Good morning to everyone. Well, as promised, the weekend finally made it here. I hope you have plans that are worth the wait. Yes, I work this weekend but I don't really mind. I feel like a kid whose week was spent playing hooky as I was sick most of it. So work is not an awful prospect for me today. Hey, I am feeling better. And I am fortunate to have a job...and one I love.

I would like to thank everyone who responded to my birthday "wish list". As you may recall, for my birthday I asked for you to vote every day and invite at least one person to join A to Z Recipes. Your thoughtfulness is appreciated and the publication grows every time you vote or invite friends/family to join. More votes means more readers. More readers means more and varied recipes to share. Thanks!

In today's issue of A to Z Recipes, you will find terrific recipes as well as a helping of other goodies that should help you start the weekend. Personally, if I can enjoy great food and laughter with friends, then my day is about perfect. You'll find that here today. I hope you'll also find your way back tomorrow for a special Sunday issue that will cap off the weekend. Oh! Make sure you look at today's Mail Box for a message that mysteriously showed up in my inbox yesterday. Really weird that it was AWOL for over a month! The reader has a special recipe request. Did You Know?...

WILD RICE

Surprise! Wild rice is not rice--it's a seed grain from an aquatic grass not in the rice family. Add one cup (225 grams) of rice to 1 quart (1 liter) of boiling water. It's terrific as a stuffing or in a pilaf with sauteed vegetables.

COOKING TIP!
If you are in the habit of burning your rice, add a little more water to the pot this time! Also, add extra water if you prefer stickier rice. Less water makes for drier, fluffier dishes. It all depends in how you plan to use it.

Wild Rice Casserole

1 cup wild rice, uncooked
1 pound fresh mushrooms, sliced thickly
1 cup minced onion
3 cups vegetable broth
3 cloves garlic, minced

Rinse wild rice well. Combine wild rice, mushrooms, onion, and garlic in a 3 quart casserole dish. Pour broth over it all, cover, and bake at 350 degrees for about 1 & 1/2 hours.

I'm sorry I can't give you a recipe from my mother - she hated to cook. She said "some people live to eat but I eat to live." I once complimented her on her meatloaf and then had meatloaf every time she cooked for me after that. It was OK but I don't have a recipe. Anyway, now that I live with a vegetarian, I am looking for meat substitute recipes.

Well Maggie keep up the good work. To the rest of you: if there are 2000 subscribers and we each sent $1 a month well how about that!

A to Z Recipes Family Reunion Plans

My family is planning a road trip in late June and I'd love to meet some of you along the way. We will be driving to Florida (from the Houston, Texas area). We had wanted to take this trip last year and could not afford to (not that we can now, lol). Unfortunately, the person my children most wanted to see for the first time in their lives, their paternal grandfather, died a few weeks ago. I'd like to ensure that they see the remaining relatives while all enjoy good health. If you live near one of these cities, maybe some of us can finally meet, face to face.

How about a cup of coffee? Great! Let's meet! Here is my schedule for when and where I will be:

-Wednesday morning, June 23rd, Biloxi, MS
-Saturday morning, June 26th, Orlando, FL
-Tuesday morning, June 29th, New Orleans, LA

Next Monthly Theme...

Fire Up That Grill!

What a perfect June theme topic. Yes, in most parts of the a2z world, the weather will be conducive to that all-time favorite type of cooking: outside on the grill. And, in honor of fathers everywhere, what better way to please his palate than stock up on some great recipes for him to prepare? Dads are not always the first to rush into the kitchen after a hard day at work and prepare dinner. But, on weekends when everyone is relaxed, he will fire up that grill and cook. It would be particularly nice of you were able to share some recipes your special dad actually uses, but also great if you simply want to send along some for all of us to enjoy. Your submissions can also include side dish recipes that are accompaniments to your favorite grilling recipes. Let's have a great June theme by sending in some favorites today for when you Fire Up That Grill!

Note: Because the American holiday of Memorial Day is on May 31st and an ideal time to use your theme recipes, we will post the June theme while still in the month of May. And, we normally ask that only two recipes be submitted for theme issues. Because you may have some tasty side dishes for this theme, you may send those along with your two entree submissions. Ready, set, get firing!

A to Z Recipes continues with its popular Theme Issues. We will share theme recipes and post them on the first Sunday of each month. Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in TWO of your favorite theme recipes (plus side dishes) and in ONE email. If the number of recipes exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.

