Good morning to everyone. I hope this finds you well. It was a busy weekend for many and I hope whatever kept you busy was enjoyable. For some, it was continued cleanup from the recent bad weather. For us it was laid-back and good. Yes, I am still struggling with mysterious pain in the last tooth I had temporarily crowned. So, today I will do what I have dreaded doing...going to another dentist for a second opinion. Seems the dentist who did the work cannot see past his own perfection, which has left me with pain I can only describe as a "raw nerve ending" and non-stop. It is not possible for me to work while under the medication he prescribed for pain. Let's face it, the pain should have subsided by now.

Today's issue should offer something to make you think and laugh. I think that combined with great recipes makes for a pleasant diversion. I hope you enjoy all that is here for you. Many thanks go out to all who helped in today's issue:

Whether this is a new car jacking scheme or not, the discussion makes totally good sense. Safety is foremost.

Be aware of new car-jacking scheme. Here's how it works:

You walk across the parking lot, unlock your car and get inside. Then you lock all your doors, start the engine and shift into REVERSE, and you look into the rearview mirror to back out of your parking space and you notice a piece of paper stuck to the middle of the rear window. So, you shift into PARK, unlock your doors and jump out of your car to remove that paper (or whatever it is) that is obstructing your view ... When you reach the back of your car, that is when the car-jackers appear out of nowhere, jump into your car and take off! Your engine was running, (ladies would have their purse in the car) and they practically mow you down as they speed off in your car. BE AWARE OF THIS NEW SCHEME THAT IS NOW BEING USED. Just drive away and remove the paper that is stuck to your window later, and be thankful that you read this email. I hope you will forward this to friends and family ... especially to women! A purse contains all identification, and you certainly do NOT want someone getting your home address. They already HAVE your keys!

We have humor, recipes to suit all tastes, information in the ???Did You Know??? and ???Ramblings??? sections. What more can we ask? What more do we expect of you? I don??™t have those answers, but I do know that you are surely appreciated by all of us.

Dear Lillian,

What you say makes great sense. Except...even if folks can't vote every day (like you and a handful of others), why can't they vote each day they read an issue? It takes one minute. I don't know, honey. I am perplexed by the numbers of folks who "vote every day" yet the votes do not seem to be there. Do you see what I am saying? If all one is asked is to give one minute in exchange for several hours given to them daily, what gives??  Is it because the registration process takes more time (all of 5 minutes - and only must be done once)?

Secret to number one ranking for A to Z Recipes:

For those who are not voting daily...voting even once a week will land us in the number one slot! Yes, it would mean at least 8,000 more votes each month. How about it?

Maybe we will never have the answers. I don't know. But, rest assured, we have the power to be number one. Yes, our group is small but we have the power. And such wonders that power can provide!

I am a bit of a purist when it comes to what I eat. However, I firmly believe that recipes using wild or weird meats and/or ingredients probably are delicious...so long as I don't know they are there. Do you have a recipe that uses an unusual ingredient or combination of ingredients that you'd like to share? Our a2z family who gathers regularly in the QT discussion forum thought this would be fun. Here is the recipe submission set of rules:

A to Z Recipes continues with its popular Theme Issues. We will share theme recipes and post them on the first Sunday of each month. Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in TWO of your favorite theme recipes and in ONE email. If the number of recipes exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.

The rules are as follows:

As a service to your fellow readers, please send only recipes that are in a form that others could easily copy and save for their own use. Recipes that would require a lot of editing or cleaning up or use non-standard measurements should not be submitted. Recipes without a name and location of sender may NOT be posted or posted without any credit given. There will be NO recipes posted that are from other recipe-zines. You fight the urge to put on your
winter coat and wool cap and parade

DOUBLE-CRUST LEMON PIE

2 large lemons
2 teaspoons grated lemon peel
2 cups sugar
1 teaspoon salt
4 eggs
pastry for 9-inch two-crust pie

Grate peel from lemons. Peel lemons, removing all white membrane. Cut lemons into very thin slices. Place lemon slices in medium bowl. Stir in lemon peel from two lemons, 2 teaspoons from two lemons, 2 teaspoons lemon peel, the sugar and salt. Set aside.

Heat oven to 425?° F. Prepare pastry. Pour eggs over lemon slices. Mix well. Pour into pastry-lined pie plate. Cover with top crust; seal and flute. Cover edge with 2- to 3-inch stripe of aluminum foil to prevent excessive browning; remove foil during last 15 minutes of baking.

Bake 45 to 50 minutes or until knife inserted 1 inch from edge comes out clean. Cool.

Provides 8 servings.

Per serving: 510 calories; 5 g protein; 76 g carbohydrates; 20 g fat; 105 mg cholesterol; 570 mg sodium, 85 mg potassium




BROCCOLI CAULIFLOWER SALAD

1 bunch fresh broccoli
1 head fresh cauliflower
1 lb bacon, fried crisp and crumbled
1/2 cup red onion, chopped fine
1/2 cup raisins

Dressing: 2 cups Mayonnaise, 1/2 cup sugar, 2 tablespoons of vinegar. (I use Miracle Whip and lessen the sugar.)

