Hi from Linda in Michigan! Breakfast. Oh good. Oh no. I love to eat it. I cannot cook it. Anything that closely resembles a breakfast item is doomed in my hands. Eggs, bacon, sausage. All turn into little lumps of coal. I can burn oatmeal. The instant kind. Ever have deep fried pancakes? I can do that. Thankfully, Mr. Mike is an excellent breakfast cook. From golden pancakes, to empty-out-the-refrigerator-omelets, he can do it all. He can make bacon just barely warm like he likes it, or little brown sticks like I like it. All in the same pan. The recipes that I have brought to you today are all examples of good breakfast dishes. I really like the Publisher??™s Choice recipe. I can and do make it quite often. It is very
good comfort food, and I usually don??™t burn it. Now, what shade of black would you like your toast?

A Great Morning Leads to a Great Day
Why can't I skip breakfast?
Most nutritionists consider breakfast to be the most important meal of the day. After going 10 ??“ 12 hours overnight without food energy, reserves are low and your body and brain need fuel. What you choose to eat at breakfast can affect your mood, physical and mental performance, weight and your general and long term health.?
Can breakfast really help me to concentrate?
Yes, a study conducted in Reading showed that a breakfast rich in complex carbohydrates helped maintain memory performance in school children throughout the morning compared with no breakfast and a glucose drink.?
Glucose is the brains only fuel, its also vital for the manufacture of neurotransmitter acetylcholine, which is important for memory. After fasting overnight blood glucose levels are at a low ebb which may explain why people who don??™t refuel with breakfast have difficulty concentrating and perform less well in the morning.
Will eating breakfast make me fat?
Cutting calories by skipping breakfast is a false economy. If you miss breakfast you are much more likely to get hungry mid morning and end up grabbing a snack mid-morning. The National Weight Control Registry in American, which investigates the behavior of people who have lost an average of 32kg and kept it off for over 6 years, found that nearly 80% of people on their register ate breakfast. A study in the US showed that skipping breakfast was associated with increased prevalence of obesity.?
Surveys have shown that people who skip breakfast often have a higher body mass index than regular breakfast eaters. This is perhaps because overweight people mistakenly hope that skipping breakfast will help them to loose weight. Instead adopting a structured eating plan, taking time to eat breakfast can make it easier to maintain a healthy weight.?
Will I get all the nutrients I need during the rest of the day?
Eating breakfast as part of a healthy balanced diet is very important for obtaining vital nutrients to keep your body healthy.?
A recent review of the literature on the role of cereals outlined the positive role of cereals and cereal based foods in diet and health. Many cereal based foods are consumed at breakfast time and contribute significantly to nutrient intake of both adults and children.?
Whole grains including whole grain breakfast cereals are a rich source of minerals, vitamins, antioxidants and dietary fiber which may work synergistically to optimize human health. Consuming whole grains as part of a healthy lifestyle is associated with a lower incidence of cardiovascular disease.?
Will a bar of chocolate do?
Not really, a bar of chocolate will provide an immediate burst of energy which will be shortly followed by a slump in energy levels. A healthy balanced breakfast contains foods, such as wholegrain, that provide a slow release of energy throughout the morning, thus maintaining energy levels and keeping blood sugar levels on an even keel.

Results from the National Diet and Nutrition Survey of young people highlighted that children who eat above average quantities of cereal had higher total intakes of Iron, B vitamins and vitamin D?
Researchers in Ireland found that consumption of ready to eat breakfast cereals was associated with greater compliance with dietary recommendations for fat, carbohydrate and fiber and with a reduced risk of dietary inadequacy of Calcium, Iron, and B vitamins?
Researchers in Scotland found that consuming a breakfast rich in complex carbohydrates benefited short term memory by supplying the brain with a ready available and steady supply of glucose?
A study carried out in Oxford found that children consuming a breakfast rich in complex carbohydrates including muesli and porridge, consumed significantly less at lunchtime. The results also suggest that there may be a role for complex carbohydrates in weight control and obesity management in young children.?
A supplement published in the American Journal of Clinical Nutrition collated the findings studies into the effects of breakfast habits in children. The results showed that those children who didn??™t have breakfast in the morning performed less well in problem solving tasks. Verbal fluency, creativity and the ability to recall newly acquired facts were similarly affected?
Studies carried out at the University of Wales, found that adults who ate breakfast tended to work faster, made fewer mistakes in logic tests and had better memory recall compared with breakfast skippers?
A study carried out at the University of Cardiff suggests that breakfast eaters are less likely to suffer from colds and 'flu'.
Studies carried out at the University of Bristol examined the breakfast habits of 126 volunteers between the ages of 20 and 79 and assessed their mental health. The results revealed that, even taking into to account that fact that breakfast eaters tended to have healthier lifestyles, those who ate breakfast everyday were less depressed, less emotionally distressed and had lower perceived levels of stress compared with those who skipped the first meal of the day.