The rules are as follows:

As a service to your fellow readers, please send only recipes that are in a form that others could easily copy and save for their own use. Recipes that would require a lot of editing or cleaning up or use non-standard measurements should not be submitted. Recipes without a name and location of sender may NOT be posted or posted without any credit given. There will be NO recipes posted that are from other recipe-zines. A to Z Recipes protects the privacy of its readers and does NOT publish email addresses. There will be no exceptions.

The deadline for June's theme issue is Friday, May 28th.

6. I signed up for an exercise class and was told to wear loose-fitting clothing. If I HAD any loose-fitting clothing, I wouldn't have signed up in the first place!

9. Wouldn't it be nice if whenever we messed up our life we could simply press 'Ctrl Alt Delete' and start all over?

12. Why do I have to swear on the Bible in court when the Ten Commandments cannot be displayed in a federal building?

FASHION ADVICE

Many of us "Old Folks" (those near 50, over 50, or WAY over 50) are quite confused about how we should present ourselves. We're unsure about the kind of image we are projecting and whether or not we are correct as we try to be nice and conform to the fashions that the designers in NYC, California, and/or Paris inflict upon the world.

So I made a sincere study of the situation and here are the results. I don't want to burst your bubble, but despite what you may have seen on the streets, the following combinations DO NOT go together and thus should be avoided:

1. A nose ring and bifocals

2. Spiked hair and bald spots

3. A pierced tongue and dentures

4. Miniskirts and support hose

5. Ankle bracelets and corn pads

6. A belly button ring and a gall bladder surgery scar

7. Unbuttoned disco shirts and a heart monitor

8. Midriff shirts and a midriff bulge

9. Bikinis and liver spots

10. Short shorts and varicose veins

11. In-line skates and a walker

Please keep these basic guidelines foremost in your mind when you shop !

WALDORF SALAD

2 C diced apples
1 C chopped celery
1/2 C broken nuts
1/4 C mayonnaise

Prepare apples last so they will not discolor. Combine all ingredients. Mix well. Chill. Serve on lettuce leaves.



ASPARAGUS GOLDENROD

3 hard-cooked eggs
1 pound fresh asparagus
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
1/2 teaspoon salt
Dash pepper
1 cup milk
1 tablespoon snipped fresh tarragon or 1 teaspoon dried tarragon, crushed
4 to 6 slices toast, cut in half diagonally
1 tablespoon snipped, fresh chives

1. Cut the eggs in half. Set egg yolks aside. Chop egg whites and set aside.

2. Scrape scales from asparagus. Break off woody bases where spears snap easily. If you like, slice the spears diagonally into 2- to 3-inch pieces. Place the pieces in a steamer basket over, but not touching, boiling water. Cover and reduce the heat. Steam for 5 to 8 minutes or until the asparagus is crisp-tender.

3. Meanwhile, prepare white sauce: In a medium saucepan, melt the butter or margarine. Stir in flour, salt, and pepper. Add the milk all at once. Cook and stir over medium heat until the mixture is bubbly. Cook and stir for 1 minute more.

4. Add the tarragon and the chopped egg whites. Heat the mixture through.

5. Arrange 2 toast points on each warm serving plate. Top with the asparagus. Spoon on the white sauce. Press the yolks through a sieve over each serving. Top with the chives.

Makes 4 to 6 side-dish servings.

BLACKBERRY KETCHUP

2 1/2 lbs ripe blackberries (8 1/2 cups)
1 1/2 cups brown sugar
1 3/4 cups granulated sugar
2 1/2 cups cider vinegar
2 1/2 tsp ground cinnamon
2 tsp salt
1 1/2 tsp ground ginger
1 tsp ground allspice
1/2 tsp ground cloves
1/4 tsp ground black pepper

Mix berries, sugars and vinegar in a heavy saucepan. Heat until mix comes to a boil, mash the berries with a spoon or place in food processor until the berries are liquefied. Strain mix back into saucepan. Add cinnamon, salt, ginger, allspice, cloves and black pepper and reduce mix over low heat until it coats the back of spoon. If it reduces too much, you can thin it out with a little water. Makes 5 cups.



SUMMER CORN SOUP
Makes 6 cups or 6 first-course servings

4 medium-sized ears corn
1 medium-sized onion
1 medium-sized celery stalk
2 tablespoons salad oil
3 ?? cups milk
?? 8-ounce package pasteurized
process cheese spread
?? cup chunky-style hot salsa
cilantro sprigs for garnish

About 30 minutes before serving:
Remove husks and silk from corn. Cut corn kernels from cob. Dice onion and celery.

