Hi from Linda in Michigan. This issue is for Pat in Minden, NV. She asked in the Discussion Forum if I could do an issue on Jell-O. I cracked up when I read her request. I had just finished gathering the recipes and information for this issue??¦on Jell-O. It seems that everyone likes Jell-O. (Except my brother-in-law who tries to give it away at family dinners.) When I was in University of Michigan Hospital for 6 weeks for physical rehab, I had access to a computer that was internet connected. Every night I would log into a private chat room with my buddies from all over the world. First question they asked? "What color of Jell-O did you get tonight?" The recipes that I have posted here are taken from "The Joys of Jell-O", ninth edition??¦.(no copy right date, I've had it forever.), "Jell-O, Fun and Fabulous Recipes" copyright 1988, and, of course, Duct Taped "Betty Crocker New Picture Cookbook". I hope you find a recipe to your liking. I know Pat will.

"Ode To Jell-O"

If I could eat Jell-O all day long,
I d be a happy guy.
Living on Jell-O can't be wrong,
And without it I would cry.

I d like to eat Jell-O throughout the day,
Over studying and straining my neck.
I d like to get Jell-O as my pay,
Instead of a boring paycheck.

Jell-O has many forms-I love them all
Especially when topped with cool-whip.
It can be made right at home or bought at the mall,
And there s a recipe for jalape?±o Jell-O chip dip.

Jell-O makes me happy, maybe like a drug,
Plain Jell-O-made in my sink.
But some add hooch to it, and make it a slug
Ironic, don t you think?

I could eat Jell-O throughout the night,
I think Jell-O was in Mom s womb.
A world with no Jell-O- there s a fright.
That would bring imminent doom.

They say Vitamins are what you need,
If you don t want to die.
Since Jell-O has few, I m in trouble indeed,
And I wanted to say good-bye.

As I lay here, on my death bed,
I am a happy dude.
"Why?" you ask-"are you screwed in the head?"
Nope, Jell-O is Hospital food.

Next Monthly Theme...

Making Recipes Special with Additions

Here's the scoop on the current theme:

Is there a recipe that you make extra special by using an unusual additional ingredient? As an example, I add evaporated milk and Velveeta to boxed macaroni to make it really tasty. Also, to my tuna and chicken salads, I add finely grated onions and jalapeno peppers. Yummy! Please send the entire recipe for each you would like to share. Also, add notes about which ingredient you feel makes it extra special!

A to Z Recipes continues with its popular Theme Issues. We will share theme recipes and post them on the first Sunday of each month. Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in TWO of your favorite theme recipes and in ONE email. If the number of recipes exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.

The rules are as follows:

As a service to your fellow readers, please send only recipes that are in a form that others could easily copy and save for their own use. Recipes that would require a lot of editing or cleaning up or use non-standard measurements should not be submitted. Recipes without a name and location of sender may NOT be posted or posted without any credit given. There will be NO recipes posted that are from other recipe-zines. A to Z Recipes protects the privacy of its readers and does NOT publish email addresses. There will be no exceptions.

CHERRY COLA MOLD

1 package cream cheese (8 oz.) softened
?? cup mayonnaise
1 package (3 oz.) EACH cherry AND strawberry Jell-O
1 cup boiling water
1 can (1 lb. 1 oz.) pitted dark sweet cherries
1 can (13 1/2 oz.) pineapple tidbits
1 bottle (7 oz.) cola (Gee??¦.this is an old recipe)
1 cup chopped nuts

Blend cream cheese and mayonnaise until smooth. Dissolve Jell-O's in boiling water. Stir into cheese mixture, blending well. Drain cherries and pineapple, measuring 1 ?? cups syrup. Then add syrup and cola to Jell-O. Chill until very thick. Fold in cherries pineapple and nuts. Pour into a 1 ?? quart mold. Chill until firm. Unmold. Makes 12 servings.