Pillsbury says it best when they tout: "Nothin' says lovin' like something from the oven". So, what do you prepare for your loved ones for Valentine's Day? We have had this as a February theme topic before but it is such a great one that it bears repeating. Please share your favorite "love recipes" with us, won't you? Is it a special steak and potato dinner? Perhaps it is a fabulous dessert after a scrumptious main-course salad meal? Whatever it is you prepare for that special someone, we would love to hear from you. At my house it is Fettuccine Alfredo, Chicken Kiev, a Lettuce and Vegetable Salad and Brownie Sundaes for dessert. OMG this is making me hungry!

Crazy Corner...
Eggs, Bacon, and Toast walk into a bar. The bartender looks up, and says, "Sorry, we don't serve breakfast here."
AN AWFUL BREAKFAST
One morning in a posh hotel breakfast room, a guest called over the head waiter. "Good morning, sir! I'd like to order two boiled eggs, one of them so undercooked that it's
runny, and the other so overcooked that it's tough. I also want some rubbery bacon, burnt toast, and butter that's so cold it's impossible to spread. Finally, I'll have a pot of extra-weak coffee, served at room temperature."
The bewildered waiter almost stuttered. "Sir! We cannot serve such an awful breakfast to you here!"
"Why not?" the guest replied. "That's what I got here yesterday!"
Breakfast
A 7 year old boy and his 4 year old brother are upstairs in their bed room. The 7 year old is explaining that it is high time that the two of them begin swearing. When his little brother responds enthusiastically, the 7 year old says, "When we go down stairs for breakfast this morning, I'll say "Hell" and you say "ass." The 4 year old happily agrees.?
As the two boys are seating themselves at the breakfast table, their Mother walks in and asks her older son what he would like to eat for breakfast. The 7 year old replies, "Ah hell, mom, I'll just have some Cheerios."
"WHACK!" The surprised mother reacts quickly. The boy runs upstairs, bawling and rubbing his behind. With a sterner voice, the mother then asks the younger son, "And what would YOU like for breakfast?" "I don't know," the 4 year old blubbers, "but you can bet your ass it's not gonna be Cheerios."

HOT COCOA MIX
2 cups nonfat dry milk powder
?? cup sugar
?? cup Hershey??™s cocoa
1/2 cup powdered non-dairy creamer
Dash of salt
Combine all ingredients; blend well. Store in tightly covered container. Makes about 15 (6 ounce) servings.
Single serving: Combine ?? mix and ?? cup boiling water in a cup and stir.
APPLE RAISIN OATMEAL
2 cups water
1 ?? cup oatmeal (quick or old fashioned)
?? teaspoon salt, scant
?? cup honey
?? teaspoon cinnamon
2 medium apples, pared, sliced thin
?? cup raisins
Bring water to a boil in a medium saucepan. Stir in oatmeal and salt. Cook 1 minute. (If using old-fashioned oats, cook 5 minutes.) Stir in honey and cinnamon. Remove from heat and put half of the oatmeal into a 1 ?? quart casserole. Top with half of the apples and half of the raisins. Add remaining oatmeal, then top with apples and raisins. Cover. Bake in a preheated 350 degree oven for 20 to 25 minutes. Serve with milk.?
BREAKFAST CASSEROLE
6 beaten eggs
2 cups milk
6 slices bread, cubed
1 teaspoon salt
1 teaspoon dry mustard
1 pound sausage, bacon or ham
1 cup shredded cheddar cheese
If using sausage or bacon, fry and drain. Mix everything together. and refrigerate overnight. Bake in an uncovered 9 x 13 pan at 350 degrees for 45 to 60 minutes.
STUFFED FRENCH TOAST
Layer twice in a greased 9 x 13 pan:?
1 medium loaf of bread, cubed
8 ounce cream cheese, cubed
?? to ?? cup sliced strawberries
Blend and pour over bread:
8 eggs
1 1/3 cups milk
1/3 cup honey (optional)
Refrigerate overnight. Bake at 350 degrees about 45 minutes. (Note: cream cheese will not melt.)?
HASH BROWNS
3 cups cooked, shredded potatoes
3 tablespoons flour
1 tablespoon onion, chopped fine
1 teaspoon salt
1/8 teaspoon pepper
1 tablespoon milk
Vegetable oil
Mix together everything but vegetable oil. Heat oil in skillet and pack potato mixture into it. Brown on both sides over medium heat.?
YUM-YUM COFFEE CAKE
?? cup butter
1 cup sugar
2 eggs
1 cup sour cream
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
?? teaspoon salt
CRUMBS:
?? cup brown sugar
?? cup sugar
1 teaspoon cinnamon
1 cup chopped nuts
Cream butter and sugar until fluffy. Add eggs, one at a time, beating after each addition. Beat in sour cream and vanilla. Combine flour, soda, baking powder, and salt; stir into creamed mixture. Pour ?? batter into lightly greased 9 x 13 pan. Cover with ?? crumbs. Put remaining batter on top. Sprinkle with remaining crumbs. Bake at 325 degrees for 40 minutes.

