Good morning and welcome to your daily dose of A to Z Recipes.? This is
"hump day" which should make everyone happier in that the week is downhill here
on out.? If you've had a spiffy week so far, you may not want it to end.?
But, if you've had a week that left you wishing for an end, today brings you
another day closer.? For me, it has not been all that great.? I am
still battling the aching mouth.? So much so that I have to stay pretty
much under the spell of the medication in order to function.? So, I have
left my co-workers in the lurch as I cannot perform my duties.? If I tried
to work without meds, well...not a pretty picture.? And if I tried
to work with them, well...let's not go there.
We have some great recipes in this issue.? I am very proud of all who
sent some to share.? We also have some funny materials that should tickle
your fancy.? Heck, I was laughing as I was putting this issue together.?
If it can put a smile on the face of this gal who is fighting pain, then you
haven't got a chance, lol.? Enjoy and let's meet here again tomorrow, ok?

A to Z Recipes Family Reunion Plans
My family is planning a road trip in late June and I'd love to meet some of you along the way. We will be driving to Florida (from the Houston, Texas area). We had wanted to take this trip last year and could not afford to (not that we can now, lol). Unfortunately, the person my children most wanted to see for the first time in their lives, their paternal grandfather, died a few weeks ago. I'd like to ensure that they see the remaining relatives while all enjoy good health. If you live near one of these cities, maybe some of us can finally meet, face to face.
How about a cup of coffee? Great! Let's meet! Here is my schedule for when and where I will be:

Next Monthly Theme...
Fire Up That Grill!
What a perfect June theme topic. Yes, in most parts of the a2z world, the weather will be conducive to that all-time favorite type of cooking: outside on the grill. And, in honor of fathers everywhere, what better way to please his palate than stock up on some great recipes for him to prepare? Dads are not always the first to rush into the kitchen after a hard day at work and prepare dinner. But, on weekends when everyone is relaxed, he will fire up that grill and cook. It would be particularly nice of you were able to share some recipes your special dad actually uses, but also great if you simply want to send along some for all of us to enjoy. Your submissions can also include side dish recipes that are accompaniments to your favorite grilling recipes. Let's have a great June theme

Note: Because the American holiday of Memorial Day is on May 31st and an ideal time to use your theme recipes, we will post the June theme while still in the month of May. And, we normally ask that only two recipes be submitted for theme issues. Because you may have some tasty side dishes for this theme, you may send those along with your two entree submissions. A to Z Recipes continues with its popular Theme Issues. We will share theme recipes and post them on the first Sunday of each month. Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in TWO of your favorite theme recipes (plus side dishes) and in ONE email. If the number of recipes exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.

A True Woman

I have long contended there are male jokes and there are female jokes. And there
are unisex jokes. Here is a joke I consider a true female joke. I offer it to
you in the hopes that women will love it and men will pass it along to a woman
who will love it.
A woman was sitting at a bar enjoying an after work cocktail with her
girlfriends when an exceptionally tall, handsome, extremely sexy middle-aged man
entered. He was so striking that the woman could not take her eyes off him. The
young-at-heart man noticed her overly attentive stare and walked directly toward
her. (As all men will.)
Before she could offer her apologies for so rudely staring, he leaned over and
whispered to her, "I'll do anything, absolutely anything, that you want me to
do, no matter how kinky, for $20.00.....on one condition." (There are always
conditions)
Flabbergasted, The woman asked what the condition was. The man replied, "You
have to tell me what you want me to do in just three words." (controlling huh?)
The woman considered his proposition for a moment, then slowly removed a $20
bill from her purse, which she pressed into the man's hand along with her
address. She looked deeply into his eyes, and slowly, and meaningfully, said....

Why Am I So Tired???

For a couple years I've been blaming it on lack of sleep, not enough sunshine, too much pressure from my job, earwax buildup, poor blood or anything else I could think of. But now I found out the real reason: I'm tired because I'm overworked. Here's why:
The population of this country is 273 million. 140 million are retired. That leaves 133 million to do the work.
There are 85 million in school, which leaves 48 million to do the work.
Of this there are 29 million employed by the federal government, leaving 19 million to do the work.
2.8 million are in the armed forces preoccupied with keeping peace. Which leaves 16.2 million to do the work.
Take from the total the 14,800,000 people who work for state and city governments And that leaves 1.4 million to do the work.
At any given time there are 188,000 people in hospitals, Leaving 1,212,000 to do the work.
Now, there are 1,211,998 people in prisons.
That leaves just two people to do the work. You and me. And there you are sitting on your ass, at your computer, reading jokes. Nice, real nice.

