Good morning. It is a sunny and hot one here. I would imagine that most of
the a2z family will have the same weather report. In March when I spoke of
bright sun and heat, many of you wrote to compare your snow and cold
temperatures. And some of you wouldn't trade weather with me. Some folks like
the snow and chilly weather. I do too...in post cards! LOL. Does anyone
send those any more? I guess I could send you some mosquitoes as we will soon
have them to spare. I know that every creature serves a purpose in the scheme of
things but I believe mosquitoes sneaked onto the ark...and not just by twos,
either.
Don't forget! Today is the deadline for your favorites for Sunday's theme
issue Fire Up That Grill! Make sure to get them in to me so you can take
part in what looks to be at least one great issue. Thanks in advance.
We've got a little bit of everything in this issue for you. There's something
for everyone in the Favorites section. We have quite a variety for you. As
always, there's something to make you think and laugh, so please join me in

minute, cool slightly, and apply the mixture to your hands for soothing relief
from arthritis pain.
Heinz vinegar to heal bruises... Soak a cotton ball in white vinegar and

Your response to Shannon regarding the ???Chipped??? Ham was so great! The number 4
answer was correct. I grew up just outside Pittsburgh and lived and worked in
the city until my marriage. Isaly??™s was the place to buy the ham and, also their
???skyscraper??? ice cream cones. I am enclosing a recipe using the ham for bar-b-que.
It is one that came from a family member and I always remember it. I left the
Pittsburgh area nearly 48 years ago, and I have had to convince many deli
workers to shave the ham thinner. It should be nearly paper thin. Thanks for the
memories of Islay??™s and thanks for the extra mile that you go to help your a2z
friends.

Recipe for ???Ham Bar-B-Ques??? using ???Chipped Ham???
1 bottle catsup
1 stalk celery, diced fine
1 tsp. dry mustard
?? C. water
1 small onion, diced fine
2 Tbsp. brown sugar
1 tsp. Worcestershire Sauce
?? to ?? C. green pepper, diced fine
1/3 C. vinegar
salt and pepper, to taste
Cook over low heat for 3-4 hours, stirring occasionally. Add chipped ham about
half an hour before serving. The amount of ham depends on each individual. This
is not a thick sauce, so add the amount of meat to be covered with sauce, but
still not be too thin. Usually 1-1/2 lbs. does it .Serve hot on buns.

A to Z Recipes Family Reunion Plans
My family is planning a road trip in late June and I'd love to meet some of you along the way. We will be driving to Florida (from the Houston, Texas area). We had wanted to take this trip last year and could not afford to (not that we can now, lol). Unfortunately, the person my children most wanted to see for the first time in their lives, their paternal grandfather, died a few weeks ago. I'd like to ensure that they see the remaining relatives while all enjoy good health. If you live near one of these cities, maybe some of us can finally meet, face to face.
How about a cup of coffee? Great! Let's meet! Here is my schedule for when and where I will be:

Next Monthly Theme...
Fire Up That Grill!
What a perfect June theme topic. Yes, in most parts of the a2z world, the weather will be conducive to that all-time favorite type of cooking: outside on the grill. And, in honor of fathers everywhere, what better way to please his palate than stock up on some great recipes for him to prepare? Dads are not always the first to rush into the kitchen after a hard day at work and prepare dinner. But, on weekends when everyone is relaxed, he will fire up that grill and cook. It would be particularly nice of you were able to share some recipes your special dad actually uses, but also great if you simply want to send along some for all of us to enjoy. Your submissions can also include side dish recipes that are accompaniments to your favorite grilling recipes. Let's have a great June theme

Note: Because the American holiday of Memorial Day is on May 31st and an ideal time to use your theme recipes, we will post the June theme while still in the month of May. And, we normally ask that only two recipes be submitted for theme issues. Because you may have some tasty side dishes for this theme, you may send those along with your two entree submissions. A to Z Recipes continues with its popular Theme Issues. We will share theme recipes and post them on the first Sunday of each month. Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in TWO of your favorite theme recipes (plus side dishes) and in ONE email. If the number of recipes exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.
The rules are as follows:
As a service to your fellow readers, please send only recipes that are in a form that others could easily copy and save for their own use. Recipes that would require a lot of editing or cleaning up or use non-standard measurements should not be submitted. card, invite her to your apartment for a home-cooked meal?"
The young fellow thinks that is a great strategy and arranges a date for a week
later. The day after the big date, his mother calls to see how things had gone.
"The evening was a disaster," he moans.
"Why, didn't she come over?" his mother asks.
"Oh, she came over," he says. "But she refused to cook."