GELATIN HEAVENLY HASH

1 package (4 serving size) Jell-O (any flavor)
?? cup boiling water
?? cup cold water
Ice cubes
1 cup thawed Coolwhip or sour cream
1 can (20 ounces) crushed pineapple, drained
1 can (11 ounces) mandarin orange sections, drained
1 cup miniature marshmallows
?? cup chopped walnuts or pecans

Completely dissolve Jell-O in boiling water. Combine cold water and ice cubes to make 1 ?? cups. Add to Jell-O, stirring until slightly thickened. Remove any unmelted ice. Add whipped topping, blending until smooth. Stir in pineapple, oranges, marshmallows and nuts. Pour into serving bowl or individual dessert dishes. Chill until set, about 2 hours.



STRAWBERRY BANANA SNACK

(My mother always made this for the holidays. As a kid, I never knew that there were other ways to prepare Jell-O.)

1 package (4 serving size) Strawberry Jell-O
?? cup boiling water
?? cup cold water
Ice cubes
1 medium banana, sliced
1 package frozen strawberries, partially thawed and drained
?? cup chopped nuts (optional)

Completely dissolve Jell-O in boiling water. Combine cols water and ice cubes to make 1 ?? cups. Add to Jell-O, stirring until slightly thickened. Remove any unmelted ice. Let stand until thickened, about 5 to 10 minutes. Stir in banana, strawberries and nuts. Pour into a serving bowl. Chill until set, about 1 hour.



GLAZED POPCORN

8 cups popped popcorn
?? cup butter
3 tablespoons light corn syrup
?? cup packed light brown sugar or granulated sugar
1 package (4 serving size) Jell-O, any flavor)

Place popcorn in a large bowl. Heat butter and syrup in a small saucepan, over low heat. Stir in brown sugar and Jell-O; bring to a boil over medium heat. Reduce heat to low and gently simmer for 5 minutes. Pour syrup over popcorn, tossing to coat well. Spread popcorn on aluminum-foil lined 15x10x1 inch pan, using two forks to spread evenly. Bake in a preheated 300 degree oven for 10 minutes. Cool. Remove from pan and break into small pieces.



JELL-O POKE CAKE

1 white or yellow cake, baked in a 9 x 13 pan.
2 packages Jell-O, (4 serving size) any flavor
2 cups boiling water
Cool Whip or frosting of your choice.

Bake and cool the cake. Poke holes in the cake evenly at ?? inch intervals with a utility fork or a wooden spoon handle. Dissolve Jell-O in boiling water. Carefully spoon Jell-O over cake. Chill 3 to 4 hours. Frost as desired.

Heart Healthy...




FRUITED FRUIT JUICE JELL-O

1 package ( 8 ounces ) sugar free orange Jell-O
1 ?? cups boiling water
1 cup cold apple juice
ice cubes
1 ?? cups diced apples

Completely dissolve Jell-O in boiling water. Combine cold fruit juice and ice cubes to make 2 ?? cups. Add to Jell-O, stirring until slightly thickened. Remove any unmelted ice cubes. Stir in apples. Pour into bowl. Chill until set, about 4 hours.

For Two...



I checked many sources for these recipes, but could not find any for two people. The small box of Jell-O makes four servings. I would suggest dividing the recipes into four individual bowls. That way you could be sure to get a single serving each time.

JELL-O SMOOTHIE

8 ounces prepared Jell-O - any flavor
8 ounces milk
8 ounces sherbet - flavor should match the Jell-O flavor

Mix in a blender. Top with whipped cream and colored sugar, if desired. This makes a great and easy beverage.

PACIFIC LIME MOLD

1 package ( 4 servings ) lime flavored Jell-O
1 cup boiling water
1 9 ounce can crushed pineapple
1 cup creamy cottage cheese
1 teaspoon horse-radish
?? cup mayonnaise or ?? cup whipping cream, whipped
?? chopped nuts

Dissolve Jell-O in boiling water. Add juice from crushed pineapple can. Chill until slightly thickened. Beat until frothy. Fold in pineapple, cottage cheese, horse-radish, mayonnaise or whipped cream, and nuts. Chill until firm.