BROILED FILLET OF BLUEFISH

Bluefish is another fish that is high in omega-3 fatty acids, and another
example is Spanish mackerel. My husband and I make a point of eating freshly
caught fish at least twice a week (and are, I suppose, lucky to live in a major
city with a huge port so fishing vessels actually arrive at the city's docks
every day, making many kinds easily accessible and very affordable--he tells me
that during his Midwest childhood in the 1940s he never had fresh fish). Anyway,
I thought I'd send you a couple of our favorite fish recipes, and if you want
more let me know.
So many people seem to be afraid of preparing fresh fish (why else would they
eat canned salmon and tuna when fresh is soooooo much tastier??!!) so I'll offer
a really simple, fool-proof recipe that the rawest of beginners can prepare
confidently and easily.
1 fillet of bluefish
1-2 T. toasted (dark, not light) sesame oil
1-2 T. sesame seeds
Both amounts depend on the size of fillet you are using, which depends on the
number of servings you plan!
Preheat the broiler. Brush the pan with oil and place the fish on it, skin side
down. Brush with oil and sprinkle generously with sesame seeds. Broil until done
(the fish flakes easily when prodded with a spoon). Time depends on size of
fillet.
Serve accompanied by risotto and a fresh mixed green salad. Start with stuffed
mushrooms or grilled sea scallops with aioli. Woodbridge Chardonnay is nice with
it.
STEAK SINATRA

A perfect and very popular stir-fry dish.
Source: 13 Coins, Seattle, WA
4 (4oz) tenderloins (sliced into 3 pieces each)
1 1/2 Tbs. Oil
1 whole onion (cut into 12ths)
1 whole green pepper (cut into 12ths)
10 whole button mushrooms
Salt and Pepper
1 clove garlic (minced)
2 artichoke hearts (cut in halves) I use a can of artichoke quarters
1 tomato (cut in 8ths)
?? cup burgundy wine
1. Sear meat , in hot oil, on both sides.
2. Add onion, peppers, mushrooms, salt, pepper and garlic
3. Saute until still crisp but lightly cooked
4. Add artichoke hearts, tomatoes and burgundy wine. Cook 2-3 minutes more.
5. Drain off 3/4 of liquid and serve immediately.
Serves 4
Preparation: 10 minutes
BUTTERNUT SQUASH AND PORCINI SOUP
Makes 8 servings

2 2 ??-pound butternut or other winter squash, halved and seeded
?? ounce dried porcini mushrooms
2 cups boiling water
4 tablespoons olive oil
2 large onions, chopped
2 cups chopped fresh mushrooms
6 teaspoons chopped garlic, in oil
2 teaspoons dried rubbed sage
1 ?? teaspoons chopped fresh thyme
1 cup apple juice
1 cup water
?? cup dry sherry or Marsala
1 tablespoon Soya sauce
pinch ground nutmeg
8 thin slices French bread baguette
Soak porcini mushrooms in boiling water for 30 minutes. Preheat oven to 400?° F.
Place seeded squash halves cut side down in a baking dish. Bake squash until
tender, about 50 minutes. Cool squash. Scoop out flesh and pur?©e until smooth.
Heat 2 tablespoons olive oil then add chopped onions, fresh mushrooms, 2
tablespoons garlic, and saut?© for 5 minutes. Add squash pur?©e, sage and thyme,
apple juice, water, dry sherry, Soya sauce and nutmeg. Simmer for 10 minutes.
Add porcini mushrooms with liquid, simmer for 10 minutes more. Season with salt
and pepper.
Garlic Toast: Preheat broiler. Combined remaining chopped garlic and olive oil
in a blender until smooth. Brush bread with mixture and broil until golden brown.
Ladle soup into bowls and top with garlic toast. Serve immediately.
BROILED MARINATED CHUCK STEAK
Serves 6

1 1 1/2-inch-thick beef chuck blade steak (about 2 1/2 to 3 lbs.)
3/4 cup soy sauce
1/4 cup white vinegar
1/4 cup packed brown sugar
3 Tbs. Worcestershire
2 Tbs. salad oil
1 tsp. ground ginger
parsley for garnish
About 5 hours before serving or early in day: On a cutting board, with sharp
knife, trim excess fat from chuck steak. In 13" by 9" baking dish, combine soy
sauce with remaining ingredients except parsley. Add steak and turn to coat with
marinade. Cover and let meat marinate in refrigerator about 4 hours, turning
meat occasionally.
About 1 hour before serving: Preheat broiler if necessary. Place steak on rack
in broiling pan (reserving marinade). Broil steak, about 3 to 5 inches from
source of heat, 30 minutes for rare or until of desired doneness, brushing
frequently with marinade and turning meat once. Place steak on cutting board;
garnish with parsley.
MAPLE SYRUP CHEESECAKE

