. We aim to have a memorable theme issue dedicated to the Irish in all of us. Now, here is the NEW set of rules:

A to Z Recipes continues with its popular Theme Issues. We will share theme recipes and post them on the first Sunday of each month. Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in TWO of your favorite theme recipes in ONE email. If the number of recipes exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.

The rules are as follows:

As a service to your fellow readers, please send only recipes that are in a form that others could easily copy and save for their own use. Recipes that would require a lot of editing or cleaning up or use non-standard measurements should not be submitted. Recipes without a name and location of sender may NOT be posted or posted without any credit given. There will be NO recipes posted that are from other recipe-zines. A to Z Recipes protects the privacy of its readers and does NOT publish email addresses. There will be no exceptions.

The deadline for March's theme issue is Friday, February 27th.

Theme recipes must have subject: "St. Patty" and will be posted on Sunday, March 7th.

Crazy Corner...

CAT HEAVEN

A cat died and went to heaven. God met her at the Pearly Gates and said, "You have been a good cat all of these years. Anything you want is yours for the asking."

The cat thought for a minute and then said, "All my life I lived on a farm and slept on hard wooden floors. I would like a real fluffy pillow to sleep on."

God said, "Say no more." Instantly, the cat had a huge fluffy pillow.

A few days later six mice were killed in an accident and they all went to heaven together. God met the mice at the gates of heaven with the same offer that he made the cat.

The mice said, "Well, we have had to run all of our lives: from cats, dogs and even people with brooms. If we could just have some little roller-skates, we would never have to run again."

God answered, "It is done." All the mice had beautiful little roller-skates.

About a week later, God decided to check on the cat. He found her sound asleep on her fluffy pillow. God gently awakened the cat and asked, "Is everything OK? How have you been doing? Are you happy?"

The cat replied, "Oh, it is WONDERFUL. I have never been so happy in my life! My pillow is fluffy, and those little Meals-On-Wheels you have been sending over are delicious."



THE MIRROR

After living in the remote wilderness of Kentucky all his life, an old codger decided it was time to visit the big city. In one of the stores he picks up a mirror and looks in it. It was the first time he has seen any mirror. Not knowing what it was, he remarked, "How about that! Here's a picture of my dad." He bought the 'mirror', but on the way home he remembered his wife, Lizzy, didn't like his father.

So he hung it in the barn, and every morning before leaving for the fields, he would go there and look at it. Lizzy began to get suspicious of these many trips to the barn. One day after her husband left, she searched the barn and found the mirror. As she looked into the glass, she fumed, "So that's the ugly bitch he's runnin' around with!!"

GRANDPA COOKIES

Note: time is needed in freezer

6 cubes melted margarine (not soft type)
4 c. Brown sugar
4 eggs
9 c. all-purpose flour
2 tsp soda
2 c. broken walnut meats
2 tsp. vanilla

Melt margarine, cool some. Mix in brown sugar and then eggs.

Sift flour and soda together. Mix in and mix in nuts and vanilla.

Line a 9x13 pan with plastic wrap and pat in the cookie mixture. Pat down firmly. Cover with more plastic wrap and freeze overnight (or longer).

Tip out of pan. Cut in 4 equal sticks. Slice one stick at a time in 1/4 inch slices, keeping the 3 other in fridge while baking the first one. Remove one at a time.

Bake 375 F for 10 min. Cool on racks or Brown paper bags. Store air tight.

These are brown sugar shortbread cookies but kids call them Grandpa Cookies.



CHEESE LOVER'S CASSEROLE

1-1/2 pound hamburger
1 pound Velveeta cheese
1 can tomato soup
1 can cream of mushroom or cream of celery soup
1 large package egg noodles

In a large saucepan cook the noodles until tender, remove from heat and drain, set aside. In a skillet brown the hamburger, remove from heat and drain of excess fat. Add 1/2-pound diced cheese, soups and 1 can of water to the hamburger; mix and stir until the cheese melts. Place half of this mixture in a 2-1/2 quart casserole dish. Add the noodles and mix gently, pour the remaining mixture on top. Top with the remaining 1/2-pound cheese. Bake for 30 minutes at 400-degrees.



FRESH PLUM CAKE

2 c. fresh tart plum halves
1/4 c. sugar
1/2 c. (1 cube) butter or margarine
1/2 tsp. lemon extract or 2 tsp. fresh lemon juice
1 c. sugar
2 eggs
1 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. fresh salt
1/2 tsp. cinnamon
2 tbsp. sugar mixed with 1 tsp. cinnamon

Arrange the halved and pitted fresh plums in the bottom of a greased baking pan (7x11 inches or 9 inch square). Sprinkle with 1/4 cup sugar. In a bowl, cream together thoroughly the butter, lemon extract or juice and 1 cup sugar. Add eggs, one at a time, beating well after each is added. Sift flour, measure and sift into the bowl with baking powder, salt and 1/2 teaspoon cinnamon. Stir until well blended. Spoon batter over the plums. Sprinkle the top with sugar and cinnamon mixture. Bake in a moderately hot 375 degree oven about 45 minutes or until the cake pulls away from sides of pan. Serve warm or cool, topped with sour cream or whipped cream, if you wish. Makes 6 to 9 servings. Rich and spicy.



