Publisher's Desk...

Good morning to all in the a2z family. I hope your week is going well. Some of you are experiencing health woes and I have included you in my thoughts and prayers. I know how fortunate I am to be as free from serious health concerns as I am (at my advanced age, lol). Seriously, if this finds you in poor health, know that I have been thinking about you and the family here and praying for good health for all.

We have some really good recipes in this issue. I am so very grateful to all who helped make it possible. If you haven't sent in a recipe before (or in a while) please give some thought to doing so. We rely on subscriber submissions to keep the ball rolling. I would hate to make this publication a closed one, in that only what I provide would be posted. My wonderful "regulars" continue to send in a few. The cupboards are becoming bare in other respects, though. Your help is truly needed, friends.

As you may recall, I shared my birthday (May 9th) wish list with you on Sunday.?  Well, I can report that one subscription notice has been received, and no noticeable increase in votes detected.?  Now, I know you want to make this birthday-Mother's Day perfect for me.?  Good for you that I am a patient soul.?  My kids have given me great training in that regard, lol.?  Please click on the voting and refer-a-friend links and make me a happy camper.

I hope your day goes well. I will get some sleep shortly as I have just finished my night shift. One more to go and I am off for a few days (and am through with nights for a month---YESSSS!). See you here tomorrow, ok?

Another 9/11 Story

Next time your morning seems to be going wrong, the children are slow getting dressed, you can't seem to find the car keys, you hit every traffic light, don't get mad or frustrated; God is at work watching over you.

Doubtful? Think about this:

After Sept. 11th, one company invited the remaining members of other companies who had been decimated by the attack on the Twin Towers to share their available office space. At a morning meeting, the head of security told stories of why these people were alive...... and all the stories were just: The 'L I T T L E' things. As you might know, the head of the company got in late that day because his son started kindergarten. Another fellow was alive because it was his turn to bring donuts. One woman was late because her alarm clock didn't go off in time. One was late because of being stuck on the NJ Turnpike because of an auto accident. One of them missed his bus. One spilled food on her clothes and had to take time to change. One's car wouldn't start. One went back to answer the telephone. One had a child that dawdled and didn't get ready as soon as he should have. One couldn't get a taxi. The one that struck me was the man who put on a new pair of shoes that morning, took the various means to get to work but before he got there, he developed a blister on his foot. He stopped at a drugstore to buy a Band-Aid. That is why he is alive today.

Now when I am stuck in traffic, miss an elevator, turn back to answer a ringing telephone ... all the little things that annoy me. I think to myself, this is exactly where God wants me to be at this very moment. May God continue to bless you with all those annoying "LITTLE" things and may you remember their possible purpose. Pass this on to someone else, if you'd like. There is NO LUCK

Did You Know?...

Friends, lovers lower 2nd heart attack risk -study

Apr 16 (Reuters) - Don't knock your friends: they could save your life.

Heart attack survivors with a close friend, relative or lover to confide in are half as likely to suffer further heart attacks within a year as patients without a shoulder to cry on, a study shows.

The study, published this week in the British Medical Association's journal Heart, tracked nearly 600 patients for a year after they had a heart attack.

"Patients with a close confidant had only half the risk of a further cardiac event of those without a confidant," the study said, adding that the finding held even when adjustments were made for a host of other heart disease risk factors.

Those without a close relationship were more likely to drink heavily, smoke and use illicit drugs. But those factors alone did not explain their increased risk of additional heart attacks within a year, the study found.

The scientists said they still do not know why having a confidant helps keep a second heart attack at bay, but one possibility is that a close friend or partner may make sure a patient seeks treatment early and sticks to it.

Perhaps your Mother??™s prize recipe was one handed down to her by her own Mother and she shared it with you. This topic should yield some of the finest theme recipes since A to Z Recipes began as we hope to share precious memories from our childhood with the ???family??? here. When you send along your prized favorites, I hope you will also share something about yourself, your Mother, and how the family reacted to the recipe being served. I love this theme and hope you will too...maybe enough to pass along a couple of your favorites with all of us? In honor of Mother??™s Day, please send along your ???Recipes Mom Used to Make???. My thanks go to Pam H. from Swanton, OH, for the great theme idea! Now, here is the NEW set of rules:

A to Z Recipes continues with its popular Theme Issues. We will share theme recipes and post them on the first Sunday of each month. Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in TWO of your favorite theme recipes and in ONE email. If the number of recipes exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.

The rules are as follows:

As a service to your fellow readers, please send only recipes that are in a form that others could easily copy and save for their own use. Recipes that would require a lot of editing or cleaning up or use non-standard measurements should not be submitted. A man entered the bus with both of his front pockets full of golf balls, and sat down next to a beautiful (you guessed it) blonde.

The puzzled blonde kept looking at him and his bulging pockets.? 