In 5-quart Dutch oven or saucepan over medium heat, in hot salad oil, cook corn, onion and celery until tender but not browned, about 15 minutes, stirring occasionally.

When vegetables are tender, stir in milk; heat to boiling. Add cheese and salsa, stirring until cheese melts and soup is heated through. Lade soup into 6 bowls; garnish each with cilantro sprig.



BABY SWISS STUFFED PORTABELLAS
Serves 4

4 extra large Portabellas
3 tablespoons Olive oil
1/2 cup Onions, minced
1-2 cloves Garlic, minced
1 Red pepper, diced
3 tablespoons Celery, chopped
2 tablespoons Flour
3/4 cup Light cream
1 and 1/2 cups Baby Swiss, shredded

METHOD OF PREPARATION:

1. Preheat oven to 350 degrees.

2. Scrape the black underside of the mushrooms (mantle) with a spoon and discard.

3. Trim stems from the mushrooms and chop fine.

4. Heat the oil in a skillet and when hot add the mushroom stems, onion, garlic, pepper and celery. Saut?© 2 to 3 minutes, then dust the mixture with flour.

5. Add the cream and cook until thick, stirring often. Remove from heat and add half of the cheese. Mix well. Divide mixture equally in the mushroom caps. Sprinkle with the rest of cheese.

6. Set aside and let cool. Bake for 15 minutes or until lightly browned, serve at once.

Heart Healthy...




CHERRY BLOSSOM MUFFINS

1/4 c. egg substitute
2/3 c. orange juice
2 Tbsp. sugar
2 Tbsp. vegetable oil
2 c. low fat buttermilk baking mix
1/2 c. chopped pecans
1/2 c. sugar free cherry fruit spread

In a bowl, combine egg substitute, orange juice, sugar and oil. Add baking mix; stir for 30 seconds. Fold in pecans. Coat muffin cups with nonstick spray, or use muffin liners; fill cups 1/3 full. Top each with 2 tsp. fruit spread; cover with remaining batter. Bake at 400 degrees for 20-25 minutes. Cool in pan for 10 minutes before removing.

Yield: 9 muffins.

Diabetic Exchange:
One muffin = 2 starch, 2 fat; 241 calories, 330 mg sodium, trace cholesterol, 36 gm carbohydrate, 4 gm protein, 10 gm fat.

For Two...



PORK CHOPS WITH BROWN RICE

For One----
1?? tsp. oil
1 pork chop
1/2 cup beef broth
2 tbs. dry white wine
1/2 carrot, cut into julienne strips
2 tbs. chopped onion
dash marjoram
dash oregano
salt and pepper
1/4 cup uncooked brown rice

For Two----
1 tbs. oil
2 pork chop
1 cup beef broth
1/4 cup dry white wine
1 carrot, cut into julienne strips
1/4 cup chopped onion
dash marjoram
dash oregano
salt and pepper
?? cup uncooked brown rice

Heat oil in an ovenproof skillet over medium-high heat. Brown meat well, remove from pan and set aside. Drain excess fat from pan. Add broth, wine, car-rot, onion and seasonings to pan and bring to a boil. Stir in rice and arrange pork chops over all. Remove from stovetop, cover and bake in a 350-degree oven for 1 hour or until liquid is absorbed

CRAB QUICHE

1 (9 inch) deep dish frozen pie crust
4 eggs
1 cup heavy cream
1/2 teaspoon salt
1/2 teaspoon black pepper
3 dashes hot pepper sauce (e.g. Tabasco?„?), or to taste
1 cup shredded Monterey Jack cheese
1/4 cup grated Parmesan cheese
1 (8 ounce) package imitation crabmeat, flaked
1 green onion, chopped

Directions
1 Preheat the oven to 350 degrees F (175 degrees C). Bake the pie crust for about 10 minutes, until just starting to brown. Remove from the oven, and allow to cool.

2 In a large bowl, whisk together the eggs, cream, salt, pepper, and hot sauce. Stir in shredded cheese, onion and imitation crab. Pour into the pie shell.

3 Bake for 25 to 30 minutes in the preheated oven, then turn off the oven, but leave the door closed. Leave quiche in the oven for an additional 20 to 30 minutes until firm. This will give it a smoother texture.
