Now it is merely scorching hot, which is what we're used to anyway. We simply crank up the air conditioner and make the best of it. Actually, the utility companies make the best of it, don't they?

Next Monthly Theme...
Star Spangled Recipes
So, what would a theme so named mean, exactly? Well, I am hoping to liven things up a bit around the a2z house. What we'll be looking for in the month of June (hint: the theme issue is to be posted on July 4th) are recipes that either have "red" "white" and/or "blue" in the title - or - recipes that are red, white, and/or blue in appearance. It's really simple and could be great fun.
Here are some examples:
"Beet Salad" (red in appearance)
"White Chocolate Mousse" ("white" in appearance and title)
"Mom's Blue Cheese Dressing" ("blue" in title)
"Strawberry Cream Pie" ("red" and "white" in appearance)
"Blueberry Pancakes" ("blue" in appearance and title)
"Creamy Fruit Salad" ("red" cherries, "blue" berries, "white" whipped cream)
For those of you who find themes difficult because you do not have recipes of a certain persuasion, the gig is up??Ševeryone has a recipe that will fit in here. I am looking forward to first-time participants as well as our "regulars". Now is a perfect time to spend a few minutes sending in a recipe to share. If you don't, I will certainly be "blue".
Here is the recipe submission set of rules:
A to Z Recipes continues with its popular Theme Issues. We will share theme recipes and post them on the first Sunday of each month. Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in TWO of your favorite theme recipes and in ONE email. If the number of recipes exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.
The rules are as follows:
As a service to your fellow readers, please send only recipes that are in a form that others could easily copy and save for their own use. Recipes that would require a lot of editing or cleaning up or use non-standard measurements should not be submitted. Recipes without a name and location of sender may NOT be posted or posted without any credit given. There will be NO recipes posted that are from other recipe-zines. A to Z Recipes protects the privacy of its readers and does NOT publish email addresses. There will be no exceptions.
The deadline for July's theme issue is Friday, June 25th.
Theme recipes must have subject: "Star Spangled Recipes" and will be posted on Sunday, July 4th.

Crazy Corner...

A truck driver who was already having a bad day, was driving down the highway, when a car driven by a blonde cuts him off right before a stop light.?
The truck driver was furious! He honked and honked till he got her attention, and told her to pull over.?
The blonde pulls over, gets out of her car, and asks what the problem is.?
He drew a circle with chalk on the road, and said, "I want you to stand right there in that circle and don't move!" and she
does...?
The trucker goes into his rig, gets his knife out, and goes up to the blonde's car and starts destroying her seats...?
As he goes back over to the blonde, she has a smirk on her face.?
Even more angry now, the trucker goes into his rig, and takes out his beat stick.... goes back over to her car and starts busting out the windows....?
This time he goes up to the girl and she is just laughing hysterically.?
Confused and extremely angry, he asks her, "What on EARTH is SO FUNNY?!! I just destroyed your car and you've been laughing the whole time...."?
The blonde just giggles and says, "Every time you turned your back away from me, I stepped out of the circle!"?

AFGHANISTAN DESERT
A fleeing Taliban, desperate for water, was plodding through the Afghanistan desert when he saw something far off in the
distance.
Hoping to find water, he walked toward the object, only to find a little old Jewish man sitting at a card table with neckties laid out on it.
The Arab asked, "My thirst is killing me. Please, do you have water?"
The Jew replied, "I have no water. Would you like to buy a tie? They are only $150. This one goes very nicely with your robes."
The Arab shouted, "Idiot! I do not need an overpriced tie. I need water!"
"OK," said the old Jew, "it does not matter that you do not want to buy a tie. I will show you that you have not offended me. If you walk over that hill to the east for about four miles, you will find a lovely restaurant. Go! Walk that way! The restaurant has all the water you need!"
The Arab begrudgingly thanked him, then staggered away toward the hill and eventually disappeared.
Four hours later the Arab came crawling back to where the Jewish man was sitting at his table.
The Jew said, "I told you, about four miles over that hill. Could you not find it?"
"I found it all right," rasped the Arab. "Your brother would not let me in without a tie."

BAKED POTATO SALAD

Makes 4 servings
Ingredients:
4 baking potatoes
12 ounces sour cream
3 chopped green onions
4 strips of cooked bacon, chopped
2 cups of shredded cheddar cheese
salt
pepper
Preparation:
Scrub four baking potatoes, pierce with fork and microwave on high for 12 minutes or until done. When done, place in large Ziploc bag and plunge into an ice bath until fully cooled.?
Cut potatoes (with skin) into 1/2-inch cubes.
In mixing bowl, combine potato cubes, sour cream, green onion, bacon and shredded cheese. Season with salt and pepper to taste. For added flavor, add chopped fresh rosemary and chives.?
Store in refrigerator. Serve chilled.
SPINACH ENCHILADAS

1 10-oz package frozen spinach, thawed and drained
1 onion, chopped
1 ?? tsp salt (or to taste)
1 cup grated cheddar cheese
12 tortillas (I prefer flour but you need to get small ones or adjust quantity)
1 package tofu
1 tsp onion powder
?? cup vegetable oil
?? cup water
2 4-oz cans chopped green chiles
FILLING: Place spinach, onion, ?? tsp salt and ?? cup cheese in a bowl and mix together. Spoon into tortillas, roll tightly and place in baking dish to which you have added sauce.
SAUCE: Put tofu, 1 tsp salt, seasonings, oil and water in a blender and whiz until smooth. Stir in chiles. Pour a little sauce into a sprayed 9 x 13 baking dish to just cover bottom. Place enchiladas into baking dish as you make them, cover with remaining sauce and cheese. Bake at 350 ?°F for 20-30 minutes or until bubbly.
BACON AND BRANDY BAKED BEANS
(Serves 16 - 20)