Finally, after many such glances from her, he said, "It's golf balls".

Nevertheless, the blonde continued to look at him thoughtfully and finally, not being able to contain her curiosity any longer, asked ...

"Does it hurt as much as tennis elbow?"

Little Johnny and Jenny

Little Johnny and Jenny are only 10 years old, but they just know that they are in love. One day they decide that they want to get married, so Johnny goes to Jenny's father to ask him for her hand.

Johnny bravely walks up to him and says "Mr. Smith, me and Jenny are in love and I want to ask you for her hand in marriage."

Thinking that this was the cutest thing, Mr. Smith replies, "Well Johnny, you are only 10. Where will you two live?"? 

Without even taking a moment to think about it, Johnny replies "In Jenny's room. It's bigger than mine and we can both fit there nicely."? 

Still thinking this is just adorable, Mr. Smith says with a huge grin, "Okay then how will you live? You're not old enough to get a job. You'll need to support Jenny."

Again, Johnny instantly replies, "Our allowance...Jenny makes 5 bucks a week and I make 10 bucks a week. That's about 60 bucks a month, and that should do us just fine."? 

By this time Mr. Smith is a little shocked that Johnny has put so much thought into this. So, he thinks for a moment trying to come up with something that Johnny won't have an answer to. After a second, Mr. Smith says, "Well Johnny, it seems like you have got everything all figured out. I just have one more question for you. What will you do if the two of you should have babies of your own?"? 

Johnny just shrugs his shoulders and says "Well, we've been lucky so far..."? 

Mr. Smith faints.......

PECAN SCONES

Featured in the November/December 1989 issue of Domain Magazine

Buttery scones enriched with pecans and sour cream.? 

Makes 24 to 28 Scones

4 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1/4 cup brown sugar
1 cup coarsely ground pecans
1/2 pound butter, chilled and cut into cubes
1 cup sour cream
1 cup milk

Preheat oven to 375 degrees. Sift together flour, baking powder, and salt. Add sugar and pecans. Cut in butter until mixture resembles bread crumbs. Combine sour cream and milk, add to dry mixture, and stir just until mixed. On well-floured board, divide dough into 6 balls, flatten each to 5/8-inch thickness, and cut into wedges or circles. Bake at 375 degrees on ungreased sheet until golden brown, 15 to 20 minutes.



SANDWICH SPREAD

Source: "Years Ago Cookbook"

1 8 oz. cream cheese
1 c. grated cheddar cheese
1/2 green pepper
1 sm. jar pimiento
1 sm. onion
1 sm. jar olives
2 stalks celery
walnuts (If desired)
1 tsp vinegar

Put all ingredients through food grinder. (This proves how old the recipe is! We now have food processors, don't we?)



BANANA-LEMON BREAD

This is the bread Larry was baking as we were chatting one day. He took it out of the oven and sampled it. He said it was delicious. That was enough for me so I prepared it myself. His was an understatement...it was "scrumptiously delicious" (says my kids, lol). I hope you will try it, too! ~Maggie~

1 ?? cups all-purpose flour
1 tablespoon baking powder
?? teaspoon salt
?? cup sugar
?? cup shortening
1 (3-ounce) package lemon-flavored gelatin mix
2 eggs
1 cup mashed bananas

Preheat oven to 350?° F. Grease 9 x 5-inch loaf pan. Mix flour, baking powder and salt. Mix sugar, shortening, gelatin mix and eggs together until light and fluffy. Mix in bananas. Add dry ingredients and stir just until smooth. Pour into prepared pan. Bake until firmly set when lightly touched in center top, 50 to 60 minutes. Cool on rack. Remove from pan after 10 minutes.



MUSHROOM SAUCED STEAKS
Serves 4

1 (1 1/2) small onion, chopped
1 TBSP (1 1/2) butter
1 c (1 1/2) fresh mushrooms, sliced (used egg slicer!)
1/2 c (3/4) apple juice
1/2 c (3/4) beef broth
3 TBSP (4 1/2) all-purpose flour
1/4 tsp (3/8) pepper
4 (6) cubed minute steaks [1 1/4# (1 3/4#) approximately]
2 TBSP (3) butter

Sauce:
In medium skillet - low heat - cook onion in butter. Add mushrooms, saut?© 5 minutes - over medium heat. Add apple juice and beef broth - over high heat - until liquid reduces by half.

Steaks:
Combine flour and pepper and coat steaks In large skillet - medium heat - melt remaining butter and cook steaks 3-4 minutes per side until browned. Pour mushroom sauce over steaks and simmer until sauce thickens slightly - 3-4 minutes.



