You knew it was going to happen...its Monday. While it may not seem like
welcome news to you, it is 'ok' by me as it brings me closer to a day off. lol.
Yes, doing shift work can make life interesting. It can also have its secret
rewards, like making Mondays a little better. I must admit, this particular
Monday brings me closer to returning to the worst piece of furniture I've sat in
lately: the dental chair. I won't go there this morning...
If you're looking for great recipes and a little lift you've come to the right
place. This issue has lots of both. And it is through the kindness of others
that you are reading it. I hope you appreciate what our a2z family does for you
every day here. Oh, if you tried to vote yesterday, you may have encountered

We tend to think of beef as being more fattening than chicken breast. However, a 3 ounce serving of Beef Eye of Round contains 142 calories and 4.2 grams of fat (1.5 of which is saturated). The same amount of roasted, skinless chicken breast contains 140 calories and 3 grams of fat (0.8 saturated). Choose your beef cuts carefully and you can enjoy it frequently.

A to Z Recipes Family Reunion Plans
My family is planning a road trip in late June and I'd love to meet some of you along the way. We will be driving to Florida (from the Houston, Texas area). We had wanted to take this trip last year and could not afford to (not that we can now, lol). Unfortunately, the person my children most wanted to see for the first time in their lives, their paternal grandfather, died a few weeks ago. I'd like to ensure that they see the remaining relatives while all enjoy good health. If you live near one of these cities, maybe some of us can finally meet, face to face.
How about a cup of coffee? Great! Let's meet! Here is my schedule for when and where I will be:
-Wednesday morning, June 23rd, Biloxi, MS
-Saturday morning, June 26th, Orlando, FL
-Tuesday morning, June 29th, New Orleans, LA

Next Monthly Theme...
Fire Up That Grill!
What a perfect June theme topic. Yes, in most parts of the a2z world, the weather will be conducive to that all-time favorite type of cooking: outside on the grill. And, in honor of fathers everywhere, what better way to please his palate than stock up on some great recipes for him to prepare? Dads are not always the first to rush into the kitchen after a hard day at work and prepare dinner. But, on weekends when everyone is relaxed, he will fire up that grill and cook. It would be particularly nice of you were able to share some recipes your special dad actually uses, but also great if you simply want to send along some for all of us to enjoy. Your submissions can also include side dish recipes that are accompaniments to your favorite grilling recipes. Let's have a great June theme

Note: Because the American holiday of Memorial Day is on May 31st and an ideal time to use your theme recipes, we will post the June theme while still in the month of May. And, we normally ask that only two recipes be submitted for theme issues. Because you may have some tasty side dishes for this theme, you may send those along with your two entree submissions. Ready, set, get firing!
A to Z Recipes continues with its popular Theme Issues. We will share theme recipes and post them on the first Sunday of each month. Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in TWO of your favorite theme recipes (plus side dishes) and in ONE email. If the number of recipes exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.
The rules are as follows:
As a service to your fellow readers, please send only recipes that are in a form that others could easily copy and save for their own use. Recipes that would require a lot of editing or cleaning up or use non-standard measurements should not be submitted. Recipes without a name and location of sender may NOT be posted or posted without any credit given. There will be NO recipes posted that are from other recipe-zines. A to Z Recipes protects the privacy of its readers and does NOT publish email addresses. There will be no exceptions.

ASIAN BEEF AND NOODLES
Serves 4

2 TBSP vegetable oil
1# top sirloin, thinly sliced
2 3-oz pkg Oriental flavor instant Ramen noodles, broken into small pieces
2 c broccoli florets, halved if large***
1 c thinly sliced carrots, cut diagonally***
1 c thinly sliced mushrooms***
1/2 c seeded and thinly sliced red bell peppers***
2 c water
1/2 tsp ground ginger
1 c snow pea pods
1/2 c sliced water chestnuts
1/2 c fresh or frozen peas
2 TBSP thinly sliced scallions or green onions
*** I use the frozen package of stir-fry vegetables instead of all of these individually
In a large skillet over medium-high heat, add the oil. Cook the beef for 3 minutes. Remove the meat and toss with 1 seasoning packet from the noodles. Set aside.
Add the broccoli, carrots, mushrooms, and red peppers and saut?© until almost cooked through, 8-10 minutes, stirring frequently.
***If using frozen vegetables thaw, and add with water etc. Add the water, ginger, noodles, and remaining seasoning packet and stir to combine.
Bring to a boil.
Add the snow pea pods, water chestnuts, and peas.
Reduce the heat and simmer for 5 to 8 minutes, or until the noodles are tender, stirring occasionally.
Add the beef and scallions and stir to combine. Cook for 1 minute.