2 lb. small white beans
2/3 lb. slab bacon, in 1 piece (I use sliced bacon)
1 cup ketchup
1 cup molasses
2 T. Dijon Mustard
2 T. Powdered mustard
4 med. Onions, chopped
1 cup brandy
2 cups boiling water
2 t. cider vinegar
2 t. salt
1 t. ground pepper
1/8 t. hot pepper sauce
1. Rinse beans and soak overnight in 3 in. cold water, or bring to a boil for 2 min. and simmer 30 to 40 min, until tender but not mushy. Drain.
2. Preheat oven to 250 degrees. Cut rind off bacon and reserve. Cut bacon into 1 X ??" lardons.
3. In beanpot or casserole, combine beans, bacon, ketchup, molasses, mustards, onions, and brandy. Stir to mix. Add boiling water, cover & bake 2 ?? hours.
4. Season beans with vinegar, salt, pepper and hot sauce. Add more boiling water if they appear dry. Continue to bake at least 3 ?? hours longer, checking every hour. Add boiling water (1/2 cup at a time) as needed.
Beans can be eaten after 6 hours but are even better after 8 hours, or after being reheated the next day.
PECAN FUDGE PIE

1 9??? unbaked pie shell
?? C. butter
3 squares unsweetened chocolate
4 eggs
3 Tbsp. white corn syrup
1 ?? C. sugar
?? tsp. salt
1 tsp vanilla
1 C. chopped pecans
Melt butter and chocolate in the top of a double boiler. Let cool. Beat eggs until light; beat syrup, sugar, salt and vanilla into eggs. Add the nuts and then the cooled chocolate. Mix thoroughly and pour into pie shell. Bake at 350 for 25-35 minutes, until top is crusty and filling is soft but set. Serve plain or with ice cream or whipped cream.
CANADIAN BACON WITH ONION AND APPLE

(This dish is excellent with mashed potatoes or fried eggs.)
2 to 3 tablespoons butter
1 pound thick-cut Canadian bacon
1 large white onion, cut in rings
2 medium apples, unpeeled, cored
freshly ground black pepper
1 tablespoons chopped fresh parsley
Melt butter in heavy skillet and lightly fry bacon until golden. Remove and drain on paper towels. Keep warm.
Fry the onions rings in the remaining fat until soft. Add the apples cut into rings ?? inch thick. Cover and simmer for 5 to 10 minutes, shaking the pan from time to time to prevent sticking.
Return the bacon to the pan and heat through. Season with pepper, sprinkle with parsley and serve.

WHITE CHOCOLATE APRICOT MUFFINS

1 dozen (serving size: 1 muffin)
1 3/4 cups all-purpose flour
1/2 cup sugar
1 tablespoon minced crystallized ginger
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 ounces premium white baking chocolate, finely chopped
3/4 cup 1% low-fat milk
3 tablespoons butter or stick margarine, melted
1 large egg, lightly beaten
Cooking spray
1/2 cup apricot preserves
1 tablespoon sugar
Preheat oven to 400 degrees F.
Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 5 ingredients (flour through chocolate) in a medium bowl; stir well with a whisk. Make a well in center of mixture. Combine milk, butter, and egg; stir well with a whisk. Add to flour mixture, stirring just until moist.
Spoon about 1 tablespoon batter into each of 12 muffin cups coated with cooking spray. Spoon 2 teaspoons preserves into center of each muffin cup (do not spread over batter); top with
remaining batter. Sprinkle evenly with 1 tablespoon sugar.
Bake at 400 degrees F for 22 minutes or until muffins spring back when touched lightly in center. Remove from pan. Cool completely on wire rack.

COQ AU VIN
Cooking for 1 or 2

This classic French dish features chicken cooked in red wine.
-For 1-
1 tsp. Oil
2 tbs. Onion, Chopped
?? Clove garlic
?? lb. Chicken pieces
1 ?? tsp. Flour
1 ?? tsp. Minced parsley
?? Bay leaf
Pinch Thyme
Salt and pepper
?? Carrot, sliced
?? c. Mushrooms, fresh sliced
1 c. Red Wine
-For 2-
2 tsp. Oil
?? c. Onion, Chopped
1 Clove garlic
1 ?? lb. Chicken pieces
1 tbs. Flour
1 tbs. Minced parsley
?? Bay leaf
1/8 tsp. Thyme
Salt and pepper
1 Carrot, sliced
1 c. Mushrooms, fresh sliced
2 c. Red Wine
Place oil in a skillet over medium-high heat. Saut?© onion and garlic. Add chicken and brown well on all sides. Sprinkle with flour and seasonings. Add carrot, mushrooms and wine. Cover and simmer 1 hour. Remove bay leaf.

CRUNCHY GREEN BEAN CASSEROLE
Serves 6 - 8
Ingredients:
1 can (10 3/4 ounce) cream of mushroom soup
4 strips of crisp-fried bacon, crumbled
1 small can Water Chestnuts, chopped
3/4 cup milk
2 packages (9 ounces each) frozen cut green beans, thawed
-or-
2 cans (14.5 ounces each) cut green beans, drained
1 1/3 cups French fried onions
ground black pepper
Directions:
1. In a 1-1/2 quart casserole mix soup, milk, and pepper. Stir in bacon, water chestnuts and green beans.
2. Bake at 350 degrees F (175 degrees C) for 30 minutes (45 minutes if using thawed green beans) or until heated through, stir.
3. Top with French fried onions. Bake 5 minutes more or until the onions are golden.