Heart Healthy...
HEART HEALTHY PANCAKES
Source: Deacon Timothy Pratt Bed & Breakfast
1 1/2 cups flour
1/3 cup sugar
2 teaspoons baking powder
1/8 teaspoon salt
1 1/2 cups skim milk
2 tablespoons corn oil
2 egg whites
Combine dry ingredients in large bowl. Add milk, corn oil, and mix until just moistened. Beat egg whites in small bowl until stiff peaks form. Fold into batter. Place greased Teflon heart shaped molds on greased griddle (medium high). Pour batter into molds. When bubbles begin to form, remove mold and flip pancakes. When done, trim pancakes with knife, if necessary, for perfect shapes. Serve with strawberry garnishes and warm real Vermont maple syrup.
Note: These are low fat, low cholesterol, but very tasty, light and fluffy pancakes! I like to
serve these to guests on special occasions, such as birthdays, (with a candle), anniversaries, etc. Breakfast is served on fine china; with crystal, silver, fresh flowers and candlelight.

For Two...
WAKE-UP SEAFOOD BREAKFAST FOR TWO
2 teaspoons butter or margarine
1 plum tomato, diced (Roma)
1/2 cup thinly sliced fresh mushrooms (canned will do in a pinch)
1 green onion, thinly sliced
1 clove garlic, minced
1/2 small jalapeno peppers, seeded and diced (use the whole pepper if you like hot stuff)
1/4 lb cooked shelled shrimp, preferably large ones (defrost, if frozen)
4 large eggs
1 1/2 teaspoons finely chopped fresh basil
1 teaspoon finely chopped fresh cilantro or parsley (optional)
1/2 cup grated mozzarella cheese
1. Preheat oven to 350 F; spray an eight-inch cake pan with nonstick cooking spray and set aside.
2. In a large bowl, beat eggs; set aside.
3. In a large nonstick skillet, melt butter and add tomato, mushrooms, green onion, garlic and jalapeno pepper to skillet.
4. Saut?© until mushrooms are tender, then add this mixture to the beaten eggs; combine.
5. Stir in shrimp, fresh herbs and grated cheese.
6. Scrape this mixture into prepared pan and bake in preheated oven for 25 minutes.
7. Cut into squares and serve.

CREAMED EGGS ON TOAST
This is my all time favorite. Probably because it does not involve frying, so it usually turns out okay. You can also add some leftover cooked chicken and a little bit of peas for a simple dinner.?
6 eggs, hard-boiled and sliced
6 tablespoons butter
6 tablespoons flour
1 1/2 teaspoons salt
Dash of pepper
3 cups milk
Melt butter in a heavy saucepan. Blend in the flour, salt and pepper, cooking and stirring until bubbly. Stir in the milk. (I use a whisk.) Cook until smooth and thickened. Add the sliced eggs and serve on toast.