SWEDISH MEATLOAF IN PASTRY

Pastry:
2-1/4 c flour
1 tsp salt
3/4 c cold unsalted butter, cut in small pieces
1 egg, cold
1/2 c sour cream, cold
Filling:
4 tbsp butter
4 oz fresh mushrooms, finely chopped
3 lbs ground beef, pork, ham, veal, or any combination
1/3 c chopped onion
1/4 c chopped fresh parsley
1 c grated Swiss cheese
1 egg + 2 tbsp milk
Grease the bottom of a 10-1/2" x 15-1/2" jelly roll pan with butter.
Pastry: It's easiest to make this pastry in a food processor. In a small bowl, mix egg and sour cream. In the food processor, pulse the flour and salt until mixed. Add butter; process 15 seconds, until it has the consistency of coarse meal. With processor running, add egg mixture; process just until dough comes together. If you don't have a food processor, chill a large bowl, mix the flour and salt in the bowl, then cut in butter with a pastry blender or two forks. Stir in egg mixture just until you can form the dough into a ball. Wrap dough in waxed paper; refrigerate for 1 hour.
Divide dough in half. Roll each half into a 6" x 14" rectangle. Place one rectangle in prepared pan; set pan and remaining pastry aside.
Filling: Preheat oven to 375 degrees. Melt butter in a large skillet. Add mushrooms; cook over medium heat 6 minutes or until slightly colored. Add ground meat; cook until browned and until liquid in pan cooks away. Place meat mixture in a large bowl. Add onions, parsley, cheese, and milk; mix well.
Gather mixture into a ball; place onto dough rectangle in pan. Using your hands, press meat into a narrow loaf shape. Brush edges of dough with egg/milk mixture. Place the second dough rectangle over the meat. Using a fork, press the dough edges together to seal. Brush top of pastry with egg/milk mixture. Prick top with a fork in several places. Bake 45 minutes, until golden brown.
HEDGEHOGS

2 c. flaked coconut
2 c/ walnut meats
1 c. chopped dates
1 c. brown sugar, packed down
1 large egg
Mix ingredients together. Shape into logs or fingers. Bake 10-12 min. at 350F. Fingers should be about 2 inches long and 3/4 inches in diameter.
Note: Ends can be dipped in semi-sweet chocolate.
OLIVE PASTA
Vegetarian

Ingredients:
6 ounces thin pasta (capellini)
1/2 cup green olives, cut into quarters
1/3 cup red bell pepper, diced
1/3 cup green bell pepper, diced
2 cloves garlic, pressed or minced
Dash of cayenne
Paprika
1/4 to 1/2 teaspoon salt
1 1/2 tablespoons flour
1/4 to 1/3 cup extra-virgin olive oil
1/3 to 1/2 cup freshly grated Parmesan cheese
Cook the pasta to desired doneness. Drain, rinse in cold water, and set aside.
Saut?© olives, peppers, and garlic in a little water over medium heat until peppers are soft.
In a small bowl, mix cayenne, paprika (use 2 to 3 dashes), and salt with the flour. Add oil to vegetables. Sprinkle flour mixture over the olive and peppers and stir. Continue cooking over low heat for a few seconds.
Add the pasta and toss until all noodles are coated and olives are spread throughout. Toss the Parmesan cheese into pasta at the last minute and serve immediately.
CREAM CHEESE SHORTCAKE SQUARES

2 cups Bisquick basking mix
2 tablespoons sugar
2 tablespoons butter
1 package (3 ounces) cream cheese, softened
?? cup sugar
2 egg yolks
1 cup sour cream
1 teaspoon grated lemon peel
2 cups cut-up mixed fruit
Heat oven to 375?° F. Mix baking mix and 2 tablespoons sugar. Cut in butter. Press in ungreased square pan, 8x8x2 inches. Bake until edges are light brown, about 10 minutes.
Mix remaining ingredients except fruit; pour over baked layer. Bake until edges are golden brown, about 35 minutes. Serve with fruit.
Makes 9 servings.

Heart Healthy...
BAKED VEGETABLE CHIPS

- 2-3 lbs (900-1350 g) assorted root vegetables, such as sweet potatoes, russet potatoes, large carrots, daikon radishes, turnips, parsnips, rutabagas (Swedes), or beets, peeled and sliced as thinly as possible
- Salt
- Cooking spray
Sprinkle the vegetables lightly but evenly with salt and allow to stand at room temperature for 30 minutes. Rinse in cold water and dry completely with paper towels. Spray a baking sheet lightly with the cooking spray and arrange the sliced vegetables in a single layer on the sheet. Spray the vegetables lightly with cooking spray and bake in a preheated 275 (130C) oven for 40 to 60 minutes. Check the vegetables frequently and remove them as they are dry. They will become more crisp as they cool. Season with salt and store in an airtight container for up to two weeks.
Makes about 4 to 6 cups (1 - 1.5 L), to serve 4 to 6.

CORNED BEEF WAFFLE GRILL

4 slices white or whole wheat bread
4 slices American cheese
Sliced corned beef
Soft butter
For each sandwich, cover bottom slice of bread with a cheese slice, corned beef and second slice of cheese and bread. Spread outside of the sandwich with butter and grill in a hot waffle iron until golden brown.

PHILLY STEAK SANDWICH
Ingredients:
1 pound beef sirloin, cut into thin 2-inch strips
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika
1/2 teaspoon chili powder
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme
1/2 teaspoon dried marjoram
1/2 teaspoon dried basil
3 tablespoons vegetable oil
1 onion, sliced
1 green bell pepper, julienned
3 ounces Swiss cheese, thinly sliced
4 hoagie rolls, split lengthwise
Preparation:
1 Place the beef in a large bowl. In a small bowl, mix together salt, pepper, paprika, chili powder, onion powder, garlic powder, thyme, marjoram and basil. Sprinkle over beef.
2 Heat half of the oil in a skillet over medium high heat. Saut?© beef to desired doneness, and remove from pan. Heat the remaining oil in the skillet, and saut?© the onion and green pepper. Preheat oven on broiler setting.
3 To serve, divide the meat between the bottoms of 4 rolls, layer with onion and green pepper, then top with sliced cheese. Place on cookie sheet, and broil until cheese is melted. Cover with tops of rolls, and serve.