ROMANTIC RAGOUT FOR TWO

1 tablespoon olive oil
1 small onion, chopped
3 cloves garlic, finely chopped
1 can (14 ?? ounces) no-salt-added stewed tomatoes, undrained
1 can (7 ounces) artichoke hearts, drained an quartered
?? cup red wine OR reduced-sodium chicken broth
1 teaspoon dried oregano
?? to ?? teaspoon crushed red pepper
1 can (6 ounces) chunk white tuna, in water, drained
2 tablespoons chopped parsley
2 cups cooked hot penne pasta
grated Parmesan cheese (optional)

In large skillet, heat oil over medium-high heat until hot. Cook and stir onion and garlic 3 to 5 minutes or until onion is translucent. Add tomatoes, artichokes, wine, oregano and red pepper; bring to a boil. Reduce heat; simmer 6 to 8 minutes or until mixture thickens slightly. Stir in tuna and parsley; heat through. Serve over pasta with Parmesan cheese, of desired.



LAZY COOK'S SHISH KEBAB

2 lbs. stew beef
5 large green peppers, cut in bite size pieces
5 large tomatoes, cut in bite-size pieces
4 medium onions, cut in bite-size pieces
1 bottle Italian dressing (clear type, not creamy)

Cut stew beef chunks in half. Place in a roasting pan. Place cut vegetables on top of the meat. Marinate meat and vegetables overnight in Italian dressing. Bake covered in 350 degree oven for approximately 2 hours. Serve with Italian or French bread. (Can also serve in Pita bread, cut in half and stuffed with this mixture.) Feeds 4, generously.

** If you don't want to be lazy, you can marinate overnight and alternate meat and veggies on skewers and grill.

Heart Healthy...




PEPPERONI-JALAPENO MELTS
Yield: 4 (3 melts) servings

INGREDIENTS

- 12 low-sodium Triscuit-style crackers
- 6 turkey pepperoni slices, halved
- 2 jalapeno chili peppers, each cut in 6 slices crosswise
- 1/4 cup shredded reduced-fat sharp Cheddar cheese

DIRECTIONS

Place crackers in a single layer on a microwave-safe plate. Top each cracker with 1 pepperoni slice and 1 jalapeno slice. Sprinkle cheese evenly over all.

Cook in microwave on HIGH setting 15 seconds or until cheese just begins to melt.

Nutritional Information Per Serving (3 melts):
Calories: 88, Fat: 4 g, Cholesterol: 9 mg, Sodium: 148, Carbohydrate: 10 g, Dietary Fiber: 2 g, Sugars: 0 g, Protein: 4 g

For Two...



EASY BAKED CHICKEN AND POTATO DINNER FOR TWO

This baked dish brings home all the flavors of a roast chicken with vegetables, and it makes just enough for two.

2 boneless skinless chicken breast halves (1/2 pound)
2 tablespoons Dijon mustard
1/2 cup Reduced Fat Bisquick?® mix or Original Bisquick?® mix
3/4 pound small red potatoes, cut into fourths
1 small red or green bell pepper, cut into 1/2-inch pieces
1 small onion, cut into 8 wedges
Cooking spray
2 tablespoons grated Parmesan cheese, if desired
1/2 teaspoon paprika

1. Heat oven to 400??F. Spray baking dish, 13x9x2 inches, with cooking spray.

2. Brush chicken with 1 tablespoon of the mustard, then coat with Bisquick mix. Place 1 chicken breast half in each corner of pan. Place potatoes, bell pepper and onion in center of pan; brush vegetables with remaining mustard. Spray chicken and vegetables with cooking spray; sprinkle evenly with cheese and paprika.

3. Bake 35 to 40 minutes, stirring vegetables after 20 minutes, until potatoes are tender and juice of chicken is no longer pink when centers of thickest pieces are cut.

GERMAN CHOCOLATE TORTE

1 package (4 ounces) German sweet chocolate
1/2 cup water
2 cups sugar
3/4 cup baking fat replacement*
1/4 cup canola oil
4 eggs, separated
2-1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup 1% buttermilk
1 teaspoon vanilla extract
1/4 teaspoon butter flavoring

FROSTING:
3 egg yolks
1 cup fat-free evaporated milk
1 cup sugar
1/2 cup marshmallow creme
1 teaspoon vanilla extract
1/4 teaspoon butter flavoring
1-1/3 cups flaked coconut
3/4 cup chopped pecans

In a microwave-safe bowl, combine chocolate and water. Microwave on high for 1-1/2 to 2 minutes or until chocolate is melted; stir until smooth. In a mixing bowl, combine sugar, fat replacement and oil. Add egg yolks, one at a time, beating well after each. Add melted chocolate; beat well. Combine flour, baking soda and salt; add to chocolate mixture alternately with buttermilk. Stir in vanilla and butter flavoring. In another mixing bowl**, beat egg whites until stiff peaks form; fold into batter.

Pour into three 9-in. round baking pans coated with nonstick cooking spray. Bake at 350?° for 30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

For frosting, combine egg yolks, milk, sugar and marshmallow creme in a saucepan. Cook and stir over medium heat until thickened, about 15 minutes. Remove from the heat; stir in vanilla and butter flavoring. Fold in coconut and pecans. Cool completely. Spread between layers and over top of cooled cake. Yield: 16 slices.

Nutritional Analysis: One slice equals 432 calories, 14 g fat (4 g saturated fat), 94 mg cholesterol, 233 mg sodium, 73 g carbohydrate, 1 g fiber, 6 g protein.

*Note: This recipe was tested with Smucker??™s Baking Healthy.