Make dressing and let set overnight, or at least 4 hours.

Clean broccoli and cauliflower and cut into bite size pieces. Add bacon, onion, optional raisins. Add dressing shortly before serving and mix well.

Serves 10-12....great to take to family reunions. I also like to sprinkle in a 1/2 cup of sunflower seeds.




BLUE CHEESE CREAM DRESSING

1/2 cup mayonnaise
1/2 cup dairy sour cream
1 tablespoon lemon juice
1/4 teaspoon salt
3 drops hot pepper sauce
1/2 cup crumbled blue cheese

Blend all ingredients except cheese with a whisk or fork. Stir in the blue cheese.

EAST TEXAS CANDIED YAMS

~Submitted by Donna, TX

(This is from a cookbook "Cowpasture Cooking" published by First State Bank, Rio Vista, TX in 1976. The cook for the bank, Ms. Jessie Fantroy, devoted 16 years to the family of LBJ at their lake house on Lake LBJ.)

2 pounds sweet potatoes
1 teaspoon lemon juice
1 teaspoon salt
1/2 stick margarine
1 cup sugar
1/2 cup light brown sugar
1/4 cup corn syrup

Cut yams in quarters and boil with lemon juice for 20 to 30 minutes until tender. Pour water off and put in 2 quart casserole. Put yams in baking dish and cover with other ingredients. Bake uncovered at 350 degrees for 30 minutes or until done.

Serves eight.




PICKLED EGGS

6 hard boiled eggs, peeled
1 3/4 cup cold water
1/4 cup vinegar
2 tsp. liquid smoke

Place hot eggs in a jar, add remaining ingredients. Cover and refrigerate several hours. I prefer overnight. Eggs may be kept in liquid smoke as long as desired.

6 servings.




BLUEBERRY OATMEAL BREAD

(Originally submitted for the Red, White, and Blue Theme)

Makes 1 loaf

Who can resist homemade blueberry quick bread? This large moist loaf uses skim milk and is lower in fat and sugar than most quick breads.

2 cups all-purpose or unbleached flour
1 cup quick-cooking rolled oats
3/4 cup sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1-1/4 cups skim milk
1/3 cup oil
2 tsp. vanilla
1 tsp. grated lemon peel
2 eggs, slightly beaten
1 cup fresh or frozen blueberries

Heat oven to 350F. Grease bottom only of 9x5-inch loaf pan.

Lightly spoon flour into measuring cup; level off. In large bowl, combine flour, rolled oats, sugar, baking powder, baking soda and salt; mix well.

In small bowl, combine milk, oil, vanilla, lemon peel and eggs; blend well. Add to dry ingredients; stir just until dry ingredients are moistened. Gently fold in blueberries. Pour into greased pan.

Bake at 350F for 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. cool completely. Wrap tightly; store in refrigerator.

1 (16-slice) loaf.

Nutrition Information (per slice): 170 calories (30% calories from fat); 4 g protein; 27 g carbohydrates; 6 g fat; 27 mg cholesterol; 160 mg sodium; 85 mg potassium;1 g dietary fiber.

Heart Healthy...




OREGANO COLESLAW

Sometimes you need a lighter healthier salad without all those gobs of heavy mayonnaise. This light salad is dressed with olive oil and herbs. It is tangy, crunchy and delicious.

Coleslaw Mix- 1/2 pound (store-bought in a bag)
Olive oil- 1/2 cup
Red Wine Vinegar- 1/4 cup
Oregano-1 tablespoon
Salt- 1/2 teaspoon
Black Pepper- 1/4 teaspoon
Onion- 1/2 medium size thinly sliced
Tabasco Sauce- 4 drops, or to taste

Place the coleslaw mix and onion slices in a large bowl. Combine all the other ingredients in a separate bowl and mix well. Pour the dressing over the coleslaw-onion mixture and toss.

For Two...



STRAWBERRY KIR ROYALE

2 cups halved strawberries
1 tablespoon sugar
?? cup champagne
1 tablespoon cr??me de cassis

Mix the strawberries and sugar and divide between 2 champagne glasses. Divide champagne and cassis over top.

Serves 2.

BEEF AND NOODLE CASSEROLE

A quick and easy casserole - very tasty and attractive too, with all the colorful layers!

Ingredients:
2 cups cooked egg noodles
1 pound ground beef
1 can (15 oz.) tomato sauce
1-2 cloves garlic, minced
salt and pepper
1 package (4 oz.) cream cheese, softened
1 cup sour cream
2 green onions, chopped
1 cup grated cheddar cheese

Directions:
Preheat oven to 350 degrees F.

Spread cooked noodles in the bottom of a medium casserole dish (2 quart).

In a frying pan brown ground beef and garlic. Drain and discard fat.

Add tomato sauce to the meat, heat and simmer for 15 minutes. Season with salt and pepper to taste.

Pour meat mixture over the noodles in casserole dish.

In a small bowl combine the cream cheese with the sour cream and mix until smooth. Stir in green onions. Spread over meat mixture. Sprinkle cheddar cheese over top of the cream cheese.

Bake, uncovered, for 35 minutes. (About 4 servings.)