Farmer John

Farmer John lived on a quiet rural highway. But, as time went by, the traffic
slowly built up at an alarming rate. The traffic was so heavy and so fast that
his chickens were being run over at a rate of three to six a day.
So one day Farmer John called the sheriff's office and said, "You've got to do
something about all of these people driving so fast and killing all of my
chickens."
"What do you want me to do?" asked the sheriff.
"I don't care, just do something about those crazy drivers!"
So the next day he had the county workers go out and erected a sign that said:
SLOW:
SCHOOL CROSSING
Three days later Farmer John called the sheriff and said, "You've got to do
something about these drivers. The 'school crossing' sign seems to make them go
even faster."
So, again, the sheriff sends out the county workers and they put up a new sign:

CHILDREN AT PLAY
That really sped them up. So Farmer John called and called and called every day
for three weeks. Finally, he asked the sheriff, "Your signs are doing no good.
Can I put up my own sign?"
The sheriff told him, "Sure thing, put up your own sign." He was going to let
the Farmer John do just about anything in order to get him to stop calling
everyday to complain. The sheriff got no more calls from Farmer John. Three
weeks later, curiosity go the best of the sheriff and he decided to give Farmer
John a call.
"How's the problem with those drivers. Did you put up your sign?"
"Oh, I sure did. And not one chicken has been killed since then. I've got to go.
I'm very busy." He hung up the phone.
The sheriff was really curious now and he thought to himself, "I'd better go out
there and take a look at that sign... it might be something that WE could use to
slow down drivers..."
So the sheriff drove out to Farmer John's house, and his jaw dropped the moment
he saw the sign. It was spray-painted on a sheet of wood:

ANTIPASTO

Chop fine the following:
1 very large cauliflower
2 tins (reg) black ripe olives
1-16 oz can broken green olives
2-12 oz jars pickled onion,
1-10 oz tins mushroom stems and pieces
2-large green peppers, chopped
1-4 oz tins pimentos4-15 oz bottles of Heinz ketchup
1-15 bottle of hot ketchup
1-48 oz jar of mixed pickles
2 red peppers (sweet)
1 can of French style green beans drained
2 carrots, diced and blanched for 3 min.
Chop fine but do not make mush of it. About the size of small peas. Now simmer
in 8 oz. olive oil for 10 minutes. Stir often.
Rinse and drain the following:
2 tins anchovies, chopped
2-7 oz tins of solid pack tuna, broken up into small pieces
3 tins (small cans) broken shrimp
Add the fish to the hot veggies. Put in pint jars and water pack it for 15
minutes in a water bath.
This is served with crisp crackers or melba toast.
Notes: I also add a jar of sweet pickles. It makes it nice.
HOMEMADE AMARETTO

2 cups sugar
2 cups water
2 cups vodka
2 cups brandy
3 to 4 teaspoons almond extract
In medium saucepan combine sugar and water. Bring to boiling. Reduce heat and
simmer, uncovered, for 10 minutes, stirring occasionally. Remove from heat. Stir
in vodka, brandy and almond extract. Transfer to tightly covered decanter or
pint or quart jars.
Makes 6 cups
PUMPKIN CIDER BREAD

1 cup apple cider
1 cup canned pumpkin puree
2 large eggs
?? cup vegetable oil
?? cup light brown sugar
2 tablespoons freshly grated orange zest
2 cups flour
2 teaspoons baking powder
?? teaspoon salt
?? teaspoon baking soda
?? teaspoon ground mace
?? teaspoon cinnamon
1/8 teaspoon ground cloves
?? cup chopped walnuts
Boil cider until reduced to about ?? cup and let cool. Whisk together pumpkin,
eggs, oil, brown sugar, zest and reduced cider. Add flour and rest of
ingredients and stir just till combined. Transfer to well-buttered 8 ?? by 4 ?????
loaf pan and bake at 350F for 1 hour.
MEXICAN CASSEROLE
Serves 6

1 and 1/2 cups Tortilla chips, crushed
1 pound Chicken, cooked & diced
1 can Kidney Beans, drained
1 can Garbanzo beans, drained
1 cup Tomato sauce
1 cup Salsa
1 cup Red onion, diced
1 Green pepper, diced
1/4 cup Cilantro, chopped
Salt and pepper To taste
1 and 1/2 cups (12 ounces) Cheddar cheese, shredded
GARNISH:
1 cup Sour cream
1 cup Tomatoes, diced
1/2 cup Red onion, diced
METHOD OF PREPARATION
Preheat oven to 350 degrees. Lightly oil a 13 x 9-inch baking dish. Sprinkle the
tortilla chips on the bottom. Set aside.
In a bowl, add the chicken, the beans, corn, tomato sauce, salsa, onion,
peppers, and cilantro. Mix well. Season with salt and pepper.
Place one half of the chicken mixture on the tortilla chips. Top with half of
the cheese add the remaining chicken mixture. Then place the remaining cheese on
top.
Bake for 30 to 35 minutes, then remove from heat and let set for 10 minutes.
Serve with sour cream, diced tomato and onions.
SPICY CHICKEN WITH COCONUT-LIME SAUCE

4 chicken thighs
4 chicken drumsticks
3 tablespoons peanut oil
1/2 cup sliced green onions
1/2 cup salsa
1 tablespoon minced garlic
2 dried red hot peppers
1 teaspoon curry powder
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1 can (13.5 oz.) coconut milk
1/2 cup fresh lime juice
3 cups cooked rice
lime slices
red hot peppers
1/2 cup grated coconut
In large nonstick fry pan, place oil over medium high heat. Add chicken and cook
about 5 minutes to brown on all sides; remove from fry pan and keep warm. To fry
pan, add onions, salsa, garlic, peppers, curry powder, salt and pepper; cook
about 2 minutes, stirring, until onion is browned. Return chicken to pan; pour
coconut milk and lime juice over chicken. Simmer on low heat about 30 minutes or
until fork can be inserted in chicken with ease. Remove and discard peppers. On
serving platter, place rice and arrange chicken mixture on top. Garnish with
lime slices and red hot peppers. Sprinkle lightly with coconut and pass
remainder.
Makes 4 servings.