24 (5-by-2 1/2-inch) graham crackers
1/2 cup (1 stick) unsalted butter, melted
1 1/2 cups dark maple syrup, plus more for drizzling on top (divided)
4 packages (8 ounces each) cream cheese, room temperature
4 large eggs
1 tablespoon vanilla extract
1/2 cup whipping cream
Preheat oven to 350 degrees.
Prepare crust: In food processor, finely grind graham crackers (you will have
about 31/2 cups). In large bowl, stir together graham cracker crumbs, butter and
1/2 cup maple syrup. Press evenly into bottom and up sides of 10-inch springform
pan. Wrap bottom and side of pan with 2 layers of heavy-duty foil to avoid
leakage.
Make filling: In bowl of standing mixer fitted with paddle attachment, or in
food processor, beat cream cheese on low speed, scraping down sides of bowl
occasionally, until smooth. Add remaining 1 cup maple syrup and eggs, 1 at a
time, beating well after each addition. Add vanilla and cream and beat until
just combined.
Pour filling into crust and bake in middle of oven 1 hour (cake will not be set
in center but will set as it chills). Cool cake in pan on rack. Chill cake,
covered, at least 8 hours and up to 4 days. Remove side of pan. Serve cheesecake
in wedges, drizzled with maple syrup.
Makes 8 to 12 servings.

Heart Healthy...
SPANISH RICE WITH BACON

6 bacon strips, diced
1 T (15 ml) canola or vegetable oil
1 medium onion, chopped
1 cup (240 ml) uncooked long grain rice
1-3/4 cups (420 ml) water
2 large tomatoes, chopped
1 medium green pepper, chopped
2 jalapeno peppers, seeded and chopped
1 to 1-1/2 teaspoons (5 to 7.5 ml) chili powder
1/2 teaspoon (2.5 ml) salt
In a large skillet, cook bacon over medium heat until crisp. Remove to paper
towels. Add oil to the drippings; saut?© onion for 3 minutes. Add rice; stir
until golden brown, about 5 minutes. Stir in the remaining ingredients. Bring to
a boil. Reduce heat; cover and simmer for 30 minutes or until rice is tender.
Sprinkle with bacon.
Makes 6 servings.
Per serving: 287 cal., 12 g fat (4 g sat. fat), 16 mg chol., 514 mg sodium, 34 g
carbo., 2 g fiber, 10 g protein.
Diabetic Exchanges: 2 starch, 2 fat, 1 vegetable.

For Two...
PANCAKES FOR ONE

1/2 cup all-purpose flour
2 teaspoons wheat germ
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg
1/2 cup buttermilk
1-1/2 teaspoons vegetable oil
Butter and maple syrup
In a bowl, combine flour, wheat germ, baking soda, baking powder and salt. In
another bowl, beat egg; add buttermilk and oil. Stir into dry ingredients just
until blended. Pour batter by 1/3 cupfuls onto a lightly greased hot griddle;
turn when bubbles form on top of pancakes. Cook until the second side is golden
brown. Serve with butter and syrup.
Yield: 1 serving (3 pancakes).

CHILE RELLENOS-STYLE CHICKEN

Makes: 8 servings
8 boneless skinless chicken breast halves (about 2 lb.)
1 envelope SHAKE 'N BAKE Hot & Spicy Seasoned Coating Mix for Chicken or Pork
1/2 cup KRAFT Shredded Cheddar & Monterey Jack Cheese
1 can (4 oz.) chopped green chilies, drained
PREHEAT oven to 400?°F. Coat chicken with coating mixture as directed on package.
Place on ungreased or foil-lined baking pan. Discard any remaining coating mix.
Bake 20 minutes.
MIX cheese and chilies; spoon over chicken. Bake an additional 5 minutes or
until chicken is cooked through and cheese is melted. Serve with 1 cup TACO BELL
HOME ORIGINALS Thick 'N Chunky Salsa, if desired.
Round Out The Meal: Serve with a side of Spanish rice and a steamed vegetable.
Special Extra: Sprinkle with chopped fresh cilantro before serving.