MEAT CURRY

2 and 1/2 pounds good quality beef
2 mounded tsp. paprika
1 tsp. ground cumin
2 tsp. coriander
2 and 1/4 tsp. turmeric
2 tsp. white mustard
2 tsp. ground ginger
2 tsp. Garam Masala (a spice found in the Gourmet sections of many supermarkets)
2 and 1/2 tsp. garlic powder
1 tsp. chili powder
2 bouillon cubes
2 large onions
4 Tbsp. butter
2 cloves garlic, minced
Salt and pepper to taste
2 bay leaves
3 tsp. cornstarch

Cut meat into one-inch cubes. Mix spices (the ingredients listed from paprika up to and including the bouillon cubes) in a bowl with water until mixture is runny. Cut onions into quarters and fry with butter until tender. Add garlic and cook for a few seconds. Add spices to onion and garlic and cook for 10 minutes. Add meat and mix well. Add salt and pepper and cook for 5 minutes. Pour boiling water to just below level of meat and cover and simmer for at least four hours. Add 2 bay leaves 2 hours before eating. Mix cornstarch with warm water and add to curry about 1/2 hour before eating to thicken sauce.

The Skinny: Use lean beef. The remaining ingredients are just mostly spices, onion and garlic.

Heart Healthy...




CHILI CON QUESO DIP
Yield: 32 servings

INGREDIENTS

- 5 ounces lean ground beef
- 4 ounces ground turkey breast
- 2 cups frozen mixed pepper and onion stir-fry
- 1 garlic clove, minced
- 1 (16 ounce) jar mild salsa
- 1 (8 ounce) can low sodium or regular tomato sauce
- 2 tablespoons tomato paste
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt, or to taste (optional)
- 1 cup grated reduced-fat Cheddar cheese
- 4 fat-free tortilla chips per person

DIRECTIONS

In a small Dutch oven or large pot, combine the ground beef, ground turkey, pepper and onion mixture, and garlic. Cook over medium heat until the beef is brown, breaking up any large pieces of onion, about 5 to 6 minutes.

Add the salsa, tomato sauce, tomato paste, chili powder, cumin, and salt (if desired). Stir to mix well. Cover and simmer 15 minutes, stirring frequently, to allow the flavors to blend. Remove from the heat. Stir in the cheese until melted.

Serve warm in a chafing dish or on a hot plate. Serve with fat-free tortilla chips. Cover and refrigerate leftovers. Leftovers keep for 3 to 4 days in the refrigerator.

For Two...



CREAM CHEESE CHICKEN

Serves 2

Ingredients:
1 Tbsp. butter
2 chicken breasts, boneless, skinless, seasoned with salt and pepper
1/4 C. dry vermouth (or chicken stock if you prefer)
1/2 tsp. garlic powder, coarse grind if possible
3 oz. cream cheese, softened (low fat is fine, or even no fat)
1/4 C. sliced green onion

Preparation:
Brown seasoned chicken breasts in butter in heavy skillet, cooking until just barely done; 8-10 minutes should work. Set aside and keep warm. Pour dry vermouth in same skillet, deglazing by stirring and scraping up the browned bits from cooking the chicken, and cooking 3 minutes. Add garlic powder. Whisk in softened cream cheese. (Add a little chicken stock or milk if you feel it is too thick; sauce should be consistency of heavy cream.) Return chicken, with any accumulated juices, to the pan. Check seasoning. I would add some green hot sauce here. Spoon some sauce over chicken, garnishing with green onion. Serve with brown or white rice or angel hair pasta.

MINT CREPES WITH STRAWBERRY PRESERVES
AND MARSCAPONE CHEESE

Crepes:? 

1 cup All Purpose Flour
1 cup & 2 tbsp. Water
4 large Eggs
2 tbsp. Melted Butter
Pinch of Salt
1/3 cup chopped Fresh Mint? 

1. In a food processor blender, blend the flour, water, butter, and salt for about 5-10 seconds. Scrape the sides of the container down and blend for another 20 seconds.

2. Transfer batter to a bowl and let rest for 1 hour. Stir in the herbs.

3. Heat a 6-7 inch skillet over medium heat, sprayed with non-stick spray. Pour batter into the pan to coat (very thin) bottom of pan. Heat crepe for 1-2 minutes or until loose from the pan. Flip over and cook for another 30 seconds.

Filling:? 

1/4 cup Cream Cheese
1/4 cup Marscapone Cheese
1 1/2 tbsp. Sugar
1/4 tsp. Vanilla Extract
1/2 tsp. Ground Cinnamon
1/2 tsp. Ground Nutmeg
9 tbsp. Strawberry preserves? 

1. In a mixing bowl combine all the ingredients together until well blended.

2. With each crepe place 3 tbsp. of the mixture in the center and fold over once and then again (like an envelope).

3. Place on a baking dish with non-stick spray and bake all crepes in a preheated 325?° for approximately 20 minutes or until heated through.

Serve with whip cream or ice cream. Garnish with mint sprigs.
