Good morning, everyone. I hope this finds you well. We had a late night with
our Mary Kay party and all. It was so much fun as Angela's friends really turned
out, and they were hilarious to watch. As a side benefit, Joanna (my oldest
daughter and our consultant for the night) brought the grandkids, and they were
so cute. I am sure my headache this morning has nothing to do with a margarita
too many, or winks too few. (I hadn't slept since Sunday morning.)
I got a phone call from Larry in Ontario yesterday, too. I had tried reaching
him earlier for one of our "dark morning" chats and he wasn't there. Then, no
emails from him. As it turned out, he has had major computer problems (expensive
ones, argh!) and will be AWOL until later in the week. He knows I worry
and would have called him, so he saved me the dime. I will be glad when he's
back up and running. Having one of your best friend's computer down is almost as
bad as your own. I said a-l-m-o-s-t, lol.
Great recipes in today's issue. See a terrific submission from Kel in GA. And

I ran into a stranger as he passed by,
"Oh excuse me please" was my reply.
He said, "Please excuse me too;
I wasn't watching for you."
We were very polite, this stranger and I.
We went on our way and we said good-bye.
But at home a different story is told,
How we treat our loved ones, young and old
Later that day, cooking the evening ! meal,
My son stood beside me very still.
When I turned, I nearly knocked him down.
"Move out of the way," I said with a frown.
He walked away, his little heart broken.
I didn't realize how harshly I'd spoken.
! While I lay awake in bed,
God's still small voice came to me and said,
"While dealing with a stranger, common courtesy you use,
but the family you love, you seem to abuse.
Go and look on the kitchen floor,
You'll find some flowers there by the door.
Those are the flowers he brought for you.
He picked them himself: ! pink, yellow and blue.
He stood very quietly not to spoil the surprise,
you never saw the tears that filled his little eyes."
By this time, I felt very small,
And now my tears began to fall.
I quietly went and knelt by his bed;
"Wake up, little one, wake up," I said.
"Are these the flowers you picked for me?"
He smiled, "I found 'em, out by the tree.
I picked 'em because they're pretty like you.
I knew you'd like 'em, especially the blue."
I said, "Son, I'm very sorry for the way I acted today;
I shouldn't have yelled at you that way."
He said, "Oh, Mom, that's okay.
I love you anyway."
I said, "Son, I love you too,
and I do like the flowers, especially the blue."
FAMILY
Are you aware that if we died tomorrow, the company that we are working for
could easily replace us in a matter of days. But the family we left behind will
feel the loss for the rest of their lives.
And come to think of it, we pour ourselves more into work than into our own
family, an unwise investment indeed, don't you think? So what is behind the
story?

Did You Know?...
This is an unusual "did you know?" text. I may post it from time to time
(through Mother's Day) so that everyone will have a chance to read it...
I'll bet you know that Mothers, when asked what would make their Mother's Day
perfect, usually say "Oh, just to spend time with my children".
I'll bet you know when women have a birthday and are asked what would make their
birthday perfect, they will say "Oh, nothing...I have everything!".
Yes, I know because I am a Mother and I (unfortunately!) have birthdays every
year. And I normally proffer those canned responses when asked those questions.
But, did you know that many of us don't always respond in the most honest way?
We don't want to inconvenience our children, friends, etc. Even when we'd
like to respond with "Oh! I'd like some cologne" or "You know that gold-leaf
mirror I've been eying would be perfect in the dining room".
Well my a2z family and friends...this Mother's Day (May 9th) is MY birthday. I
will be 52. And I want to honestly share my "wish list" with you:
#1 I would like for you to vote. Every day until May 9th. It costs nothing and
would make my Mother's Day perfect. Every family has a mother and it would
appear that I am the mother of this "family".
#2 I would like for you to invite at least one friend to join A to Z Recipes as
a subscriber. It costs nothing and would make my birthday perfect. Friends often
do things for friends' birthdays and I consider YOU my friend.
So, there you have it. Just as with my efforts here for you daily, I don't do
things half-way.? I go all the way or not at all.? And if my a2z
family fulfills my "wish list",? May 9th will not only be perfect, YOU will
have been a part of making A to Z Recipes a success. Now, I'll bet you didn't know that!

Some plans...
My family is planning a road trip in late June and I'd love to meet some of you along the way. We will be driving to Florida (from the Houston, Texas area). We had wanted to take this trip last year and could not afford to (not that we can now, lol). Unfortunately, the person my children most wanted to see for the first time in their lives, their paternal grandfather, died a few weeks ago. I'd like to ensure that they see the remaining relatives while all enjoy good health. I want very much to stop in Biloxi, New Orleans, and Orlando. If you live near one of those cities, maybe some of us can finally meet, face to face. I will disclose more details, including the exact dates (tentatively starting June 22nd) as soon as I can. As plans are finalized and disclosed, interested parties may
discuss it forum-style. I have established an area called "Discuss a2z Family Reunion" in QuickTalk. If this works out, we can do another one but perhaps to the west coast area. How wonderful it would be if more of us could meet, huh? Without exception, every person I have met through a2z has been wonderful. It is too nice an experience not to share!