Heart Healthy...
CORN CAKES WITH CHILES AND SQUASH
A vegetarian dish.

Ingredients:
1 cup cubed sun blossom squash (1/2-inch cubes)
1 tablespoon finely chopped fresh jalapeno or Poblano chile
Seasoned salt
2/3 cup cornmeal
2/3 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
1 small egg
2/3 cup milk or soy milk
1/4 cup unrefined vegetable oil
2 tablespoons honey
1/2 cup grated smoked Gouda cheese (or smoked Cheddar)
Saut?© squash and chiles in a little water over medium-high heat for about 2
minutes. Add seasoned salt to taste. Set aside.
In a mixing bowl, combine cornmeal, flour, baking powder, and salt. In a
separate cup or small bowl, lightly beat egg and milk together. Add milk-egg
mixture, 1/4 cup vegetable oil, and honey to dry ingredients and stir until
batter is smooth, about 30 to 40 strokes.
Add squash to mixture and cheese to batter.
Brush the bottom of a nonstick skillet with a small amount of oil over medium
heat and spoon portions of batter equaling 2 tablespoons per pancake into heated
skillet. Cook each corn cake until both sides have browned. Serve immediately.

For Two...
GINGER-MARINATED PORK TENDERLOIN

A pork tenderloin is too much meat for one person, but you'll be happy to have
leftovers for the fried rice with pork and kale.
Active time: 15 min
Start to finish: 3 3/4 hr (includes marinating)
1 2/3 cups chicken broth (13 1/2 fl oz)
1/4 cup soy sauce
1/4 cup packed brown sugar
3 tablespoons ketchup or 2 tablespoons tomato paste
3 tablespoons finely grated peeled fresh ginger
3 garlic cloves, minced
1 tablespoon cider vinegar or balsamic vinegar
1 (3/4-lb) pork tenderloin
1 tablespoon olive oil
Special equipment: an instant-read thermometer
Whisk together 2/3 cup broth, soy sauce, brown sugar, ketchup, ginger, garlic,
and vinegar and pour into a large sealable plastic bag. Add tenderloin and seal
bag, then marinate, chilled, turning bag over occasionally, 2 hours. Bring
tenderloin to room temperature, about 1 hour. Put oven rack in middle position
and preheat oven to 425?°F. Pat tenderloin dry and reserve marinade. Heat oil in
a 12-inch ovenproof skillet over moderately high heat until hot but not smoking,
then brown tenderloin on all sides, turning with tongs, about 3 minutes total.
Transfer skillet to oven and roast pork until thermometer inserted diagonally
into center of meat registers 155?°F, 12 to 15 minutes. Transfer to a cutting
board and let stand, loosely covered with foil, 10 minutes. While meat is
roasting, pour marinade through a fine-mesh sieve into a small saucepan and boil
until reduced to about 1/3 cup, 10 to 15 minutes. Stir in remaining cup broth
and bring sauce to a simmer. Serve slices of tenderloin with sauce.
Cooks' note:
Pork keeps, wrapped tightly in foil and chilled, 3 days.
Makes 1 serving (with leftovers).

A Kraft Kitchens recipe
Prep Time: 10 min
Total Time: 1 hr 25 min
Makes: 4 servings
3/4 cup SEVEN SEAS VIVA Italian Dressing, divided
1 lb. boneless skinless chicken breasts, cut into strips
2 Tbsp. crunchy peanut butter
2 Tbsp. honey
2 Tbsp. soy sauce
1/2 tsp. crushed red pepper
1 bag (8 oz.) fresh sugar snap peas, rinsed, drained
8 oz. thin spaghetti, cooked, drained
POUR 1/4 cup of the dressing over chicken in medium bowl; toss to coat. Cover.
Refrigerate 1 hour to marinate. Remove chicken from dressing; discard dressing.
MIX remaining dressing, peanut butter, honey, soy sauce and crushed red pepper
with wire whisk until well blended; set aside.
COOK and stir chicken in large skillet on medium-high heat 5 minutes. Add pea
pods; cook and stir an additional 3 minutes or until chicken is cooked through.
Remove skillet from heat. Add dressing mixture and spaghetti; toss lightly.
Serve immediately or cover and refrigerate until ready to serve.
Safe Food Handling:
Cutting boneless skinless chicken breasts into pieces can be a slippery task.
Make it safer and prevent the knife from slipping by cutting the chicken while
it is partially frozen. The firmer chicken is much easier to cut and handle.