Next Monthly Theme...
Fire Up That Grill!
What a perfect June theme topic. Yes, in most parts of the a2z world, the weather will be conducive to that all-time favorite type of cooking: outside on the grill. And, in honor of fathers everywhere, what better way to please his palate than stock up on some great recipes for him to prepare? Dads are not always the first to rush into the kitchen after a hard day at work and prepare dinner. But, on weekends when everyone is relaxed, he will fire up that grill and cook. It would be particularly nice of you were able to share some recipes your special dad actually uses, but also great if you simply want to send along some for all of us to enjoy. Your submissions can also include side dish recipes that are accompaniments to your favorite grilling recipes. Let's have a great June theme

Note: Because the American holiday of Memorial Day is on May 31st and an ideal time to use your theme recipes, we will post the June theme while still in the month of May. A to Z Recipes continues with its popular Theme Issues. We will share theme recipes and post them on the first Sunday of each month. Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in TWO of your favorite theme recipes (plus side dishes) and in ONE email. If the number of recipes exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.

Crazy Corner...
10 Commandments, Texas Style

People here in Texas have trouble with all those shalls and shall nots in the 10
Commandments. Folks here just aren't used to talking in those terms. So, some
folks out in west Texas got together and translated the "King James" into "King
Ranch" language: Ten Commandments, cowboy Style. The Cowboy's Ten Commandments
posted on the wall at Cross Trails Church in Fairlie, Texas:
(1) Just one God.
(2) Honor yer Ma & Pa.
(3) No telling tales or gossipin'.
(4) Git yourself to Sunday meeting.
(5) Put nothin' before God.
(6) No foolin' around with another fellow's gal.
(7) No killin'.
(8) Watch yer mouth.
(9) Don't take what ain't yers.
(10) Don't be hankerin' for yer buddy's stuff.
Now that's kinda plain an' simple don't ya think? Y'all have a good Day.

7 - LAYER RANCH DIP

1 envelope Lipton Ranch soup mix
1 container (16 oz) sour cream
2 teaspoons Tabasco brand Green
1 cup shredded lettuce
1 med. tomato, chopped
1 can (2.25 oz.) sliced, pitted ripe olives, drained
1/4 cup chopped red onion
1 (4.5oz) chopped green olives, drained
1 cup shredded cheddar cheese (about 4 oz.) Tortilla Chips
In 2 qt. shallow dish, combine soup mix, sour cream and Tabasco sauce.
Evenly layer remaining ingredients, except tortilla chips, ending with cheese.
Chill Serve with tortilla chips.
Makes 7 cups.
COLD RAW CARROT RELISH

10 carrots, cleaned and scraped
7 onions, cleaned and peeled
4 peppers, cleaned and cored
2 cucumbers
1/8 c. salt
1 1/2 c. sugar
1 1/2 c. cider vinegar
1 tbsp. mustard
1 tbsp. celery seed
Chop or grind all vegetables and put them in large bowl. Add salt and mix well.
Allow salted vegetables to stand for 1/2 hour. Then drain juices, do not save
juice. Place vegetables in large bowl. Add sugar, vinegar, mustard, and celery
seed. Mix well and serve.
BISCUIT MIX
Makes 13 cups

This can be used for waffles, pancakes, biscuits, and as a coating for chicken.
Use it for anything for which you use a product like Bisquick.
9 cups sifted flour
1/3 cup baking powder
1 cup plus 2 tablespoons powdered milk
4 teaspoons salt
1 3/4 cups vegetable shortening
Sift all dry ingredients. Cut shortening into flour until mixture resembles
coarse cornmeal. Store well covered, in cool, dry place.
PANCAKES
Approximately twelve 4-inch pancakes
2 cups biscuit mix
2 eggs
1 cup milk
Combine and beat until smooth. Bake pancakes on hot greased griddle until golden
on both sides.
Note: To make fruit pancakes, add 1 cup blueberries, sliced strawberries, diced
bananas or diced peaches to batter after it has been beaten.
WAFFLES
Three 9-inch waffles
2 cups biscuit mix
2 tablespoons oil
1 egg
1 1/2 cups milk
Combine ingredients and beat until smooth. Bake according to directions on
waffle maker.
WRAP FOR HOT DOGS
Enough for 10 hot dogs, bratwurst or sausages
1 cup biscuit mix
1/4 cup cold water
For onion flavor:
Mix 1 1/2 teaspoons dried minced onion with water and allow to sit for 2 minutes
then mix with biscuit mix. Form into a ball. Knead a few times and roll out into
71/2-x 8-inch rectangle. Cut into 10 rectangles.
For barbecue flavor:
Brush 2 tablespoons barbecue sauce over rolled-out dough.
For pizza flavor:
Combine 1/8 teaspoon garlic powder, 1 1/2 teaspoons dried minced onion, 1/8
teaspoon oregano and 1 teaspoon dried parsley. Add to water and allow to sit for
2 minutes. Add to biscuit mix. Roll out as above
For cheese flavor:
Sprinkle 1/2 cup grated over rolled-out dough before rolling up the dogs
EASY DELICIOUS SHRIMP

2 pounds medium shrimp (30 to a pound)
4 T. real butter
4 T. good extra virgin olive oil
6 cloves of garlic, minced
salt to taste
In large skillet heat oil and butter. Add the garlic just to sizzle. Add shrimp
and stir fry until shrimp turns pink. Salt it to taste and serve immediately. I
buy the shrimp at Costco in a bag in the frozen food section. The shrimp has
already been cleaned and has the tale on. This is my family favorite and when I
feel generous I say why not shrimp. We never have any left over.
SANTA MARIA BEANS
Makes 24 servings

2 packages (1 pound each) Pinquito beans
OR pinto beans, picked over, rinsed and drained
1 ?? quarts cold water
2 cans (16 ounces each) whole tomatoes, undrained
1 ham hock (1 pound) cracked
2 large white onions, chopped
2 cups bottled mild chili salsa
?? pound salt pork, cut into 4 pieces
2 teaspoons leaf oregano, crumbled
?? teaspoon crushed red pepper flakes
Combine beans and water in large kettle or Dutch oven. Soak overnight. Do not
drain. Add the tomatoes, ham hock, onion, salsa, salt pork, oregano and pepper
flakes to the beans. Bring to boiling; cook for 5 minutes. Lower heat; simmer,
uncovered, 6 hours or until beans are tender. Add water as necessary to keep
covered by 2 inches.
Note: These beans are best made a day ahead and refrigerated overnight to
develop flavors. the beans freeze well for up to 6 months.
Nutrient value per serving:
227 calories
10 g protein
9 g fat
28 g carbohydrates
390 mg sodium
10 mg cholesterol

Heart Healthy...
LOW-FAT APPLESAUCE RAISIN BREAD
Yield: 1 loaf

INGREDIENTS:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 cup raisins
- 2 egg whites
- 1-1/4 cups unsweetened applesauce
DIRECTIONS:
Preheat oven to 350 degrees F. Lightly grease a 9x5 loaf pan.
In a large bowl, stir together flour, sugar, baking powder, baking soda, salt
and cinnamon. Stir in raisins.
In a separate bowl, using an electric mixer, beat egg whites and applesauce
until combined. Pour mixture over dry ingredients
and stir just until combined. Spoon into prepared pan.
Bake in preheated oven for 70 to 80 minutes or until a cake tester inserted in
the center comes out clean. Let cool in pan on rack for 10 minutes. Remove from
pan and let cool completely on rack.

Calories: 123, Fat: 0 g, Carbohydrate: 29 g, Fiber: 1 g,
Protein: 2 g, Sodium: 95 mg, Cholesterol: 0 mg

For Two...
EGG AND TOMATO SCRAMBLE

1 plum tomato, peeled and chopped
1 teaspoon chopped fresh basil or 1/4 teaspoon dried basil
1 egg or egg substitute equivalent
1 teaspoon water
1 garlic clove, minced
1 teaspoon olive or vegetable oil, optional
Salt and pepper to taste, optional
1 slice bread, toasted
Additional fresh basil, optional
In a small bowl, combine tomato and basil; set aside. In another bowl, beat egg,
water and garlic. Heat oil if desired in a small nonstick skillet; add egg
mixture. Cook and stir gently until egg is nearly set. Add tomato mixture and
salt and pepper if desired. Cook and stir until egg is completely set and tomato
is heated through. Serve with toast. Garnish with basil if desired.
Yield: 1 serving.
Diabetic Exchanges: One serving (prepared with egg substitute and without oil
and salt) equals 1 starch, 1 meat; also, 152 calories, 289 mg sodium, 1 mg
cholesterol, 20 gm carbohydrate, 11 gm protein, 4 gm fat.

15 MINUTE SAVOY RICE PILAF

1 small onion, chopped
2 Tbsp. butter or margarine
1 can (10-1/2 oz.) condensed chicken broth or beef broth (1-1/3 cups)
1 cup frozen peas
1 can (4 oz.) sliced mushrooms, undrained
2 cups MINUTE White Rice, uncooked
COOK and stir onion in butter in 2-quart saucepan until tender.
ADD broth, peas and mushrooms. Bring to boil.
STIR in rice; cover. Remove from heat. Let stand 5 minutes. Fluff with fork.
